I can tell you this: if I were a video blogger I would have quit years ago! Videos are SO complicated and frustrating! I’m having software problems, technical problems and I’m sleepy, so the video will have to wait until the AM
But here are some fun photos for you!
The Baker got itchy to make cookies this afternoon!
Larbs, who is a cookie connoisseur, proclaimed these Great Harvest mix choco chips in the top 5 of her life.
Matt fed me a bite of cookie, but I was more interested in this Pineapple Chobani from my lunch! I normally like some kind of crunchy in my yogurt, but this kind is perfect just how it is.
Got to watch last week’s So You Think You Can Dance!
Then it was beach time!
A walk, a swim and some reading later…
Larbs + Matt had a fiesta for us!
Starting with margaritas
Matched Matt’s shorts to a T!
Now that my book is finished, I can puzzle it up!!
Fiesta snacks – homemade quac, chips and peach salsa
Had a handful of these!
On the menu: Fish Tacos!
Sautéed flounder
Cabbage, strawberry + tomato salsa, greek yogurt crema
The salsa was strawberries, tomatoes, cilantro, honey, balsamic, salt, pepper and EVOO all to taste.
Tortillas!
I had two
With a bit of fizzy pinot grigio
No dessert for me tonight.
[Actually I did have a bite of Matt’s ice cream but bites don’t count, right?!]
So annoying by this movie project. Just worked on it for another 30 minutes with high hopes. No luck! All of the voices are chipmunked. GAR!!!!!!!!!!!!!!!!!!!!!!!!
See ya tomorrow.

Blogging forces me to make my food look pretty. It looks like it does the same to you. The tacos look fabulous.
um, i might be incredibly jealous (still!) of your amazing trip! i love your suit and am now inspired to have a little margarita
Those fish tacos look incredible – I wouldn’t have thought to put strawberries in the salsa but I think I’ll give it a try!
I used to puzzle it up all. the. time! Oh man it’s been forever since I’ve touched a puzzle. I was so pumped for the video–I hope it works out.
Please tell Larbs I think she is so pretty!! She looks just like your mom (which makes her pretty too)….and you!
What a great evening! I hope you have better luck with the video
Tacos look yummy, your dress is super cute, and my husband and I just started a puzzle too!!
So sorry the vid is frustrating! Better luck tomorrow
What a beautiful evening – everything looks delicious and so tropical! Oh la laa! And no, bites don’t count
Your dress is gorgeous!! I love it, and your bathingsuit! I think with bathingsuits simple is best, and you are in such good shape!
Happy Wednesday (almost Thurs!)
Meg
i love your giant fish tacos! looked delish!
i’m also jealous of your beach time… i’m spending my time writing my thesis so no beach time for me (plus I live on the prairies so the beaches are lacking, but that is besides the point!)
Oh no, how frustrating! I’m sorry it’s giving you such a hard time.
Your swimsuit is adorable! You look so cute in it.
What great eats! I especially love the margs:)
Homemade fish tacos are the best! I LOVE your dress, it’s so pretty. Do you know what went into the Greek yogurt creation?
where is your adorable suit from? i love it
I love your dress!! Where’d you find it? I’ve been looking for a great summery dress like that
What another wonderful meal in a gorgeous location!
Fish tacos, margaritas, puzzles, the beach, chocolate chip cookies, and preppy pastel shorts…too many good things in this post to count!
Those tacos look wonderful!
Question- how do you manage to control yourself around desserts! Are you just not that big on sweet stuff, or do you purposefully make an effort not to eat dessert? I wish I had that kind of restraint! I have a MAJOR sweet tooth, so dessert more often than not always follows dinner every night XD
Oh man, no – I have a HUGE sweet tooth. But after time I’ve just learned that turning down something isn’t as hard as it seems. And on day 4-5 of desserts, it wasn’t hard
I am obsessed with your dress! Where did you get it?
Your orange bikini is SO cute! Where’s it from?
Mmm, I like the sound of strawberry salsa
And agree with everyone else, awesome bikini!
Your dress is so pretty!
And your dinner makes me crave fish tacos. Never had ‘em, and always found the thought of them too strange, but yours look really good!
The fizzy pinot along with the fish tacos look so refreshing! I hear your pain on video problems
Wow, what a spread! Strawberry salsa? Yum!!
I love puzzles! I spend all of winter break watching Christmas movies and doing puzzles
Those cookies look out of this world! Can you get Matt to mail me some?
Oooh, that salsa sounds amazing! And don’t stress about the videos – we hear your “voice” anyway in your writing
oooh fish tacos are such a delicious and healthy treat! And i must say, I never met a margarita i didnt like! perfect vacation meal!
Amazing looking dinner! That salsa just sounds amazing. I’ve heard of mango and peach salsa, but strawberries…?! It makes sense though, to go with the red colour
You look fabulous in your swimsuit! Hottie with a body
Wei-Wei
Good to know I’m not the only one who still does puzzles! Every holiday my family cracks open a new puzzle on our giant puzzle board (yes, we’re a little dorky)
Oooh I just read ‘sauteed flounder’ and immediately thought of Flounder from The Little Mermaid!! Sad times
I’m loving your day so far – looks like such a lovely relaxing holiday
ah yes, video editing woes. the story of my life!
