Benchmark

Well…you knew it was coming!

One down, 3 to go

When I arrived on campus I found a rocking chair in the sunshine to do some last minute cramming.

Then it was test time. I can’t really say how it went because I took it early and my classmates might read this! Honor code! But I can say I’m glad it’s over 🙂

After the test I did a little hiking to the nutrition dept. to pick up a form and deliver it to the career department on the other side of campus. Since there was a lot of construction blocking important pathways, what could have been done with a fax machine took me a manual 25 minutes! Ugh. At least it was exercise 🙂

Then I spotted a nice bench and decided to eat in my lap next to these flowers rather than go inside to a dark table.

I normally read blogs or watch Hulu.com shows on my computer when I eat on campus, but today I studied. Since I was in a nice setting, the studying wasn’t bad.

Today’s menu included a Tempeh, PB + PB Sandwich on Dakota bun. That would be pumpkin butter and peanut butter. Delish!!!

Plus this filling salad: spinach, red pepper, carrot, zucchini + goat cheese topped with Kelsey’s leftover homemade dressing. It is SO EASY to pack salads for lunch if you have things pre-cut.

    Wow, what a gorgeous day, makes me want to move to NC right now!

    I was just wondering if you have any plans/ thoughts on what you’ll be doing post-graduating/ R.D. exam? (Obviously you’ll be a R.D., but I wasn’t sure if you have any specific career path thoughts). This may be a personal question, so if you don’t feel like answering, don’t worry about it! 🙂

    Rocking Chairs! I was amazed on my trip last weekend (to Georgia) that there were rocking chairs at the airport! And I noticed them in Charlotte too! How inviting!

    I have a question about tempeh – what brand do you buy? I tried the brand from TJ’s and I thought it was plain awful. I didn’t steam it first because I used it in a stir-fry, but maybe that was the wrong move?

    Nope, I don’t know yet. I’ll be finishing my masters, for one, and definitely blogging and hopefully keeping up my freelance work. I hope to open a private practice too – but I might also want to work somewhere for money too 🙂

    Hi Kath,
    I second the beautiful skin comment by Angela. I was inspired by you to use Bare Minerals and love it! In regard to not washing your face at night, is this even when you wear the Bare Minerals and eye make-up? I have heard washing your face less actually helps break outs but I’m hesitant to sleep with the make-up on. Thanks!

    Yes, even when I wear makeup (which is always 😉 ) Since I put makeup on in the morning, by the time I go to bed, it seems to have mostly rubbed off. I know every dermo and doctor in the world recommend washing your face before bed, but I never have and have never had skin problems, so I just don’t want to mess up a good thing, ya know? If I ever wear heavy make-up or put it on close to bed time, I will take it off then.
