Eat The Props

G’afternoon!

I feel like I just blogged breakfast!!

In between Matt and I walked to the grocery store for a bunch of fresh green produce (and a few other items) and came home to make my Good Bite video. Once the recipe was complete, we decided to just eat it for lunch!!! Eat the props :)

The original recipe is here and I did a slightly different one for the video – coming soon :)

I beefed up the recipe with extra veggies!

A bed of spinach plus zucchini, red peppers and celery and capers, olives, dressing and feta cubes!

Plus fruit – half an apple and half an orange shared with Matt.

I have a slight headache :( Think I need more water from today’s strenuous yoga session! I’ll be writing all afternoon and then we’re going to Karen’s for dinner. Exciting not to have to cook. We also have a house showing tomorrow! Woo hoo.

I’m working on a project that requires 8-10 dessert props, and I don’t think my family could be more excited. Cupcakes, anyone?

how ironic…”beefing” up something with VEGETABLES.

That’s definitely something I do all the time, though. People make fun of me for eating so many vegetables but they are just so flavorful!

I’ve never seen feta cubes before- do you have to buy a block of feta and cube it like tofu?

That looks like an awesome, veggie filled lunch! I am so used to pasta salads being butter/mayo heavy with little veg. I love that the veggies outnumber the noodles in your recipe!

I often get headaches after long runs and hot yoga (dehydration!). Hopefully some water and electrolytes will make it go away. Love your veggie-licious lunch :-)

Oh Karen will you tell me more about it!!! I did find that website and think that studio might be the best fit for me. Is it hot yoga? I see they do have vinyasa classes. I think I read somewhere on the site that they discourage drinking water during class and that turned me off!

I love the combo of salty feta and olives. It is my favorite dinner at a local restaurant and I always add them on my salads at WF.

Drink up water. I’m chugging mine now after a great run this afternoon.
