I am tardy to the blog world class today because I was taking an online course on walnuts for my RD CEUs! It was informative and the conclusion was: eat real food, including walnuts :)

Unfortunately I ate my oats before the course so I did not get to add any walnuts!

Today’s bowl was fabuuuuulous!! I finally bought some more steel cut oats and made more pulverized Scottish oats! All you do is put steel cut in your food processor and process for 2-4 minutes, until your steel cuts are half their normal size and there’s lots of oat flour mixed in. This increased surface area means they cook much faster and get a more blended texture –

The Mix

  • 1/3 cup Scottish oats
  • 1/3 cup milk
  • 1/3 cup water
  • 1 tbsp flax
  • 1/2 banana
  • Pinch salt
  • Splash vanilla
  • 1/4 cup cottage cheese, stirred in at end
  • Ancient Grains granola
  • Great Harvest jam (LOVE the chunks of fruit in this!!!)
  • Sunflower butter drizzle

Have a great day! I’m not a huge nut fan, which is something I’m trying to get over. Peanuts are fine but I’m not big on pecans or walnuts :( I’m working on it!

Ohh love the idea of breaking down Steel Cuts. Have you seen the quick cooking ones at Trader Joe’s? Apparently they cook in 5-8 minutes, instead of the normal 30. I’ve seen them, but haven’t tried them yet!

Good idea, making your own Scottish oats. I don’t have a food processor (yet, I’m praying someone will get it for me as a wedding present!) but I can’t wait to play with one when I do.

I am not a huge fan of walnuts unless my husband includes them in a salad (he usually does chevre, beets, walnuts and arugula) but I recently decided to make walnut butter and oh my is it good. Roast some raw walnuts, put them in the food processor with a pinch of salt, a dash of cinnamon and about a teaspoon of raw sugar. It’s pretty tasty.

I love walnuts! LOVE them. But I can’t keep them in my house because my 3rd child is allergic and if they’re in the house, he’ll find them! Epi pen anyone? I gotta find a safe for something to store them in because they are so so good for you. :)

I really have had an appreciation for walnuts lately. They add the perfect texture to oats and toast with nut butter. I’m a walnut fan!

Hey Mallory! I’m totally obsessed with Trader Joe’s Sunflower butter. I haven’t tried Sunbutter brand yet, but I bet it’s good too :)

AND Sunbutter is guaranteed nut-free, which is so hard to find for those of us with nut allergies (the TJ stuff has a “may contain traces…” warning). Horrah for Sunbutter!

My mother always said that walnuts are the most nutritious nut. I have always wondered if that was just an old wives tale or an actual fact. Either way they are delicious :-)

Roasty buttery and only slightly naturally sweet ( a la almonds) and not like sugary sweet

How long do you cook the oats for? Way to go on the continuing education. That’s awesome. I love walnuts!! Especially in cookies.

Hot cereal made from ground oats (or buckwheat or farro) is the best! It turns out incredibly thick and creamy! I made hot cereal from ground buckwheat this morning and my jar dropped it was so tasty and creamy!

My suitemates and I have been eating more walnuts lately – they’re so good for you! Thank you for that great tip on steel cut oats! I love steel cut oats, but they take SO long to cook. I’ll definitely pulverize them in my food processor before cooking next time!

That pulzerized stell cut oats sounds tasty and ingenious, but wouldn’t the oats lose some of their nutritional value from being pulverized?

Nope. Think back to science classes – it’s just a state of matter change but the matter is the same. The only thing that changes is their surface areas so they might digest slightly quicker assuming chewing is comparable.
