I don’t quite know what’s up with my appetite today. I’ve been full ALL afternoon and didn’t even want to eat dinner. But it was one of those nauseous times when I thought eating might help, so while Kanz worked on a homemade coffee table with reclaimed wood [exciting!], I made dinner in 5 minutes.
Bison Taco Salads
I browned the bison (8 ounces – the second half of Sunday’s pack) in Southwestern seasoning along with yellow frozen corn and jalepenos (the bell pepper I was also supposed to use was used in last night’s pizza!). Then we layered on baby spinach, Red Hot & Blue chips, homemade guac and lots of greek yogurt. Salsa on top!
The guac was just 2 small mashed avocados (the baby is the size of a large avocado this week!) along with lemon juice and salt.
Sadly I only got halfway through and just couldn’t stomach any more. So Matt got an extra portion! Headache still lingers. Took another Tylenol and going to try peppermint essential oil in a bit. Don’t want to drink caffeine this close to bed time, but I’ll be having it with breakfast for sure.
After dinner we went for a 20 minute walk around the block to digest. The whole time we were on the porch this afternoon working, I kept wondering where Pumpkin was. Sometimes we don’t see her for quite a few days. Right when we returned from our walk, Matt whispered “Pumpkiiiiin” and she came darting from our FRONT porch ready to greet us!! So cute. She is now taking a bath on my food photography cloth, so there’s some laundry for tomorrow : )

Feel better, Kath! I hope you figure out your headache before I come down there. Or maybe I’ll help make it go away
That guac looks awesome!
I never really knew how to ‘eat intuitively’ until I got pregnant. I used to eat at scheduled times, not when I was hungry, and always cleared my plate. Now I find I can step away from a meal when I am full and I’ve completely lost the “must clean the plate” mentality. (Which is a good thing!) Baby is teaching me things already!
You’re not alone! I haven’t even eaten dinner yet and usually I’d be dying if I didn’t have food! Don’t think my neck+back pain is helping either..
hope you feel better soon!
Ooh, that coffee table sounds really cool – can’t wait to see what Matt comes up with! I love walks after dinner; they’re so relaxing and enjoyable. Hope your headache goes away really soon!!
Thank you for reminding me of the ripe avocado I have sitting in my cabinet!! Haha.
I’m sorry you couldn’t eat all those nachos, because they look AMAZING!!!!
That’s funny you say that about your cat because I was at the vet with my dog yesterday and there was this huge poster that said “Have you seen your cat today?” I’m a dog lover, so I don’t really get cats, but I guess they just leave for days at a time sometimes?
I really hate headaches. I hope you feel better with some rest.
Hi, I have a 4 month old and a two year old. I got that awful headache in the 2nd trimester with both pregnancies. The only thing I found to really help was drinking a large smart water daily… And refilling it all day with filtered water but the smart water was key. It also helped a few of my pregnant friends. Hope you feel better!
Ohhh I hope you try that peppermint essential oil–it always works like a charm for me! As does Frankincense (but it’s much more $$$)
Sleep tight!
I love taco salad! I’m a big fan of meals where I can scoop!
Do you have Tiger Balm? That stuff is such a relief when it comes to headaches. You just rub a bit on the temples and it’s sooo soothing! Pick some up if you’re out – it’s like $3 and at any Whole Foods or health food store
Hey Kath -
I follow your posts religiously, and I’m really jealous of how you plan meals so well and keep your fridge sparse! Have you done a post on how you plan meals/stay on top of deals/plan your grocery store trips, etc? I’d love one of those! I’m always struggling to plan ahead, especially as a college student (soon to be graduate-student). Thanks!
Hey Brie,
In this post I talk about my grocery store staples. I try to just get the minimum I need and rely on pantry and freezer to fill in the rest. Hope it helps! http://www.katheats.com/sweating-in-my-sweater
Do you use an excel sheet to plan recipes? Where do you find them or do you create your own? I’m pretty creative, but sometimes I hit the big ole’ rut. Womp.
