Beach Bums

July 7, 2010

I can tell you this: if I were a video blogger I would have quit years ago! Videos are SO complicated and frustrating! I’m having software problems, technical problems and I’m sleepy, so the video will have to wait until the AM :(

But here are some fun photos for you!

The Baker got itchy to make cookies this afternoon!

IMG_6687 (427x640)

Larbs, who is a cookie connoisseur, proclaimed these Great Harvest mix choco chips in the top 5 of her life.

IMG_6692 (640x427)

Matt fed me a bite of cookie, but I was more interested in this Pineapple Chobani from my lunch! I normally like some kind of crunchy in my yogurt, but this kind is perfect just how it is.

Got to watch last week’s So You Think You Can Dance!

IMG_6695 (640x427)

Then it was beach time!

IMG_0166 (640x480)

A walk, a swim and some reading later…

Larbs + Matt had a fiesta for us!

IMG_6714 (427x640)

Starting with margaritas

IMG_6704 (640x427)

Matched Matt’s shorts to a T!

IMG_6715 (427x640)

Now that my book is finished, I can puzzle it up!!

IMG_6707 (427x640) IMG_6706 (427x640)

IMG_6716 (427x640)

Fiesta snacks – homemade quac, chips and peach salsa

IMG_6708 (640x427)

Had a handful of these!

IMG_6710 (640x427)

IMG_6711 (640x427)

On the menu: Fish Tacos!

IMG_6731 (640x427)

IMG_6729 (427x640)

IMG_6727 (640x427)

Sautéed flounder

IMG_6732 (640x427)

Cabbage, strawberry + tomato salsa, greek yogurt crema

IMG_6734 (640x427)

The salsa was strawberries, tomatoes, cilantro, honey, balsamic, salt, pepper and EVOO all to taste.

IMG_6739 (640x427)

IMG_6738 (640x427)

I had two :)

IMG_6749 (640x427)

IMG_6750 (640x427)

With a bit of fizzy pinot grigio

IMG_6736 (640x427)

IMG_6748 (640x427)

No dessert for me tonight.

[Actually I did have a bite of Matt’s ice cream but bites don’t count, right?!]

So annoying by this movie project. Just worked on it for another 30 minutes with high hopes. No luck! All of the voices are chipmunked. GAR!!!!!!!!!!!!!!!!!!!!!!!!

See ya tomorrow.

2 Heather (Heather's Dish) July 7, 2010 at 10:12 pm

3 Dorry July 7, 2010 at 10:15 pm

Those fish tacos look incredible – I wouldn’t have thought to put strawberries in the salsa but I think I’ll give it a try!

4 Allie (Live Laugh Eat) July 7, 2010 at 10:19 pm

I used to puzzle it up all. the. time! Oh man it’s been forever since I’ve touched a puzzle. I was so pumped for the video–I hope it works out.

Please tell Larbs I think she is so pretty!! She looks just like your mom (which makes her pretty too)….and you!

5 Estela @ Weekly Bite July 7, 2010 at 10:20 pm

What a beautiful evening – everything looks delicious and so tropical! Oh la laa! And no, bites don’t count 😉 Your dress is gorgeous!! I love it, and your bathingsuit! I think with bathingsuits simple is best, and you are in such good shape!

Happy Wednesday (almost Thurs!)

8 Leslie @ Chomp! July 7, 2010 at 10:33 pm

i love your giant fish tacos! looked delish!
i’m also jealous of your beach time… i’m spending my time writing my thesis so no beach time for me (plus I live on the prairies so the beaches are lacking, but that is besides the point!)

9 Kaz July 7, 2010 at 10:34 pm

Oh no, how frustrating! I’m sorry it’s giving you such a hard time.

Your swimsuit is adorable! You look so cute in it. 😀

10 Jenny July 7, 2010 at 10:38 pm

What great eats! I especially love the margs:)

11 Marie July 7, 2010 at 10:44 pm

Homemade fish tacos are the best! I LOVE your dress, it’s so pretty. Do you know what went into the Greek yogurt creation?

12 jane July 7, 2010 at 10:49 pm

where is your adorable suit from? i love it

13 Mary @ Bites and Bliss July 7, 2010 at 10:49 pm

I love your dress!! Where’d you find it? I’ve been looking for a great summery dress like that :)

14 Lisa @bakebikeblog July 7, 2010 at 10:56 pm

What another wonderful meal in a gorgeous location!

15 Maria @ Oh Healthy Day July 7, 2010 at 11:01 pm

Fish tacos, margaritas, puzzles, the beach, chocolate chip cookies, and preppy pastel shorts…too many good things in this post to count!

16 Chelsea July 7, 2010 at 11:02 pm

Those tacos look wonderful!
Question- how do you manage to control yourself around desserts! Are you just not that big on sweet stuff, or do you purposefully make an effort not to eat dessert? I wish I had that kind of restraint! I have a MAJOR sweet tooth, so dessert more often than not always follows dinner every night XD

17 Kath July 8, 2010 at 8:08 am

Oh man, no – I have a HUGE sweet tooth. But after time I’ve just learned that turning down something isn’t as hard as it seems. And on day 4-5 of desserts, it wasn’t hard :)

18 Michelle @ Give Me the Almond Butter July 7, 2010 at 11:13 pm

I am obsessed with your dress! Where did you get it?

19 Casey July 7, 2010 at 11:24 pm

Your orange bikini is SO cute! Where’s it from?

20 Laura July 7, 2010 at 11:40 pm

Mmm, I like the sound of strawberry salsa :) And agree with everyone else, awesome bikini!

