Well…you knew it was coming!
One down, 3 to go
When I arrived on campus I found a rocking chair in the sunshine to do some last minute cramming.
Then it was test time. I can’t really say how it went because I took it early and my classmates might read this! Honor code! But I can say I’m glad it’s over
After the test I did a little hiking to the nutrition dept. to pick up a form and deliver it to the career department on the other side of campus. Since there was a lot of construction blocking important pathways, what could have been done with a fax machine took me a manual 25 minutes! Ugh. At least it was exercise
Then I spotted a nice bench and decided to eat in my lap next to these flowers rather than go inside to a dark table.
I normally read blogs or watch Hulu.com shows on my computer when I eat on campus, but today I studied. Since I was in a nice setting, the studying wasn’t bad.
Today’s menu included a Tempeh, PB + PB Sandwich on Dakota bun. That would be pumpkin butter and peanut butter. Delish!!!
Plus this filling salad: spinach, red pepper, carrot, zucchini + goat cheese topped with Kelsey’s leftover homemade dressing. It is SO EASY to pack salads for lunch if you have things pre-cut.
Dressing was brought in a jar
Lastly, a really great orange.
My buddy from high school just posted about the latest HFCS news on his blog: HyperCurio.us. Thought you guys might be interested.
Let the studying resume!

Wow, what a gorgeous day, makes me want to move to NC right now!
I was just wondering if you have any plans/ thoughts on what you’ll be doing post-graduating/ R.D. exam? (Obviously you’ll be a R.D., but I wasn’t sure if you have any specific career path thoughts). This may be a personal question, so if you don’t feel like answering, don’t worry about it!
Great lunch!
good luck with the next exam!
I’m a big Hulu fan too

Kath,
Good luck with your remaining tests. Glad you’re enjoying some fresh air and sunshine while you study.
Those seeds on the Dakota bun make me want to grab your sandwich right from my computer monitor. Looks so yummy.
Rocking Chairs! I was amazed on my trip last weekend (to Georgia) that there were rocking chairs at the airport! And I noticed them in Charlotte too! How inviting!
Great looking lunch!
Good luck on the lasts of your exams!
Rocking chair! How very southern. I love it.
I remember having to run back and forth on campus do to errands…good exercise as long as the weather’s nice
Beautiful lunch! Good luck with the test!
Good luck on your exams! I know it can be killer at the time, but when it’s all over you’ll be so happy that you worked so hard! Your break is just around the corner!
Looks like a yummy sandwich. I’m going to lounge in the sun later, too – your setup looks perfect!
Good Luck on exams!
That salad looks delish!!! And it is SO much easier when the veggies are chopped!!!
That bun looks like the crust of my bread. It’s not dakota bread, but it’s sooo good.
I miss the days of studying outside! Yummy lunch too
ummm INSANE study guide kath. SERIOUSLY! color coded???? i wish i had learned to do things like that in college. i was lucky if i even did ANY study guide haha! hope the rest of your exams go well!
Looks like it is beautiful there! Good luck with all your studies!
You have rocking chairs on campus? That’s awesome! All we have is picnic tables and they’re always covered in snow or spiders…depending on the season.
pretty flowers! yay for getting one exam out of the way!
p.s. that bun looks so scrumptious!!
Those flowers are gorgeous! Hope the next exam went well.
I have a question about tempeh – what brand do you buy? I tried the brand from TJ’s and I thought it was plain awful. I didn’t steam it first because I used it in a stir-fry, but maybe that was the wrong move?
Looks like NC is having a beautiful day today. Pretty roses!
Reds a good color on you!
I always feel like going back to school whenever I read your posts!!!
I’m so glad you were able to enjoy the weather AND study!! I usually would pick one or the other
Cool beans, one exam down!!
Good luck with all the studying!
What beautiful surroundings to study in!
Good luck this afternoon!
btw – could you please mention a Prana Bar giveaway that I’m having? (of course, when you’re done with all of your studying since that’s most important
)

Thanks!
you’re taking that sandwich to a whole new level with the peanut butter! I tried it with just pumpkin butter once and it was just as good as you say!
Go, Kath, go!! You look cute, by the way! Those buns get me every time – they look so doughy and nutty!
Yay for a lovely lunch outside!
A rocking chair on campus? Outside? You’ve got a cool school!
Looks like a gorgeous day there.
You have such beautiful skin, Kath
Glad the studying went well outdoors…I love that.
Fun lunch Kath! Great snap shot
Lindsey (Mrs. LC),
Nope, I don’t know yet. I’ll be finishing my masters, for one, and definitely blogging and hopefully keeping up my freelance work. I hope to open a private practice too – but I might also want to work somewhere for money too
rhodeygirl ,
It’s so easy with Word 2007′s themes!!!!
Jenn ,
Lightlife’s – the kind at TJ’s. It’s a bit of an acquired taste, I admit.
AlliJag ,
Thanks
Oh She Glows,
Thank you! It’s the BareMinerals – and I NEVER wash my face at night! Keeps in the beauty oils
Kath
Kath, thanks so much for getting back to my previous question. I know what a busy lady you are so I appreciate it!
Hi Kath,
I second the beautiful skin comment by Angela. I was inspired by you to use Bare Minerals and love it! In regard to not washing your face at night, is this even when you wear the Bare Minerals and eye make-up? I have heard washing your face less actually helps break outs but I’m hesitant to sleep with the make-up on. Thanks!
Jess M,
) Since I put makeup on in the morning, by the time I go to bed, it seems to have mostly rubbed off. I know every dermo and doctor in the world recommend washing your face before bed, but I never have and have never had skin problems, so I just don’t want to mess up a good thing, ya know? If I ever wear heavy make-up or put it on close to bed time, I will take it off then.
Yes, even when I wear makeup (which is always
Kath
kath i love those SNEAKS. which nikes are those?
