5.75 New Miles

Running around Winthrop was very fun – it’s always fun to have new scenery. I locked my bag in my trunk and too off right after class. My stomach was starting to grumble before I left, but some H2O fixed that. I’m SO glad I carried a map with my route with me, or I would have gotten lost for sure. I ended up changing my route when I found a short-cut entrance into Winthrop’s athletic area (the big green on the right) and did a loop around the lake there. Guessing on my HRM’s 430 calories burned, I’m estimating 5.75 miles! Right when I finished at 11 my stomach was growling again. (Or maybe I was just taking note because of my cereal switch) but it also went away again during the ride home. Strange it came in waves today!

The drive home was sweaty, but it was more convenient than showering there and hauling all my stuff. Once home, showered, and unpacked, I settled down to make lunch.

Started with a big salad: romaine, spinach, peppers, grated carrot, cucumber, cottage cheese, goat cheese, and aged balsamic vinegar.

My entree was 2 slices of leftover baked tofu, laid open-faced on some homemade bread and topped with shredded cheese, all broiled for 5 minutes.

I’ve decided that I do like the Zevia Root Beers after all. But they are too expensive to have on a regular basis.

And I had 4 Kashi crackers for dessert

I told myself I had “all day” to work on Organic and Micro and that has turned into 3 hours!! ACCKKK! I gotta get moving NOW.

    Yum! Looks like a great lunch! And OMGosh! I totally thought of you this morning – I was at Starbucks and today they rolled out all thier new fall stuff. I was talking to my fave barista about the new oatmeal they are offering and she was telling me, not only do they have all that new stuff (oatmeal, dried fruit, granola, etc etc) but they also offer ALMOND butter as well. thought that was pretty cool!

    I love cottage cheese instead of dressing on my salad! It is so filling! What a yummy open faced sandwhich! Did you manage to finish it all?

    Hey everyone,

    I am going on my honeymoon cruise in a few days and I am looking for a couple of great book suggestions! Generally I tend to read non-fiction health or self help books as they are my favourite. I am wondering if ‘In Defense of Food’ is a good choice? Or any other options…? 🙂 Thanks for your help!

    I love root beer! I am drinking Diet Barq’s with my lunch..I am still not convinced aspartame is the devil. Better than high fructose corn syrup and 150 empty calories!

    I really like Diet Hansen’s Creamy Root Beer as well. They have it at the local grocery stores. Best part….no Aspartame or sodium to make you feel bloated.

    Kath – Your salads look so delicious! I am desperate for good lunch ideas. I am a school teacher – I get to work at 630am and leave at 330pm. I like to pack my lunch the night before to save time in the morning. There is a fridge I can use at school. Even when I make my salads in the mornings by lunch they are wet feeling and wilted! Any ideas would be greatly appreciated.

    Angela, I think you can think of something better to do on your honeymoon then read a novel 😉

    but if you must, i just got done reading The Devil in the White city by Erik Larson, if you like history at all or murder mysteries you’ll love it!

    yes how DO you slice your peaches so perfectly??? Mine are all smooshed and I usually just end up eating them around the pit and they look all chewed up by the end. ha.

    Also, I love your volumey lunches.. you are the best at creative healthy lunches! I tried your idea of Zucchini slices with almond butter today (I saw you eat that once with pb) and it was fab.

    You can buy Zevia on-line at http://www.zevia.com/

    I bought some when they had a special running. The soda itself is pretty expensive compared to regular old soda, but it’s the shipping that really kills you. I liked it, though. At first I didn’t, but after a while I decided that it wasn’t too bad. The stevia has a weird aftertaste that takes some getting used to. But, it’s a nice change of pace, especially when you don’t drink regular soda. I don’t drink diet soda either because of the chemical sweeteners. (Aspartame is better, if you can call it that, than sucralose, however.) I haven’t tried the Zevia root beer, but I did have the cola, orange and lemon-lime. I think the lemon-lime was the best. I have asked my local health food grocer to carry it, but so far they haven’t. I live in a small town about 20-40 miles from any large stores, and due to the high price of gas, I’m sticking to local stores as much as possible, so I haven’t been able to find it anywhere other than online, either.

    Emily, try packing the greens/lettuce in a seperate container from the cut up veggies and other toppings, then throw everything into the greens when you are ready to eat. Also keep salad dressing seperate.

    My husband and I made it to the South Park Earthfare on Saturday. We shopped and had lunch in the cafe…amazing. I only wish I had one closer. I actually tried the root beer with my HUGE salad and wrap. I thought it was decent, although I could taste a little artificial flavor. I picked up some larabars and snikiddy kids chocolate chip cookies for my sons lunchbox…he loves them.

    I just finished Barefoot by Elin Hilderbrand and it was perfect relaxing beach reading. I’d recommend any of her books just based on this one.

    Make sure your greens are spun dry in a salad spinner – or at least dry them with paper towels. And keep the dressing separate for sure.

    Polly and VeggieGirl, I don’t know how you cut your peaches, but slice from the middle all around the entire fruit (to the pit) and then twist the 2 halves apart then you can cut the half with the pit still in it in half and slice from there.. Doesn’t always work with overly ripe peaches though.

    So I know you had an article in the newest Shape magazine, based on everyone’s comments. I’ve looked through it at Border’s however and didn’t see it! Maybe they haven’t gotten the newest issue yet??? Ha, I was looking forward to reading it!

    Emily – I’m a teacher too. I tend to do a lot of Greek yogurts with fruit and a granolaish item on the side. I also use mini bagels for sandwiches becuase they don’t get as soggy as bread. I don’t want to hijack Kath’s thread, but I made a blog about basically that topic so feel free to look there.

    Also – does anyone else get amazed everytime they read Kath’s milage? Holy moley!

    love love love that you took a map of your run! i just run around and get lost. which can be good (i.e. run longer, find new stuff) or really bad (run into the ghetto).

    Have you tried Diet Hansen’s Natural Soda? It’s really good and they have lots of different flavors. It’s sweetened with Splenda.

    I took a map with me on a long run on Saturday. Still got lost. I suck.