I’m having total beach envy right now…and fish taco and guac envy too.
Glad you’re enjoying your time at the beach Kath. Please soak in some of that fresh sea air for me…and maybe inhale one or two of Matt’s cookies in my honor as well!
Don’t stress too much about the video – we’ll wait! I haven’t done a puzzle in years. The last time I did one I got frustrated and threw all the pieces on the floor (don’t worry I was a kid at the time)!! I haven’t done one since.
I like the orange/white striped bikini! Margaritas rule. Do you have a good recipe? Mine always seem to be too sour, but I don’t want to add much sugar..
Larbs just used tequilla and margarita mix from Food Lion (100% sugar!)
Those tacos look delicious!
Oh this fish tacos look amazing!
Love that dinner and the salsa with the strawberries sounds amazing. You look great in your bikini, congrats for showing off your hard work.
That is the perfect beach-y dinner! Love it! I always forget about making fish tacos, but I love that everyone can make them according to their own personal taste. What a fun meal.
oh those tacos look so great!!! your husband never wears a hat and he was wearing yours and in that first picture i thought you looked very strange…until i realised it wasn’t you!
Yes it’s my favorite hat!!
Those tacos looks great! I’m having a serious craving now.
Sorry the video doesn’t work – that picture of you doing your puzzle is gorgeous! You look pretty with a tan
It’s funny that margarita matched hubbys shorts!!!
this vacation is just getting better and better; I’m dying for fish tacos
I love reading about your beach trips! It’s great how you all cook for each other, have a book club and just relax!
The tacos look awesome, btw
Those cookies look great!
You look like you’re having such a fun, relaxing time. I can’t wait for my own vacay in a few weeks.
Oh man, I love fish tacos. Those look great!
Your beach posts are making me itch for a beach vacation myself! It’s been over a 100 degrees up here in NJ for the last week. Sooo unbearable.
The fish tacos look so yummy and fresh. (Except for the cilantro – I absolutely cannot eat it. I’ve heard that people either LOVE it or HATE it. It tastes awful on my tongue – like soap or something.)
Could you tell me what went into the Greek yogurt topping?
Thank you!
Do it bother you that you can see your ribs in the swim suit photo?
No!?
I don’t see any ribs in the picture!!!
i think you’re looking HOT!
Looks like a wonderful dinner! Those tacos look seriously awesome.
I love puzzles but we only do them on vacation and at christmas, it’s pretty much mandatory.
Your whole trip looks so refreshing! I can’t wait to try their salsa; it sounds fantastic. Have you seen this recipe: http://www.cupcakeproject.com/2010/07/watermelon-syrup-and-watermelon-butter.html I feel like watermelon butter might appeal to you and the syrup would probably make a great mocktail.
You guys look GREAT in bikinis. I wish I could look that good
It looks like you’re having great weather. What good times, great food, and yummy drinks.
Is that the fizzy pinot grigio from Trader Joes?? I love that stuff! We had it at our wedding
Yup!
yum….i’m 26 yrs old and i’ve never had fish tacos!!! crazy i know!! these look great! Do you know what kind of fish you used?
I said in the post “sauteed flounder”
Oh YUMMMmm! I have been craving fish tacos!! What did they saute the fish in?
I wish I lived with someone who had the spontaneous desire to make delicious cookies!
Suit is from Target! Just got it so it’s still available.
Dress was from Macy’s last year.
Suit is from Target! Just got it so it’s still available.
Dress was from Macy’s last year.
Crema contained cilantro, 1 container greek yogurt, 1 tbsp mayo, lime zest, lime juice, garlic salt.
Those cookies look so good. I love it when they’re big and chewy like that!
Ahhh, my friend Jose
Margs and fish tacos? That’s like the definition of a beach vacation – glad you’re enjoying it!
I think this might be my favorite post of yours, of all time. I love your dress and those margs and tacos looks AMAZING!
What a fun day – or should I say days! Your vacation looks amazing. I love that swim suit, too. I am stopping at Target today so I might have to check it out. Thanks!
I love your bathing suit! I’m so psyched to go to the beach this weekend with my friends. Its going to be amazing. I just wish I had tougher skin so I could stay for longer than 3 days! I turn into a lobster so easily. :[
Strawberries in salsa I never would have thought of. And I’m sure there were no onions
I love peach salsa! Was it homemade? I love the stuff from Cosco but don’t have one near me now.
Fizzy pinot grigio! Do share!
Those fish tacos look FINtastic!! YUM
Jenn
Those tacos look absolutely incredibe…
That salsa looks so interesting and tasty. I’ve never heard of strawberries in a salsa before, I think I need to try this.
Just saw this post! monson picked up about 4 lbs of tilapia, so we might make this with tilapia pretty soon! yum yum
a great margarita recipe i swear by is just triple sec, frozen minute maid limeade and tequila, always works out great and doesn’t call for any of those store bought mixes
