Jumbo Shrimp

May 9, 2012

More rain. More overcast. I sure hope our garden is soaking up this weather because I am not!! Hoping for a litttttle sun tomorrow….Pretty please!?

Dinner tonight was “cook shrimp with pantry flavors and serve over pasta.” Typical stock meal.

The manifest:

In one low-heat pot went:

  • Chopped kalamata olives (from the pantry)
  • Chopped sundried tomatoes (also pantry)
  • 1 zucchini
  • A cup of cherry tomatoes
  • 2 tsp olive oil

In a hot pan went:

  • Olive oil
  • Frozen/thawed USA wild caught shrimp
  • Salt

And then there was angel hair…so wonderful to stuff into mouth!

We tossed them all together and topped with some asiago cheese and red pepper flakes.

And dinner was served!

I had a little project going on on our dining table, so we watched some 30 Rock instead! I’m very excited about what’s going on here!

I never got hungry for a snack this afternoon, but I can tell that this dinner, while delicious and balanced, just wasn’t enough, so I’m going to forage for something else – popsicle, watermelon, cereal. TBD!

Dinner looks awesome, let’s be honest-the cheeseeee was the best part?

2 KathEats May 9, 2012 at 7:15 pm

I’d say the noodles were!

3 Katie @ Peace Love & Oats May 9, 2012 at 7:14 pm

That looks ridiculously delicious! Angel hair pasta is my favorite!!!

4 Susan H. @ The Food Allergy Chronicles May 9, 2012 at 7:26 pm

Oh my, oh my, oh my! Love everything that went in that dish! The thinner the pasta the better in my books! Amazing what one can conjure up for a pantry style dish!

5 Angela @ Sleep and Repeat May 9, 2012 at 7:46 pm

omg that pasta looks good! I love jumbo shrimp, but they’re always so pricey at my grocery store :(

6 Angela @ Health, Happiness and Harmony May 9, 2012 at 7:49 pm

Shrimp and angel hair are such a great combination! Looks great!

7 Kaila @healthyhelperblog! May 9, 2012 at 7:50 pm

I could go for some pasta this week! More specifically my grandmas homemade sauce…mmmm!

8 Lynn @ the actor's diet May 9, 2012 at 7:55 pm

Spoiler alert – H2o melon. Instagram.

Serious question and not a jab at you–are the noodles whole wheat? If so, why not?

I just thought they looked like regular angel hair and was surprised.

11 KathEats May 9, 2012 at 7:58 pm

They’re not because when I bought them there was not a whole wheat option. If I find WW angel hair, I’ll buy it!

12 Danielle May 9, 2012 at 7:56 pm

You once did a post on the dinner staples you tend to gravitate towards… But I can’t find it! Any help?:) thanks!

13 KathEats May 9, 2012 at 7:59 pm

Found it by searching for “dinner staples!” I’m going to add this to my Groceries post – didn’t know I wrote about it!

I am cooking now jumbo shrimp with broccoli, yum!!!

15 Moira May 9, 2012 at 8:26 pm

This pasta looks delicious! I’m all about the salt factor…I could eat kalamatas by the jarful

16 Averie @ Averie Cooks May 9, 2012 at 8:32 pm

Love one pot meals and that one turned out beautifully!

17 Hannah May 9, 2012 at 8:34 pm

Your foraging meals always look (and I’m sure taste) incredible! MMm!

18 Laura (Blogging Over Thyme) May 9, 2012 at 8:39 pm

This dinner is making me hungry (and I barely just finished dinner myself!). Whenever I see angel hair, I crave a massive bowl of it! Definitely my weakness 😉

19 Sara May 9, 2012 at 9:03 pm

I think the project is the ceiling fan in the baby’s room!!!

20 KathEats May 10, 2012 at 6:18 am

Ding ding ding!

21 Sara May 14, 2012 at 5:47 pm

I was right!!!!

22 Ashley @ Coffee Cake and Cardio May 9, 2012 at 9:05 pm

Looks great Kath! I love inventing things for dinner.

23 Cait's Plate May 9, 2012 at 9:07 pm

Excited to see what the project is! :)

24 Molly @ RDexposed May 9, 2012 at 9:39 pm

I was thinking that it was beer related. Then I remembered you have a fetus inside of you. Melon water sounds good as well. I’m sure monks haven’t tried that before.

25 Annette @FitnessPerks May 9, 2012 at 9:54 pm

Ooooh me likey! I cook like that too–throw stuff in pots and it USUALLY works out 😉

26 Kavi @ Lab to Fab! May 9, 2012 at 10:23 pm

That looks sooo good! Totally craving pasta now!

27 Laura @ She Eats Well May 9, 2012 at 10:57 pm

I am big into sundried tomatoes right now. I think they add so much to any dish. I love them in pasta, like yours, but also, in my fried egg sandwiches. So good!

28 Maura @ My Healthy 'Ohana May 9, 2012 at 11:33 pm

Your pasta bowl looks so yummy, I love shrimp with angel hair!

29 Katie @ Talk Less, Say More May 9, 2012 at 11:50 pm

YUM! that dinner looks delicious! Sometimes your dinners look so easy, so delicious and like something I could make but for whatever reason, they never come to mind when I’m looking for something simple and quick to make. Sheesh…I should work on that! 😉

30 j3nn May 10, 2012 at 12:00 am

Perfect pantry pasta dish! Love your selection of toppings, I choose the same ones often. And of course the sheet of cheese completes it. :)

31 Julie May 10, 2012 at 6:25 am

How do you thaw your shrimp? If cooking last minute… I’m always stuck for time so just curious.

32 KathEats May 10, 2012 at 7:53 am

I put them in a colander under running temperate water for 3-4 minutes

33 Hope @ With A Side Of Hope May 10, 2012 at 6:37 am

This pasta dish looks delicious! I love shrimp with pasta :)

34 Fran@ Broken Cookies Don't Count May 10, 2012 at 6:52 am

Sans shrimp, dinner would be perfect for me! What’s hiding there?!

35 Chelsea @ One Healthy Munchkin May 10, 2012 at 7:09 am

I’m amazed at how you can whip up such a gourmet looking meal with just a few basic ingredients!

36 ~Christy @ wonderofallthings May 10, 2012 at 8:36 am

The best looking (and sounding) pasta ever! (OK, could be that I’m just REALLY hungry 😉 ) And the word “forage” is simply awesome. But then I’m wordy like that…

37 Jennifer (The Gourmetour) May 10, 2012 at 12:17 pm

I seriously LOVE angel hair pasta! This dish looks amazing, but anything with olives, sun dried tomatoes, and angel hair is a winner in my book 😉

38 Alison (Fueling for Fitness) May 10, 2012 at 12:51 pm

That looks extra tempting today. Generally all of your dinners do, but I may have to recreate this soon!

39 Angel7 May 10, 2012 at 3:32 pm

It was supposed to be in the 70’s today, but it was chilly and rainy :( I hope the warm sun is in tomorrow’s forecast!
