Lunchtime greetings!

I was hungry much earlier than usual today and broke into my pistachios at 11:00. But was able to make it to 1pm for a later lunch. I’m ready to dig in!!

I’ve been craving a good ole PB&J – must be the summer weather!!

But of course it’s all fancied up with Great Harvest High Five Fiber, Nuttzo PF and Crofter’s!! Three amazing, amazing foodz :mrgreen:

Great Harvest bread is dense, so a normal slice is close to 130-150 calories. A PB&J can run you 500 calories easy! So I try to keep them small and stick to 1 tbsp of PB instead of two. But it’s always easy to go heavy-handed on the PB ;)

On the side I kept it lighter with a bright salad

Arugula with mixed pre-chopped veggies and some of  my OJ + balsamic + dijon mustard insta-dressing

Lastly, a kiwi to fill the fruit component!

We’re going to a very early dinner and I’m counting on these to tide my hunger – may not even need them because dinner is around 5PM!

Wow a 5pm dinner – I probably wouldn’t even have eaten my afternoon snack by that time! Though I do go to bed at midnight so it makes sense…
I LOVE dates and pistachios though, what a delicious snack!

A good ole fashioned PB+J sounds really good! I wasn’t crazy about them when I was little, but now I could eat them everyday. YUM :)

that pb&j looks so good! I had almond butter, honey and banana on a sandwich thin and it was like i was a kid again :)

that date looks like a MONSTER compared to those pistachios! I’m still looking forward to experimenting with my own dressings by incorporating fresh juice – such a good idea!

Love me some pistachios, those suckers are so dang good! Question: Are there Great Harvest’s throughout the country or is more of a Southern thing? If yes, then do they have an online delivery system for the rest of the U.S.? I’m cravings some good, chewy, healthy bread!

PB and J is my alltime fav comfort food especially when honey is added! Um, but I USED to go hog wild with the Jam and PB leading to a very puffy tummy.

hi kath! i must thank you for introducing me to Crofter’s. i FINALLY found a jar of it at a different grocery store on Tuesday and i tried it with both peanut butter and cheddar yesterday. delicious!! what was your favorite region though? the only one i found was South America. i may have to order the other flavors online now! thanks again.

My nutritionist says I should put one tablespoon PB per slice, so two per sandwich. She says otherwise I am not getting enough protein for a meal. What do you think?

Well I can’t see your whole plate, but I think protein from 1 tbsp of peanut butter and a whole grain bread is suitable for a meal.

I live in Portland and we’re still two months away from nice weather! =/ Spring is definitely a long season here! I may be just a wee bit jealous of your sandals, summer dresses, bike rides, and PBJ’s! LOL! :D

I do however LOVE your blog and have found the pictures of your food have been helpful in providing a visual cue for serving size, balance, and creativity. Many, many, many thanks for sharing!!

Yum, I love PB&J sandwiches. You’re right though – they’re heavy on the cals. One summer I was working on an organic farm, and brought PB&J nearly every day to curb my voracious appetite from the hard labor! I definitely gained some weight though, and it wasn’t all from muscle mass. :)

That bread looks wonderful. You just inspired me to look up a local Great Harvest in my area, and I ended up reading about how the owner had done all this great charity work through his store. Wonderful! I will be going to buy some bread! Thank you!

I have that same little jelly jar that I saved!!! I use it for all sorts of toppings to pack with my lunch. Like you said, great for dressings or even a bit of granola for a yogurt cup!

Hope you had/are having a great afternoon! I have to laugh at your “early” dinner time. I always eat dinner at 5pm… then again, I do eat lunch at 11am. It works for me.

Do you find that pre-chopping-up veggies makes them gross in the fridge — esp bell peppers? I’ve thought about doing that, but figured they’d get all slimy or something.
