Pumpkin was one of the first foods on my pregnancy aversion list. It just turned too….sour? for me. Strange to describe. But today it came back in the form of pumpkin muffin that I gobbled down.
Crumbled overtop of whipped banana cottage cheese oats!
And served with a spoonful of Sunbutter deliciousness.
Some coconut tea!
Both enjoyed during a game-changing season 5 episode of LOST!
I’m actually debating going to the gym for a treadmill workout this morning (most likely an uphill power walk, but maybe some running in there too!) because we’re on day 2 of unpredictable storms and rain.
This afternoon I’m reluctantly driving to Blacksburg for the Virginia Dietetics Association meeting that starts tomorrow. Hotels are fun! Driving is not.

On it’s own/stirred in yogurt, I can’t do canned pumpkin…baked goods form? yes please!
Haha I actually LOVE driving! I got it from my dad, he always says if he could have any job he’d be a semi-truck driver because he’d just get to drive across country all the time. Slightly weird, but I get what he means. Have a safe trip!

I love that you are now trying to eat that which bothered you early on in your pregnancy. I figured you quit eating pumpkin since their season is mostly over, but it is nice to seeing you eat pumpkin bread like things. I have realized by reading your blog for a while how much you truly love pumpkin, so it would be sad if you could no longer eat it.
I know. The whole appetite thing has been the biggest unexpected surprise of it all. I figured I would have some morning sickness, but I didn’t expect to HATE many of the foods I used to love!
Ooh, that muffin looks SO good! I’m might have to actually bake some pumpkin muffins now – I really want one! Have a safe drive, and I hope it goes quickly for you.

Considering my angle in the field, only a few are really relevant to me, but always good to hear about the latest clinical and foodservice research and practices.
You’re going on another road trip! As I said last week with your last road trip you and Matt went on, you guys are the king and queen of them! Good luck getting down there and for sitting thru the meetings

I live in Blacksburg! You need to walk on the huckleberry trail that is right off of the stadium. Gorgeous trail! I am actually 28 weeks pregnant and go on the huck everyday! Its a gorgeous drive!
Love the Huck! Except when I ran over there on Thursday morning, it was closed for repairs
If you have time for a hike try the Cascades!
Oh wish I had more time!! It’s a long drive home, so I’ll probably hit the road as soon as it’s over, and I’m getting in later tonight. Next time!

The oats look wonderful, love the addition of pumpkin. Weather is iffy here too, barely got my long run in yesterday before the rain started up again!

Pumpkin morning sounds great! ….I had to give up coffee completely up until about a week ago- it would make me SO sick! It was my favorite thing and I couldn’t even have decaf! Drive safe today!

I’ve heard that the incline on the treadmill is a great fat burning mechanism (not that you need help there, but I do). What incline to you walk on?

love the look of your breakfast, cold and creamy oats sound appealing right now. I can’t imagine the horror you felt with a pumpkin aversion considering how much you typically LOVE it (I’m thinking of that pumpkin stock pile of yours a few falls back).
