Cardboard–> Cornbread

May 13, 2011

I was on cardboard duty this afternoon. Boy have there been tons and tons and tons of boxes and cardboard pieces that came with our equipment. I feel the opposite of green with so much packaging, but I suppose there is nothing I can do other than recycle it.

IMG_1177 (640x480)IMG_1180 (640x480)

I finally headed home at 5:30, and FINALLY got in the shower! I was not expecting to be gone that long!!

Karen, bless her heart, has been helping us this week by doing dishes. Despite her fatigue from 5 out of 6 chemo treatments, she’s washed about 100 sheet pans! I think she’s more excited about the bakery finally coming to fruitiation than we are

She also baked some cornbread and sent us home with a slab!

So that’s what we had for dinner!

We were joined by the three honey bears!

Karen likes her cornbread savory so we had to add back some sweet! Between the Thistle, Wildflower + Clover, we love the Thistle the best. It’s got the most robust HONEY flavor. The Clover is slightly spicy bitter and the Wildflower is sweet but subtle.

Can’t forget the butter!

The main course was a soupy mixture of our leftover Baked Potato Soup plus leftover rice plus 2 handfuls of spinach plus smoked paprika plus half a slab of tempeh plus an egg on top!

The cornbread was better 😉

We’re settling down with Million Dollar Baby for some evening entertainment.

We THINK we made our deadline – which means a June 3 opening – but we

are not 100%, absolutely positive – haven’t heard the final word!!

Wow June 3 is so soon! I’m sure everything will be ready to go. And her cornbread looks great! I love cornbread.

2 Amanda (The Nutritionist Reviews) May 13, 2011 at 7:10 pm

Haha for a second I thought that you only had cornbread for dinner…but that sounded good to me!

3 Heather May 13, 2011 at 7:11 pm

Ahh June 3rd!! So exciting- I’m so glad to see all of this coming together for you guys!

4 sarah May 13, 2011 at 7:15 pm

Good luck. For Charlottesville sake, I hope June 3 is a go! In know I’d be happy if you were opening up in my backyard. But I’d have to buy stretch pants.

5 Tori (Fresh Fruition) May 13, 2011 at 7:17 pm

Honey bears never fail to make me smile! :)

6 Angie @ Musings of a Violet Monkey May 13, 2011 at 7:21 pm

Yum. Even the so-so soupy mixture looks good to me right now. I’m starving! I’m currently waiting on my dinner to be “delivered”… (Chipotle take-out, acquired by the lovely boyfriend). Sometimes, it’s just a take-out night. And tonight was that night. 😉

Hope you made the deadline! Good luck!!

7 erica May 13, 2011 at 7:22 pm

8 Grace @ Healthy Dreaming May 13, 2011 at 7:26 pm

June 3rd is JUST the round the corner. The cornbread looks so delicious drizzled with honey :)

Hope you have a great weekend!

9 Cait @ Beyond Bananas May 13, 2011 at 7:44 pm

Best of luck.. can’t believe how soon the BIG day is! I wish I lived closer…I would totally be there at the grand opening. I will be there in blog-spirit thought

10 shannon May 13, 2011 at 7:45 pm

I’m from MA and live in ME we love “yankee cornbread” which has sugar in it. My grandfather is from OK and he would not be happy when we made cornbread with sugar, calling us “yankees”. LOL!!! The southerns love it without sugar! Us northeners love it with.

11 Gina @Runningtothekitchen May 13, 2011 at 7:52 pm

Hope you get good news on the June 3rd opening. So soon!

12 Simply Life May 13, 2011 at 8:10 pm

so exciting that you’re getting so close!

13 Cara May 13, 2011 at 8:13 pm

Isn’t that the day after your anniversary? I think I remember us having the same wedding date, but I may be wrong. At any rate; very exciting!

14 KathEats May 13, 2011 at 9:22 pm

Yes yes!

15 lani May 13, 2011 at 8:19 pm

congratulations on the progress! regardless of the opening date, you both have accomplished a TON! i am so excited for you guys. and, what a deelicious looking dinner, to boot.

16 Miranda @ Working Mom Works Out May 13, 2011 at 8:20 pm

I’m a SAVORY cornbread kinda girl. Where is she from? I think it’s a regional thing.