I don’t really plan them… I just have in my head a meat, a bean, a fish, a pasta and then add veggies to them (1-2 per night)
I’m nearly 13 weeks pregnant and had a terrible headache all day as well! Thank goodness for Tylenol!
Mmm I love bison! My mom makes AMAZING bison burgers! Nothing beats them on the grill in the nice weather!
So it’s not the most “nutritious” way to get ready of a pregnancy headache, but my doc always prescribed a regular old Coca Cola and it always did the trick!
I’ve heard a few other people mention the same thing
Yummy dinner. Feel better soon.
These nachos look so delicious!!!! I love the colors on the plate, too. Hope you’re feeling better!
Cats are awesome! I’m sorry you aren’t feeling so hot. The little one is definitely growing! I hope you get a good night’s sleep and that you feel better tomorrow!
sorry you’re not feeling well
i’m amazing how pretty and put together your lazy/”i’m not feeling well” meals are… i would have rolled with a big bowl of cereal!
Yum, dinner looks good! Too bad you weren’t up for it I would have eaten it up. Your appeptite decreased while mine has increased to all day eating ..29 weeks here!
Ihope you wake up feeling better!
Have you tried using 100% pure essential oils? Makes a huge difference! They’re way more potent and effective. doTERRA is a one of a kind company that sources them from around the world to find the purest oils. http://vimeo.com/24951291
Animals and special cloths or clean bedding or a fresh blanket..they have a 6th sense for going right to the really “special” stuff!
That dinner looks beautiful! The colors contrast and that fresh avocado looks delicious. Hope your head feels better!
somebody mentioned Tiger Balm, but it carries warnings about using during pregnancy.
I know peppermint oil has a warning about ingestion during pregnancy; don’t know about just rubbing a little on the skin…
anyway, hope your headache is gone by morning!
Awww, Pumpkin sounds so adorable. Our kitties sleep on our freshly cleaned clothes piles on the laundry folding table, so don’t feel bad! haha
I am craving guac but can’t seem to find avocado ANYWHERE!
It’s so strange how the appetite goes up and down.. I was the same way too.
Towards the end of the pregnancy, it’s hard to eat for a different reason.. your stomach is going to be all pushed up by the baby in the uterus!
Hi Kath, Sorry about the headache! I think the essential oils really do help with headaches – I keep peppermint oil at my desk and have lavendar oil at home – both really help when rubbed on my temples. And of course they smell great too!
Feel better soon
Your dinner could have been for a St. Patrick’s Day post…so Green!
Kath! I just saw a joke that reminds me of your dinner.
What did the Buffalo say when his son left for college?
-Bison
hahaha
[This was stuck in spam] But LOL!
hope you’re having caffeine and knocking that headache out right now. feel better, kath! dinner looked delicious.
Sorry to hear your headache is lasting so long! Our weather system is chaninging again so I am gearing up for another one of my headaches. We will hit a high of 26 degrees C breaking a record set back in 1945 (I think). Then a cool front moves in…yikes…I can almost feel the pressure building this morning behind my eyes!
Oh, no! I’m sorry to hear that you still have a headache. They are definitely no fun. I hope you feel better asap!
Sorry about your headache Kath.
I hope it’s feeling better this morning!
The guac looks gorgeous! I love cooking with bison, but haven’t done it for a long time! One of the things I love about dining out when I’m in Colorado is that you can find bison everywhere- and so much of it’s local!
Great dinner idea when one is not overly hungry

I hope you woke up this morning without the headache and with an appetite!
Hi Kath,
I saw that you’ve been suffering with a headache and nothing is making it go away. I just wanted to mention that this used to happen to me all the time. I realized I was low in sodium and now I drink a salty homemade energy drink when I work out a lot and really sweat. I take a washed out pasta jar fill it with filtered water and add 1/4 tsp salt and 1 tsp honey or maple syrup. Place the lid on and shake like crazy and drink. I no longer get headaches, it’s seriously amazing!! I hope this helps.
Thanks – I might try this as I used to make a great homemade sport drink with orange/lemon/salt
Ah, pumpkin! : )
