A Nice Night For Flying

We boarded our plane at quarter to one last night. Turns out the crew had been working too many hours in a row and had to be released so we had to wait for a new crew to come from LA. Seriously. Was there no one on call a little closer to Chicago than LA!?

Here’s me boredom eating (well, I was kinda hungry) on the plane on the runway waiting around 1:00 central time. At least it was healthy eating!

But when the pilot finally arrived, he greeted us with apologies and said "It’s a nice night for flying folks!" His enthusiasm was contagious – until we were all asleep! I was lucky to sleep almost the whole flight (in a Z position in my seat!)

We arrived home to Hillsborough 4:30 AM!! My poor mom was up at 7:00 to go teach her class, which is an ALL DAY class too – not just 50 minutes and go! The report from my dad was that she was "excited and cheerful" this morning regardless of her 2.5 hours.

I managed to sleep only until 9:30 and woke up too excited to hit the road and have a big bowl of oatmeal. I was happy to find more fresh blueberries in the fridge!

  • 1/3 cup oats
  • 1/3 cup skim
  • 1/3 cup water
  • 1 large banana
  • 1/2 cup-ish blueberries
  • Sprinkle almonds
  • Spoonful Smuckers Natural

I think the deliciousness speaks for itself

I met the husband and his brother, Andrew, (who is visiting us this week) for lunch at Dean and Deluca on my way into Charlotte.

Talk about CRAVINGS for veggies – I have really missed them and couldn’t wait to dig into this huge salad. I ate nearly the whole box!

  • Mixed greens
  • Spinach
  • Carrots
  • Broccoli
  • Mushrooms
  • Sprouts
  • Olives
  • Sun dried tomatoes
  • Mandarin oranges
  • Cucs
  • Chickpeas
  • Olives
  • A few roasted veggies
  • GOAT CHEESE!
  • And balsamic on the side that I barely used because I had so many delicious toppings

Afterwards we went in for "dessert" samples – chocolate covered pretzel balls and some chocolate-y bread. I had one of each:

I came home to a beautiful vase of flowers from our garden waiting on my desk and a CLEAN HOUSE!!!

I literally have 10,000 things to do – computer, blog, mail, unpacking, phone calls and more! And a NAP needs to go in there too. Karen is joining us here for dinner with Andrew so I better get organized!

    glad to see you are alive and well (though tired!). i’m impressed you didn’t snack more! if i was up that late i would totally have had another meal, haha. anyway, welcome back and good luck with unpacking and everything today!

    Glad you’re back and had a great time.
    Love your bowls of oatmeal. Been making them for a few weeks. Love the banana in it, thin slices please. I usually add a tablespoon of ground flax or wheat germ, been slicing nectarine or peaches on top and a few walnuts. Stinkin’ yum!
    Made and blogged about your Baked Oatmeal Bars. They are good. Just had me one with a little peanut butter on the side. Yum!

    i was planning on having an english muffin with pb and 1/2 a banana for breakfast tomorrow, but upon seeing this pic of your oatmeal i now MUST have steel cut oats.. 🙂

    Welcome back, Kath! I can’t believe how healthy you ate on your trip. Your meals looked so good.

    It must feel so good to be back home! Your poor mum! Let us know how her first day of class went.

    Every Gym’s Nightmare,
    Only some parts are cleaner! He vacuumed and laundried, but there’s dust everywhere and the kitchen floor was disgusting. Guess some is better than none 🙂

    Dean and Deluca may be my favorite store on the face of the earth. I have learned to simply not go in because I end up spending so much money. Their licorice section is my favorite. I can easily leave with pounds of the yummy stuff!
