Picnic In The Sky (With Diamonds!)

Blogging from the air again!!

Our flight took off on time, and but my stomach was a bit early for lunch. I had a few nuts + fruits from my snack bag to tide me till 1PM for a mid-flight lunch.

Our skyline picnic was awesome!!! Very filling and wholesome.

Matt made us sandwiches: Roasted chicken, lemon hummus, spinach, mustard + jalapenos. Delish!

Plus we had yogurts, which I enhanced with a few Delta peanuts. I love the new Stonyfield lables!

Plus we shared two oranges cut into pieces to prevent stick plane fingers.

But the highlight of lunch was this Biscoff ginger spice cookie!!

I finished Too Many Cooks and now have a handful of recipes earmarked to try!! The book has 102 recipes, each tied to a chapter. I love Emily’s cooking ‘little-a-this’ cooking style :) 

Flight #2 leaves in the 5PM hour and hopefully we’ll be home in time for a thrown-together freezer dinner. We’ve got 2 hours to kill here in Detroit.

T-3 days until I’m on another plane!

    I’m definitely going to have to take a cue from you and pack a meal next time I’m flying. I always end up starving and snacking on whatever I can find that is decent in the airport.

    Crazy how flights send you out of your way just to get home. One time I flew from Boston to Cincy to get to Atlanta.

    My dad orders those biscoff cookies in bulk off the interenet. They are so good with a cup of coffee for an envening treat….or dipped in dark chocolate. Oh My, that is so good it should be illegal!

    i LOVED your gather article. i was wondering if you could give your readers an even closer look: HOW did u personally make the transition from being scared to eat out to loving it? did u ever imagine you could enjoy it so much? how do we get there? thanks!

    I have had yogurt I brought from home confiscated at security a few times. They claim it is a “liquid” and exceeds the 1 oz rule.

    Kate – I happened to stumble upon your blog a week ago and now your die hard fan..you are such a sport..completely spontaneous. I have already tried a few recipes (especially..the oatmeal ones, I am a oatmeal slave myself). Enjoy the rest of your travel.

    Those little Biscoff cookies are the best!

    That book sounds really good. I love when authors include recipes with the text (like Molly Wizenberg’s memoir). It’s like getting 2 books in 1.

    I scarfed down a pack of the biscoff cookies when I was super starving on a looong delayed flight and was so shocked at how delicious it was!!! Yum! Lucy in the sky is totally going to be stuck in my head for the rest of the day, lol….there are def worse things 🙂

    Are those delta cookies not the most amazing things EVER? I love them.

    You need to read Trail of Crumbs. Each chapter begins with a recipe, plus it’s a great uplifting woman-power kind of story.

    Hi Kath! I’m right there with Haya – I’m amazed that you can get through security with yogurt. Security has taken both yogurt and hummus from me on several occassions. Specifically at RDU and O’Hare, you must not look like much of a threat 😉

    There wasn’t really a turning point or trick to it – it was just a gradual mental shift. My goals these days are to just be normal, and that’s a part of normality.

    yeah i figure they’d be confiscated because of the no liquids rule over 3 oz and outside of your ziplock baggie! maybe i should give it a go.
