Sorry for the delayed post! There’s been no lounging around watching movies today – I’ve been getting in gear for Xmas and the week after when we’re spending a few days at Bald Head Island with my family, Karen + Andrew.
I was in an exercising mood this morning and decided to go to a noon cycle class. I got there early for some weight lifting. First I warmed up my arms and legs on the ET for about 15 minutes, and then I did a round of weights – biceps, shoulders, triceps, lunges, walking lunges, a few weight machines. My chest and sides are still sore from Saturday’s pull-ups, so I didn’t do anything to them. Then I went to one of the best cycle classes I’ve ever been to! Unfortunately the instructor doesn’t seem to teach many classes that I can attend. She was great – did lots of “Because You Can” talk that made me feel so good about myself. And she was super challenging with lots of intervals. She ended with the above quote from a U2 song that I thought was very nice. By the time I left the gym my HRM said I’d burned 620 calories!
For lunch I had a BB + PB sandwich on Dakota bread. Such a great combo!
Plus a side salad. Simple mixed greens tossed with olive oil and honey and topped with POM seeds (we’re flat out of veggies)
And a blurry blueberry Oikos! Guess I was too focused on the spoon.
After lunch I went out for 2 last minute Christmas gifts and have been wrapping since I got home. I was excited to see the husband make an appearance at 4 (you never know when he’s off of work these days) but he turned around and went out Christmas shopping! I’m excited to get to spend a few days with him later this week <3
Gotta finish wrapping, make dinner (which is a free-for-all because we have no food left), make bourbon balls (!!) and get a little relaxation in!

Your dressing looks great and really simple. How much of each ingredient did you use?

Just a drizzle of each – maybe half a tsp to a tsp?

Hi Kath! I haven’t commented in quite a while, but just wanted to say I feel your pain about not seeing your husband! Mine starts work at 7am every day and sometimes arrives home by 7pm, but other times not until 10 or 11pm! It definitely makes me miss him, but my puppy always keeps me company. Have you guys thought about getting a dog?
Sounds like you’ve got a great night planned! Enjoy it
Wow, that’s a lot of calories. Good work!
What a great quote!
oooh, can’t wait to see what you create for dinner. 620 calories – awesome. You definitely earned that sandwich – yummy!
We love Bourbon Balls in our family! If yours are the same ones we make, with the crushed Nilla wafers and pecans – try it with Kaluha – so, so good
Yum.
Pretty pom seeds!
Where do you get your pom seeds? I don’t have the patience to peel my own pomegranates

Kath, I have a blogging question! I just started a blog for cooking/baking and I want to have recipe links along the side like yours. How did you get them there? I’m not sure how to do it at all. Where do I put the recipes and how do I link to them? If you could help me I would really appreciate it!
Thanks!
Nice Workout! The pom seeds look delicious! They sell them for about 8 dollars for a tiny container around here so I think it’s time for me to learn how to peal one!
