Jumbo Shrimp

More rain. More overcast. I sure hope our garden is soaking up this weather because I am not!! Hoping for a litttttle sun tomorrow….Pretty please!?

Dinner tonight was “cook shrimp with pantry flavors and serve over pasta.” Typical stock meal.

The manifest:

JumboShrimp

In one low-heat pot went:

  • Chopped kalamata olives (from the pantry)
  • Chopped sundried tomatoes (also pantry)
  • 1 zucchini
  • A cup of cherry tomatoes
  • 2 tsp olive oil

In a hot pan went:

  • Olive oil
  • Frozen/thawed USA wild caught shrimp
  • Salt

And then there was angel hair…so wonderful to stuff into mouth!

We tossed them all together and topped with some asiago cheese and red pepper flakes.

And dinner was served!

I had a little project going on on our dining table, so we watched some 30 Rock instead! I’m very excited about what’s going on here!

I never got hungry for a snack this afternoon, but I can tell that this dinner, while delicious and balanced, just wasn’t enough, so I’m going to forage for something else – popsicle, watermelon, cereal. TBD!

    Oh my, oh my, oh my! Love everything that went in that dish! The thinner the pasta the better in my books! Amazing what one can conjure up for a pantry style dish!

    Serious question and not a jab at you–are the noodles whole wheat? If so, why not?

    I just thought they looked like regular angel hair and was surprised.

      They’re not because when I bought them there was not a whole wheat option. If I find WW angel hair, I’ll buy it!

    I was thinking that it was beer related. Then I remembered you have a fetus inside of you. Melon water sounds good as well. I’m sure monks haven’t tried that before.

    I am big into sundried tomatoes right now. I think they add so much to any dish. I love them in pasta, like yours, but also, in my fried egg sandwiches. So good!

    YUM! that dinner looks delicious! Sometimes your dinners look so easy, so delicious and like something I could make but for whatever reason, they never come to mind when I’m looking for something simple and quick to make. Sheesh…I should work on that! 😉

      I put them in a colander under running temperate water for 3-4 minutes

    The best looking (and sounding) pasta ever! (OK, could be that I’m just REALLY hungry 😉 ) And the word “forage” is simply awesome. But then I’m wordy like that…

    I seriously LOVE angel hair pasta! This dish looks amazing, but anything with olives, sun dried tomatoes, and angel hair is a winner in my book 😉
