:OCinnamon coconut millet- that sounds AMAZING!!
I like millet
Have a good afternoon yourself
Walk backwards on the treadmill. Helps relieve and heal hamstring. Feel better soon. Keep moving…but keep it easy on the leg. If that is what it is, it will take a couple of months.
Yuuummm – that lunch looks FABULOUS! I’m dying to try the caramel oikos…I can’t decide if I’ll like it or not.
Have a wonderful afternoon!
Grain with coconut and cinammon?!? Yum!!!
Have a great rest of the day!
I haven’t tried the caramel Oikos yet but the idea of dipping an apple into it just piqued my interest!
Great combo of flavors and textures. I can’t decide what to make for lunch today… nothing in my kitchen sounds appealing!
That millet sounds delicious!
that sounds like the perfect sweet-and-savory lunch! i need to try millet…i don’t know if i’ve ever had it but is sounds and looks amazing!
Fun lunch box. I like the caramel Oikos better than the chocolate. I never cared much for chocolate yogurts.

I love all these fun and funky grains, but the only one I ever eat is oats. I should expand my pallet; they just aren’t very filling :-/
Looks like a very nice lunch!
Hope you have a fantastic afternoon as well!
I had that same title for my post when my obsession with millet bread first started
Great minds think and eat alike!!
Ohh interesting way to eat millet! I’ve still never tried it, but I did try wheatberries for the first time last week.
What an awesome mix Kath! Love the cinnamon!
OMG….did we take the exact same photo or WHAT!?? Apple on top of strawberry oikos on today’s post..too funny!
Yum! What a great sounding lunch!
I love your version of a caramel covered apple!
Looks great Kath! I never thought of cooking millit and eating it as a cooked grain- I always use it in muffins!
I need to find that caramel oikos! Caramel apples are the best
As usual, love your healthy lunches!
You are killing me! microwaving that plastic….
Love the healthy twist on the caramel apple!
i love the idea of combining coconut with grains – and cinnamon. yum
Hi Kath! I have a quick question about how you care for your Camelbak. Your reservoir looks just like mine and I haven’t figured out if I’m supposed to remove the tube from the reservoir to clean it or not. Do you remove the tube or just leave it in place and hang it upside-down to dry? Any advice would be great!
I just flush it out really well. Put a ton of water in and just let the tube run open until it’s empty. Twice if I used something sticky.
Great, thanks!
Nicely balanced lunch. Love those Vega Vibrancy bars; only tracked them down once though — still working on finding them without having to fork over shipping.
Caramel Oikos + an apple sound like a fabulous snackaroo!
And I just realized I was comment #26! (And #27 now too!)
I have never had millet before – but that sounds delicious.
Millet with cinnamon and coconut? This is a new combo I need to try! Love the Oikos Greek yogurt!! One of my fav brands!
Mmmm…what a flavorful, well-rounded meal. I wouldn’t expect any less : )
My eyes aren’t as big as my stomach. I need to pack bigger lunches!
Once again, a wonderfully balanced lunch Kath
I’m loving the carmel covered apples. What a great idea!
I love how you added cinnamon and coconut to your millet. Sounds lovely and so, so, so fragrant!
Hey Kath,
Looks like a beautiful day down there. I’m in town for business one night next week and hoping you can suggest a great restaurant for dinner. Not sure if you have a list of your favorites anywhere or if there is an easy way to gather that list!
We’re coming from Birkdale Village in Huntersville and staying at the Omni on E Trade street in Charlotte. Any help would be great!
Thanks,
Nadine
There’s a new place uptown called Dandelion Cafe that is supposed to be really cool. Small plates or local foods.
I also love Sonoma Modern Kitchen and Zink for a swanky dinner uptown.
If you want to venture a little further south, Brixx Pizza and Big Daddy’s in Dilworth are both casual and really good.
And my new favorite restaurant in Charlotte is Good Food On Montford, which is about 10 minutes south of uptown. Small plates and REALLY good flavors.
Welcome!
Many thanks!
Mmmmm apples and caramel Oikos are amazing together!
I’ve never tried millet, but you make it look good.
I just have to finish the gazilion grains in my pantry before buying new ones…
i am definitely trying that “caramel covered apple” !!! sounds amazing!
Yum, your lunch looks fabulous!
I’m dying to get my hands on some of those Vega bars. I can’t find them anywhere near me (besides Whole Foods which is a 30 minute drive –
)
Love the cinnamon and coconut on millet idea – I’ve been going crazy with cinnamon on my oatmeal lately, so it’s only a matter of time before it transitions to savoury food too
What a great balanced lunch! And hope your leg feels better soon
I must try the Caramel Oikos NOW!
I cannot find the caramel or chocolate Oikos. I am not sure where to go, but I really want to try it.
I LOVE the caramel. It’s my favorite!
Great lunch, food groups covered.
