Chia Bomb

What I’ve lost in evening time from workouts, I’ve made back in morning time. I’ve moved bedtime / wake-up back by 30 minutes, but getting up at 5:30 gave me time to do a load of laundry and some extra organizing 🙂 Gotta fit it in somewhere!

Last night I made some overnights oats –

Featuring tons of chia seeds. I love them so much!!!!

The Mix:

  • 1/4 cup Bob’s Red Mill Muesli
  • 1/2 cup milk
  • 1/3 cup Oikos (leftover from "sour cream" taco topping)
  • 1 tbsp chia seeds
  • Pinch salt
  • Splash vanilla

This AM:

  • 1/2 large banana
  • Some Kashi H2H (which was stale 🙁 )
  • A sauce made from 1 tbsp Nuttzo PF, milk and coconut butter heated and stirred vigorously

    that looks delicious….even with stale cereal!

    here is a question that has been bugging me forever: i notice you don’t eat eggs often, and i was wondering if they are bad, maybe-bad, or good for cholesterol. i don’t eat meat so i get my protein from nuts, beans, dairy and….eggs. i usually have one or two a day. could this be bad for me? if i don’t get cholesterol from other sources–no red meat, no butter etc–will an egg or two hurt?

      As long as you aren’t consuming grosses upon grosses of eggs, you’re fine. The cholesterol in eggs isn’t a “bad” kind of cholesterol and aren’t a bad to consume, from a nutritional standpoint.

      Think of them as being similar to nut butters. Are they fattening? Yes. But it’s good, healthy fat.

    Oooh I soo want to find some chia seeds! They are ALL over the blog world, I feel like the only one who has never had any!!

    I’m most productive in the morning and can get sooooo much more done then, than I can after work. I’m thinking about moving my workouts to the a.m., but that would mean getting up at 430 and I just don’t think that I’m ready for that one yet!!!! 🙂

      It is so worth it and your body does adapt to the earlier time. I work out 5:45 or 6 am five days a week. I deteste evening work outs, not motivated. With the AM workouts, you just feel stronger all day long and I tend to be more conscious of what I place in my mouth.

      Ditto with the productivity as well.

      I agree with Krista. You get used to it (if you are already a morning person). I am definitely a morning person and wake up every morning at 4:30am to get my workout in. I actually look forward to it. I am definitely not a evening person and would not be productive trying to work out at night!

    Keep forgetting to make overnight oats and eat them hot in the AM instead. Need to write a Post-It and stick it to the fridge!

    kath- just wanted to quickly make a shoe comment. I adore my danskos. i wear them all the time and use them to run around my farm. but i caution you- they are a little tricky to get used to and i have almost tuned my ankle a couple of times. also- i slipped on some acorns this fall while wearing them and broke my hand. Obviously, acorns won’t be an issue at the hospital- just be careful!

    I never thought I’d be putting funky stuff in my oatmeal, but here I am loving it! I should have thought it out rather than just throwing stuff together, but Roman Meal instant oatmeal, frozen blueberries, 1/2 banana, dollup of peanutbutter, 2T flaxseed meal. Like I said, a little funky, but my first KERF-inspired bowl and it’s much more fun than a regular oats!

    I’m on the fence about chias. Sometimes they’re refreshing and delicious, sometimes they’re just unappealingly congealed. I think the trick is to let them soak just long enough that they retain their crunch but not for too long or else they get, um, kind of like snot.

    I’m a total morning person so if I had to choose to get up early or stay up later to get things done I’d definately set the alarm to an earlier wake up call. It’s amazing how much more motivated I am in the morning.

          I’m here!

          I’m trying to eat more ethically raised meats – so maybe restaurant consumption is down – but home consumption is the same! Had salmon last week and this week. Sardines too. Lamb a few weeks ago. Turkey tonight at dinner!

    Kath,

    I came across your blog about a month ago, and it’s totally changed the whole way I eat/think/prepare for meals! I’ve made a ton of your recipes, and have loved every one of them.

    I am about to make to great plunge into oats, and have watched your Oats tutorial video. I’m wondering what the difference between rolled/quick/regular/steel-cut oats is, or are they interchangeable? I think I want to make your overnight oats this weekend, then maybe start eating oats for breakfast a few days a week, but hopes you could shed a little light.

    I truly love reading every day. Thank you so much for taking the time:)!

    Kath, I love that you look for ‘cloud’ shapes in your coffee but it also got me wondering: do you add anything to your coffee? It looks so creamy in the cup, but darker in your press.

      Yep – about 2-3 tbsp of skim milk (or 2% when we have that sometimes)
