Blogging from the air again!!
Our flight took off on time, and but my stomach was a bit early for lunch. I had a few nuts + fruits from my snack bag to tide me till 1PM for a mid-flight lunch.
Our skyline picnic was awesome!!! Very filling and wholesome.
Matt made us sandwiches: Roasted chicken, lemon hummus, spinach, mustard + jalapenos. Delish!
Plus we had yogurts, which I enhanced with a few Delta peanuts. I love the new Stonyfield lables!
Plus we shared two oranges cut into pieces to prevent stick plane fingers.
But the highlight of lunch was this Biscoff ginger spice cookie!!
The picnic perfect ending –
I finished Too Many Cooks and now have a handful of recipes earmarked to try!! The book has 102 recipes, each tied to a chapter. I love Emily’s cooking ‘little-a-this’ cooking style
Flight #2 leaves in the 5PM hour and hopefully we’ll be home in time for a thrown-together freezer dinner. We’ve got 2 hours to kill here in Detroit.
T-3 days until I’m on another plane!

I’m definitely going to have to take a cue from you and pack a meal next time I’m flying. I always end up starving and snacking on whatever I can find that is decent in the airport.
Crazy how flights send you out of your way just to get home. One time I flew from Boston to Cincy to get to Atlanta.
Enjoy the rest of your trip home!
YAY! Delta Biscoffs are my FAAAVORITE!
Sometimes I have to marvel at technology. How crazy is it that you can communicate with all of your readers from thousands of miles in the air? Too cool.
glad you guys are having a good trip so far. I hope you get home safely!
sandwiches look great, nice work, Matt!
Have a great rest of your trip
i don’t think i’ve ever had lemon hummis. sounds tasty on a sammy. fly safe.
Those sandwiches look so yummy! Definitely getting some good snack ideas for the next time I fly!
I love those cookies too!!! And they’re the perfect size. Get home safely.
Lemon hummus is one of my favs!!
I love Stonyfield Farm yogurts!! All their products are superb.
Jenn
My dad orders those biscoff cookies in bulk off the interenet. They are so good with a cup of coffee for an envening treat….or dipped in dark chocolate. Oh My, that is so good it should be illegal!
I love roast chicken sandwiches! I had one with parmesan and roasted tomatoes last night
Safe travels.
how do you manage to take yogurts with you on the plane?
Haya,
What do you mean? I’ve never gotten stopped for yogurt in security.
K
kath,
i LOVED your gather article. i was wondering if you could give your readers an even closer look: HOW did u personally make the transition from being scared to eat out to loving it? did u ever imagine you could enjoy it so much? how do we get there? thanks!
Now that is what the airlines should really serve! I love your lemon hummus- totally delicious
I have had yogurt I brought from home confiscated at security a few times. They claim it is a “liquid” and exceeds the 1 oz rule.
Kate – I happened to stumble upon your blog a week ago and now your die hard fan..you are such a sport..completely spontaneous. I have already tried a few recipes (especially..the oatmeal ones, I am a oatmeal slave myself). Enjoy the rest of your travel.
I love how prepared you are for traveling! Do you ever have any problems security-wise bringing food with you on flights?
I LOVE those Biscoff cookies. I think it was on JetBlue that they also offered me some Terra chips. I was like.. REALLY?!
ps I love this post’s title!
Those little Biscoff cookies are the best!
That book sounds really good. I love when authors include recipes with the text (like Molly Wizenberg’s memoir). It’s like getting 2 books in 1.
I scarfed down a pack of the biscoff cookies when I was super starving on a looong delayed flight and was so shocked at how delicious it was!!! Yum! Lucy in the sky is totally going to be stuck in my head for the rest of the day, lol….there are def worse things
HAhaha i HATE sticky plane fingers! So annoying!!
Hope your flights were all safe!!!
such a lovely spread for an airplane picnic. get home safe!
You are a real flying “pro”, Kath! Love that you come prepared with healthy eats!
I love eating on planes – 1) because I love to eat
and 2) I love that it kills time so that you get to your destination sooner!
I love the new Stonyfield labels too! And that cookie looks yum
I get SO excited when they bust out the Biscoffs. So yummy!
I am so impressed that you pack all of your food for the plane!!! (Those little delta cookies are too good)
I love how healthy you eat even while you travel! Awesome sandwich!
Are those delta cookies not the most amazing things EVER? I love them.
You need to read Trail of Crumbs. Each chapter begins with a recipe, plus it’s a great uplifting woman-power kind of story.
Packing food for the plane is a must! That’s a great looking sky picnic!
Hi Kath! I’m right there with Haya – I’m amazed that you can get through security with yogurt. Security has taken both yogurt and hummus from me on several occassions. Specifically at RDU and O’Hare, you must not look like much of a threat
I saw on your twitter picture that you were in McNamara! Thank goodness – you would have been bored to tears in the Smith with 2 hours to wait! Hope the rest of your travels went well
PS – I’m loving the Beatles reference in the title
Great idea packing your own meal! I’ve got to start making time to do that! Have a safe flight #2!
Packing a meal when you fly is such a savior isn’t it?! Thank goodness for sandwiches, that’s all I can say. Happy travels!
stacy ,
There wasn’t really a turning point or trick to it – it was just a gradual mental shift. My goals these days are to just be normal, and that’s a part of normality.
Kath
yeah i figure they’d be confiscated because of the no liquids rule over 3 oz and outside of your ziplock baggie! maybe i should give it a go.
I love the Biscoff cookies too! Our grocery store out here sells them (Vons) and believe it or not at the drugstore too (CVS)
If I were on y’all’s flight, I would have been so jealous of your picnic–it all looks so delicious!
that’s quite an endorsement for airplane food!
I believe you said you’ll be in Chicago this weekend, correct? Let me know if you need any recommendations for places to eat / drink! I think my city is the best in the world and we have so many fun new places to try!
