Cardboard–> Cornbread

I was on cardboard duty this afternoon. Boy have there been tons and tons and tons of boxes and cardboard pieces that came with our equipment. I feel the opposite of green with so much packaging, but I suppose there is nothing I can do other than recycle it.

I finally headed home at 5:30, and FINALLY got in the shower! I was not expecting to be gone that long!!

Karen, bless her heart, has been helping us this week by doing dishes. Despite her fatigue from 5 out of 6 chemo treatments, she’s washed about 100 sheet pans! I think she’s more excited about the bakery finally coming to fruitiation than we are

She also baked some cornbread and sent us home with a slab!

Karen likes her cornbread savory so we had to add back some sweet! Between the Thistle, Wildflower + Clover, we love the Thistle the best. It’s got the most robust HONEY flavor. The Clover is slightly spicy bitter and the Wildflower is sweet but subtle.

The main course was a soupy mixture of our leftover Baked Potato Soup plus leftover rice plus 2 handfuls of spinach plus smoked paprika plus half a slab of tempeh plus an egg on top!

We’re settling down with Million Dollar Baby for some evening entertainment.

We THINK we made our deadline – which means a June 3 opening – but we

are not 100%, absolutely positive – haven’t heard the final word!!

    Good luck. For Charlottesville sake, I hope June 3 is a go! In know I’d be happy if you were opening up in my backyard. But I’d have to buy stretch pants.

    Yum. Even the so-so soupy mixture looks good to me right now. I’m starving! I’m currently waiting on my dinner to be “delivered”… (Chipotle take-out, acquired by the lovely boyfriend). Sometimes, it’s just a take-out night. And tonight was that night. 😉

    I’m from MA and live in ME we love “yankee cornbread” which has sugar in it. My grandfather is from OK and he would not be happy when we made cornbread with sugar, calling us “yankees”. LOL!!! The southerns love it without sugar! Us northeners love it with.

    packaging, boxes, moving in/moving out…yes, so much waste, so dirty, so not green, but unavoidable. I need to wash my hands just looking at all those boxes..hah!

    Cornbread + red napkins + square shape = very geometric, cool, high contrast image. love the photos!

    The cornbread is made from the recipe on the back of a package of Martha White Cornmeal (plain, white, and enriched.) Did you and Matt think it’s as good as the ones made from mixes???

    I love cornbread with sugar!! I guess it’s a northern thing, but savory cornbread tastes odd to me. But Karen’s are so beautiful! The crust looks amazing, but whenever I make cornbread, it always ends up more yellow than her version.

    I’m like you, I only feel relieved when I hear it is 100 percent for sure and get that final word; however, sending positive vibes your way and I somehow have a good feeling about it for you.

    Wow, you go Karen–I’ve been thinking about you. Glad to hear you are feeling up to washing all those pans and corn bread too. One thing I always do when I wash my sheet pans is to put them back in the oven to dry–then they never rust; but from the picture I saw on a previous post, those big sheet pans look like aluminum so no worries about rust. Is that correct?

    Do you ever put your cornbread in milk with butter and eat it with a spoon? Mom used to do that in coffee mug and heat it for a minute when I was a kid. It was the best treat!

    Lately, I am completely obsessed with honey + corn flour. We used to have cornbread for dinner nights when I was a kid [of course with some breakfast sausage too!]. SO GOOD.

    Million Dollar Baby is good but it totally wasn’t the film we were expecting when I rented it with a friend. Hope it didn’t take you by surprise in the same way (don’t want to say more for fear of revealing the plot!).

    I absolutely love cornbread with honey! I always make my cornbread a little on the savory side, just because I love the way a drizzle of sweet honey on top really pops out and excites everything. 😀