Congrats, guys!!

17 KathEats May 13, 2011 at 9:23 pm

Aiken, South Carolina! She doesn’t love sweets though

18 staceyhealthylife May 13, 2011 at 8:25 pm

Mmmm the cornbread looks like the best part, and some amazing cornbread.

19 Emma (Namaste Everyday) May 13, 2011 at 8:27 pm

i love cornbread! Would Karen be willing to share the recipe?

20 KathEats May 13, 2011 at 9:23 pm

I dont’ think she has the energy to type it up right now. Maybe if she makes it again sometime

21 Elena @ GagaForGrapefruit May 13, 2011 at 8:27 pm

loveee cornbread!

22 Averie (LoveVeggiesAndYoga) May 13, 2011 at 8:29 pm

packaging, boxes, moving in/moving out…yes, so much waste, so dirty, so not green, but unavoidable. I need to wash my hands just looking at all those boxes..hah!

Cornbread + red napkins + square shape = very geometric, cool, high contrast image. love the photos!

23 Jenny @ Fitness Health and Food May 13, 2011 at 8:30 pm

oh my goodness! Congratulations on the tentative opening date, so exciting! :)

That cornbread is like food porn for me :) honey and butter mmmmmm…

24 McKayla @ Green Groats May 13, 2011 at 8:37 pm

Mmm. My favorite kind of dinner – everything all mixed together!

The cornbread looks amazing as well! Honey + butter + cornbread, what a perfect combo.

25 Karen May 13, 2011 at 8:43 pm

The cornbread is made from the recipe on the back of a package of Martha White Cornmeal (plain, white, and enriched.) Did you and Matt think it’s as good as the ones made from mixes???

26 KathEats May 13, 2011 at 9:23 pm

Oh good – there you are!!!

I did think it was good – but not as good at Trader Joe’s!

27 r8chel May 13, 2011 at 8:57 pm

Yum — that cornbread looks delicious. I like cornbread with either butter or honey, but it’s also good with maple syrup!

28 Meagan May 13, 2011 at 9:03 pm

That’s so soon!!

29 Liv @ The Salty n' Sweet May 13, 2011 at 9:13 pm

I love cornbread with sugar!! I guess it’s a northern thing, but savory cornbread tastes odd to me. But Karen’s are so beautiful! The crust looks amazing, but whenever I make cornbread, it always ends up more yellow than her version.

30 kaila @ healthy helper! May 13, 2011 at 9:23 pm

Okay well I am totally making cornbread tomorrow after seeing that slab! Looks amazing.

31 Holly @ The Runny Egg May 13, 2011 at 9:24 pm

That is so exciting — only a few more weeks!

I love cornbread — and Jason just walked behind me and said “now that looks good!”

32 Justeen @ Blissful Baking May 13, 2011 at 9:35 pm

Mmm honey is my FAV sweetener ever!! It looks delish drizzled on the cornbread!

33 Katie May 13, 2011 at 9:40 pm

I am such a Ding Dong! I thought you were opening today for some reason! Sorry!

I am so excited for your projected opening date!!!

Bless Karen’s heart for sure, she is an amazing and strong woman!!!!!!

34 The Teenage Taste May 13, 2011 at 9:51 pm

That cornbread looks delicious and the presentation looks absolutely fabulous! The dripping honey is absolutely droolworthy!

35 Mary Frances May 13, 2011 at 9:54 pm

I’m like you, I only feel relieved when I hear it is 100 percent for sure and get that final word; however, sending positive vibes your way and I somehow have a good feeling about it for you.

Wow, you go Karen–I’ve been thinking about you. Glad to hear you are feeling up to washing all those pans and corn bread too. One thing I always do when I wash my sheet pans is to put them back in the oven to dry–then they never rust; but from the picture I saw on a previous post, those big sheet pans look like aluminum so no worries about rust. Is that correct?

36 Katie @ Nourishing Flourishing May 13, 2011 at 10:04 pm

Karen sounds like a saint :) Best of luck on your deadline!

37 Angel7 May 13, 2011 at 10:07 pm

Back when I was in college and lived near a Great Harvest Bread Company, I used to get their cornbread, and I loved it!

