Check out my to-do list for today!
Ba-da-bing! (Well, I did delegate some stuff to tomorrow, but I feel good about what I got done!)
We have a King and Queen chair set from my grandmother’s house and I found this little guy pretending to be a king! I think they are called potato bugs?
(No, I did not get that close – Matt took the photo!)
Speaking of Matt = King of Sandwiches
We ran out of energy for tonight’s dinner (and I didn’t really have a plan). The only ingredients we had to use were brussels sprouts and mushrooms. So I roasted a pan of those in some EVOO, maple syrup and salt and pepper for about 35 minutes at 400*.
Lovely browning!
I didn’t finish all the veggies – I was in a weird stomach mood. I saved them to have for tomorrow night’s dinner.
And the other half of dinner was a mish-mosh of CHO + PRO.
Some leftover egg salad on kashis
And the best cheese delivery sandwich of late. A thin slice of sourdough, avocado, mustard, half a ham, and 2 slices Kerrygold cheese. So good!
The view from the dining room was so pretty, but we knew it was freezing cold out there! I think we lost 30-40* overnight last night and are expecting a freeze tonight. (Yes, I realize there are those of you in blizzards right now, but it’s all relative!)
Long day tomorrow, but then I have 3 days that I am taking totally off of school work to spend with my family. My hard work these past 2 weekends has paid off.
Night!

Nice work on the to-do-list!!! Great eats as always
have a good night.
zest!
Ew, bugs!!! Love those roasted brussels sprouts though.
EEEK!!! What a creepy bug! I hope Matt squished it for you too!
I don’t understand how brussel sprouts got such a bad reputation! They are so good when you know how to cook them right!
Good Job on the to do list!
I love having random things like that for dinner
Congrats on all your progress! YOu definitely deserve a nice break.
Yea, we had a blizzard yesterday. Hopefully it is the last one of the season!!!
i think that’s a stink bug! at least thats what my mom calls them. one hopped on in my place this weekend. ugh!
Glad you will be taking some time to relax!
Dinner looks delicious for being so ‘unplanned’
Mmmm I could eat brussel sprouts every single day!! I bought a gigantic bag a couple weeks ago and in a panic I froze some when I couldn’t finish them before they went bad….now I don’t know what to do with them! Have you ever frozen/unfrozen brussel sprouts? Were they mushy??
Love the open faced sandwich! I love the snackish kind of meals- it’s nice to break up the routine! Have a great night!
Yeah for 3 days off!
WOW! That is one serious sandwich!
That egg salad looks amazing – what a yummy dinner, considering it was made with odds and ends it looks fantastic.
EEEEEEK!!!!! Not liking the bug.
Loving the brussels sprouts though
MMmmmm sandwich!
Ick! That’s a major close up of the bug! Whenever I see photos of bugs (or frogs) I get itchy feeling. That is the craziness inside me!
Beautiful brussel sprouts, though!
Those brussel sprouts look delicious! When I try roasting anything, they tend to skip the browning part and straight to turning black.
I’m planning on a trip to Charlotte with a friend. Do you have any recommendations for activities or places to check out?
That sandwich is ENORMOUS!!! Way to go with the to-do list… I wish I could get into list making.
Ick. Bugs of any kind freak me out. Matt’s sandwiches always make me chuckle. They’re just so big! I can’t imagine trying to get your mouth around it.
Matt’s sandwich is ginormous!
My sister and I always called those bugs Stink bugs. Not sure why, but it seemed to stick!
I’ll have to try the maple syrup on the brussel sprouts idea… I’ve always just stuck with olive oil and sea salt. Looks good though, Kath.
And that’s a nice looking to-do list, too!
That’s not a potato bug…I’m not sure what it is but potato bugs are much cuter and curl up in little balls. Heh heh….little balls…
I’m not going to comment on the size of Matt’s sandwich.
Love your impromptu dinners. LOVE Matt’s sandwich! too funny!
have a great night
Your TO DO list makes me tired!
That sam looks so good. I am such a sucker for Irish cheese.
Ohh I hate those bugs!!! I always used to find them in my room when I lived with my parents! YUCK.
That’s not a potato bug. They’re cuter. I think that’s a stink bug or something gross. Ick.
I have those bugs all around my apartment!! I never knew what they were called. Thanks for the info. They gross me out big time.
yumm melty cheese!
It is all relative with weather, because I would be freezing where you are!
I am officially craving egg salad now. Mmmm.
Great close up on the bug! I love the idea of using up what’s in the pantry/fridge and still creating a great dinner!
Good for you, you deserve some time off!!!
Question: How difficult would you say biochem is in comparison to general chem?
Eww! We call them stink bugs here in Maryland too. Apparently if you crush them they let out some terrible smell. So I shut my eyes and pick them up in a tissue na dthrow them outside, or scream for the husband!! They come in every spring!! good luck!
Kristin @ Iowa Girl Eats,
No, I haven’t ever frozen them. Better to go ahead and cook them all and then have easy leftovers to put on salads or in soups.
dippers ,
Hmmm…Charlotte isn’t the most touristy city. I’d say be sure to check out East Blvd. in Dilworth where a lot of shops and restaurants are, plus a park. There’s the Nat’l White Water Center about 30 minutes away that’s becoming a tourist spot. I have an email with some restaurant recommendations if you want to email me I’ll send it to you.
Sarah (lovINmytummy),
I’m giggling over here…
Leanne ,
I think biochem – at least my class – is EASIER than gen chem. GC is just painful. It’s easier than organic for sure. It’s simpler stuff and makes more sense.
Kath
Those brussels sprouts looks so good!!! I love when they get dark brown and caramalized. Yum!
Great job with the to-dos.
I love that accomplished feeling. Hope you had a fun, low-key night!
I love roasted brussel sprouts! When I hear someone say they don’t like brussel sprouts, I always tell them to try roasting them – they’re like a completely different veg! (Although, I admit to loving them steamed as well…)
I bet those will be even better second day…
Wow, Matt’s sandwich is huge!! How does he get his mouth around that? I love mish mash dinners.
I love that melty cheese!!!
Yay for weekend of familyness!!! I too am spending the entire weekend and am so excited!!!
