Family Time

We’ve had a great two days of family time and are about to part ways. Matt’s heading north up to Warrenton for the afternoon and I’m headed south to Blacksburg for the night. Of course we just spent two hours side-by-side on the couch watching LOST! Season 5 has redeemed itself.

Earlier today, we also did separate workouts. I was able to walk to the gym rain-free and did some stationary bike time and walked for another 20 minutes on an incline (3.0 at 3.3) until I walked back home. A good hour + workout for a rainy day!

Pumpkin watched the house while we were gone.

Matt went out running so he got back much faster than I did. When I returned, lunch was baking!

Since we’re apart for dinner, we had dinner for lunch! No Bull burgers on Virginia roll buns with a little melted smoked gouda

On the side we had the most wonderful baked sweet potato wedges. Matt rubbed them in olive oil and salt and baked them on a wire rack at 400* for 40 minutes. Perfection!

Great SUPER FILLING lunch and we’re hittin’ the road full! [But first I gotta pack a dinner!]

    I LOVE gouda cheese! Haha and I saw your comment on my comment this morning, I’d love to come drive you, but I think the flight there might be a bit expensive. Of course missing class is not an issue… Have a safe drive!

      I don’t think I’m going to get out much….although if you have a rec near campus where I could get a healthy dinner to eat on my drive home… 🙂

        Mill Mountain (address: 700 N Main St # C Blacksburg) is very close to campus on main street–and a great place to grab a good sandwich and/or a coffee/tea for the road. They brew their own coffee and have a great selection of teas! It’s a great local place and the second location (the original one is in Roanoke). If you have time for a sit down restaurant, Gillie’s on College Ave is DELICIOUS. It’s a vegetarian place, but they’re known for their breakfast. Have a great short trip!

    Lunch is always dinner of a Sunday in Ireland and then we have “tea” in the evening which is effectively lunch! Love sweet potato wedges, simply must make some up tomo! 🙂

    I have never had success with making sweet potato fries. They always come out soggy. I’ll have to try using a wire rack next time. Those you had look fantastic!

    Wow, those sweet potato wedges look awesome!! I’ve never thought about baking them on a wire rack, but I bet that would make them crispier than baking them on a cookie sheet. Is the wire rack a special baking rack?

      It’s just one of those cooling racks that fits over a sheet pan. They weren’t really crispy, but perfectly tender!

    I see sweet potato fries close in my future! I’ve been on vacation all week (and the food has been incredible) but there’s nothin’ like homemade sweet potato fries to really make a meal. Have fun at the conference!

    DELISH! Baked sweet potatoes are one of my favorite things. I don’t even put any olive oil on them anymore, I just throw them in by themselves and theyre fine! A little cinnamon on them too is good.
    I’m definitely going to try those no bull burgers!

    MAN that lunch looks good- I wish I could get my hands on some no bull burgers!!
    This weather was such a tease- while I’m glad that it didn’t end up raining, I’m also kind of annoyed! I would have made plans to do something more fun outside! Oh well- I’m sure there will be lots of other sunny days to come. 🙂