38 Christine May 13, 2011 at 10:19 pm

Less than a month!

39 Laura @ Sprint 2 the Table May 13, 2011 at 10:27 pm

Do you ever put your cornbread in milk with butter and eat it with a spoon? Mom used to do that in coffee mug and heat it for a minute when I was a kid. It was the best treat!

40 MonsteRawr May 13, 2011 at 10:41 pm

And they’re not even the kind of boxes that you can pretend are spaceships! Fail.

41 Khushboo May 13, 2011 at 10:56 pm

3 weeks to go! I’ll be counting down witch ya because my bday is June 4th :)

42 Annette @ EnjoyYourHealthyLife May 13, 2011 at 11:43 pm

mmm I LOVE honey :) Yah for June 3rd<—-2 days before my husband's b-day!

43 Ashley May 13, 2011 at 11:52 pm

Lately, I am completely obsessed with honey + corn flour. We used to have cornbread for dinner nights when I was a kid [of course with some breakfast sausage too!]. SO GOOD.

44 Kate (What Kate is Cooking) May 13, 2011 at 11:58 pm

I’ve only just begun to like cornbread, so I think that looks amazing!

45 Kaitlyn @ 7 Plates May 14, 2011 at 12:10 am

June 3rd is coming up soon! The place looks great. Dinner looks good too!

46 Namaste Gurl May 14, 2011 at 12:16 am

Mmmm, that cornbread looks divine. I’m hungry just looking at it. :)

47 J3nn (Jenn's Menu and Lifestyle Blog) May 14, 2011 at 12:36 am

I don’t know if I’ve ever had savory cornbread. It looks yummy, though.

Here’s to hoping for a June 3rd opening — the day before Dustin’s birthday! :)

48 Cara @ EAT. PRAY. RUN. May 14, 2011 at 1:17 am

I love that you added an egg to your ‘stew’…I often forget about how much awesome flavor and texture an egg can add to so many dishes!

49 Marina May 14, 2011 at 2:57 am

I love cornbread, sweet and savory. Thanks for reminding me to make some.
And that stew with the egg on top looks delicious!

50 Jumanah May 14, 2011 at 3:02 am

The cornbread looks so good! Hope everything will work out and you open on June 3rd!!!

51 Victoria May 14, 2011 at 4:16 am

Million Dollar Baby is good but it totally wasn’t the film we were expecting when I rented it with a friend. Hope it didn’t take you by surprise in the same way (don’t want to say more for fear of revealing the plot!).

52 Sarah@The Flying ONION May 14, 2011 at 5:34 am

June 3rd! That’s so soon! You guys must be thrilled. 😀

I absolutely love cornbread with honey! I always make my cornbread a little on the savory side, just because I love the way a drizzle of sweet honey on top really pops out and excites everything. 😀

53 Kristine May 14, 2011 at 6:02 am

bummer, I wish I could take those cardboard boxes off your hands! I am moving and need all the boxes I can get! :)

54 Hannah May 14, 2011 at 6:14 am

Oh, you must try and track down some Leatherwood Honey! It has the most unique, fascinating, delicious flavour – surely amazing with cornbread :)

55 Chelsea @ One Healthy Munchkin May 14, 2011 at 6:50 am

I love cornbread, but I’ve always eaten in savory. I can imagine that it must taste amazing with honey though!

I’m crossing my fingers for you that you’ll be able to open on June 3rd. It’s so soon!!

56 Jenn May 14, 2011 at 7:29 am

Cornbread is my favorite thing! About the boxes, at least the store is in great location to McIntire Recycling :)

57 Melissa May 14, 2011 at 7:33 am

Wow, June 3! Awesome! If you are open, I will be driving through the area on the 3rd and the 5th on my way to and from my half marathon. I want to stop by for some KERF-style GH!!! 😀

58 Diana @ frontyardfoodie May 14, 2011 at 7:41 am

I LOVE tasting different honeys. So subtle in their differences but entirely delicious.

congrats on the date!

59 Mary May 14, 2011 at 2:45 pm

Good luck on June 3!

60 seana May 15, 2011 at 2:38 am
