I feel like I just blogged breakfast!!
In between Matt and I walked to the grocery store for a bunch of fresh green produce (and a few other items) and came home to make my Good Bite video. Once the recipe was complete, we decided to just eat it for lunch!!! Eat the props 🙂
The original recipe is here and I did a slightly different one for the video – coming soon 🙂
I beefed up the recipe with extra veggies!
A bed of spinach plus zucchini, red peppers and celery and capers, olives, dressing and feta cubes!
Plus fruit – half an apple and half an orange shared with Matt.
I have a slight headache 🙁 Think I need more water from today’s strenuous yoga session! I’ll be writing all afternoon and then we’re going to Karen’s for dinner. Exciting not to have to cook. We also have a house showing tomorrow! Woo hoo.
Have a nice afternoon!

I’m working on a project that requires 8-10 dessert props, and I don’t think my family could be more excited. Cupcakes, anyone?
Yes, drink up that water. Enjoy your Saturday!

boasts, not boats. although it seems like a really bad pun (i.e “on board”) it was really just a typo

It took me forever to figure out what those capers were!
Caroline (Ribbons, Roads, and Raspberries) says
how ironic…”beefing” up something with VEGETABLES.
That’s definitely something I do all the time, though. People make fun of me for eating so many vegetables but they are just so flavorful!
Jessica @ How Sweet It Is says
I love eating my props. 🙂
The pasta looks delish

I always forget to drink more water after a strenuous yoga session….I hope that headache goes away!
I’ve never seen feta cubes before- do you have to buy a block of feta and cube it like tofu?
It’s just like cutting up cubes of cheese!
Monica @ Musings of the Granola Girl says
what a gorgeous looking lunch 🙂
Having you a food blog means eating your props on a daily basis. I love it. 🙂
The pasta dish looks yummy.
Emily @ The Front Burner Blog says
I have been guzzling water all morning – totally worth it though! 🙂

That looks like an awesome, veggie filled lunch! I am so used to pasta salads being butter/mayo heavy with little veg. I love that the veggies outnumber the noodles in your recipe!
Megan (The Runner's Kitchen) says
I often get headaches after long runs and hot yoga (dehydration!). Hopefully some water and electrolytes will make it go away. Love your veggie-licious lunch 🙂

Anything with capers wins in my book…
What a tasty looking pasta dish! Love the high ratio of veg to pasta!
Hope your headache goes away with extra water!
Oooh, capers are the best! Love the recipe, all that veggie + salty goodness 🙂

That lunch looks delicious. I think I will try that recipe, minus the capers yuck.
There is a fabulous yoga studio above Mas in Charlottesville that I go to every Sunday:
It’s one of the best parts of my week.
Oh Karen will you tell me more about it!!! I did find that website and think that studio might be the best fit for me. Is it hot yoga? I see they do have vinyasa classes. I think I read somewhere on the site that they discourage drinking water during class and that turned me off!
lynn (The Actors Diet) says
i love eating the props! mine are usually not as healthy as yours are.

Your lunch looks awesome!
Enjoy the rest of your Saturday!
Can you really ‘beef’ up a recipe by adding vegies? Hehe 😛
Lovely looking meal as always.
Cynthia (It All Changes) says
I love the combo of salty feta and olives. It is my favorite dinner at a local restaurant and I always add them on my salads at WF.
Drink up water. I’m chugging mine now after a great run this afternoon.
Heather (Heather's Dish) says
you had me at “feta cubes” 🙂 if i don’t have enough water i usually get an intense headache…so drink up! hope you guys have fun tonight! letting others cook does wonders to an evening sometimes 🙂
enjoy your dinner tonight!
Carrie (Love Healthy Living) says