21 Michelle @ Turning Over a New Leaf July 7, 2010 at 11:40 pm

Your dress is so pretty!

And your dinner makes me crave fish tacos. Never had ’em, and always found the thought of them too strange, but yours look really good!

22 The Wife of a Dairyman July 7, 2010 at 11:41 pm

The fizzy pinot along with the fish tacos look so refreshing! I hear your pain on video problems :(

23 Jackie (Peaces of Earth) July 8, 2010 at 12:01 am

Wow, what a spread! Strawberry salsa? Yum!!

24 Camille July 8, 2010 at 12:03 am

I love puzzles! I spend all of winter break watching Christmas movies and doing puzzles
Those cookies look out of this world! Can you get Matt to mail me some? :)

25 Hannah July 8, 2010 at 12:21 am

26 ppp July 8, 2010 at 1:01 am

27 Wei-Wei July 8, 2010 at 1:12 am

Amazing looking dinner! That salsa just sounds amazing. I’ve heard of mango and peach salsa, but strawberries…?! It makes sense though, to go with the red colour 😀

You look fabulous in your swimsuit! Hottie with a body 😉

28 Lisa July 8, 2010 at 1:40 am

Good to know I’m not the only one who still does puzzles! Every holiday my family cracks open a new puzzle on our giant puzzle board (yes, we’re a little dorky)

29 Freya @ Brit Chick Runs July 8, 2010 at 1:47 am

Oooh I just read ‘sauteed flounder’ and immediately thought of Flounder from The Little Mermaid!! Sad times 😛
I’m loving your day so far – looks like such a lovely relaxing holiday :)

30 lynn (The Actors Diet) July 8, 2010 at 1:56 am

ah yes, video editing woes. the story of my life!

31 Heather Eats Almond Butter July 8, 2010 at 3:01 am

I’m having total beach envy right now…and fish taco and guac envy too.

Glad you’re enjoying your time at the beach Kath. Please soak in some of that fresh sea air for me…and maybe inhale one or two of Matt’s cookies in my honor as well! :)

32 Stacey @ Tipping the (Kitchen!) Scales July 8, 2010 at 3:12 am

Don’t stress too much about the video – we’ll wait! I haven’t done a puzzle in years. The last time I did one I got frustrated and threw all the pieces on the floor (don’t worry I was a kid at the time)!! I haven’t done one since.

33 Marieke July 8, 2010 at 4:47 am

I like the orange/white striped bikini! Margaritas rule. Do you have a good recipe? Mine always seem to be too sour, but I don’t want to add much sugar..

34 Kath July 8, 2010 at 8:09 am

Larbs just used tequilla and margarita mix from Food Lion (100% sugar!)

35 Jessica @ How Sweet It Is July 8, 2010 at 5:33 am

Those tacos look delicious!

36 Simply Life July 8, 2010 at 5:43 am

38 Sarah (Running to Slow Things Down) July 8, 2010 at 5:54 am

That is the perfect beach-y dinner! Love it! I always forget about making fish tacos, but I love that everyone can make them according to their own personal taste. What a fun meal. 😀

39 Allie July 8, 2010 at 5:55 am

oh those tacos look so great!!! your husband never wears a hat and he was wearing yours and in that first picture i thought you looked very strange…until i realised it wasn’t you!

40 Kath July 8, 2010 at 8:10 am

Yes it’s my favorite hat!!

41 Kristin (Salty Tooth) July 8, 2010 at 6:21 am

Those tacos looks great! I’m having a serious craving now.

42 Chelsey July 8, 2010 at 6:37 am

Sorry the video doesn’t work – that picture of you doing your puzzle is gorgeous! You look pretty with a tan :)

It’s funny that margarita matched hubbys shorts!!!

43 Katherine July 8, 2010 at 6:40 am

this vacation is just getting better and better; I’m dying for fish tacos

44 Sara @ July 8, 2010 at 6:41 am

I love reading about your beach trips! It’s great how you all cook for each other, have a book club and just relax! :) The tacos look awesome, btw

45 Anya @ Fitness & Sunshine July 8, 2010 at 6:51 am

Those cookies look great!

You look like you’re having such a fun, relaxing time. I can’t wait for my own vacay in a few weeks. :)

46 sweetersalt July 8, 2010 at 7:12 am

Oh man, I love fish tacos. Those look great!

47 Suzanne July 8, 2010 at 7:16 am

Your beach posts are making me itch for a beach vacation myself! It’s been over a 100 degrees up here in NJ for the last week. Sooo unbearable. :(

The fish tacos look so yummy and fresh. (Except for the cilantro – I absolutely cannot eat it. I’ve heard that people either LOVE it or HATE it. It tastes awful on my tongue – like soap or something.)
Could you tell me what went into the Greek yogurt topping?

Thank you! :)

48 Kathy July 8, 2010 at 7:19 am

Do it bother you that you can see your ribs in the swim suit photo?

49 Kath July 8, 2010 at 8:10 am

50 Phil July 8, 2010 at 2:03 pm

I don’t see any ribs in the picture!!!

51 brittany July 9, 2010 at 1:26 pm

i think you’re looking HOT!

52 Rachel (Two Healthy Plates) July 8, 2010 at 7:20 am

Looks like a wonderful dinner! Those tacos look seriously awesome.
I love puzzles but we only do them on vacation and at christmas, it’s pretty much mandatory.

53 Sarah July 8, 2010 at 7:21 am

Your whole trip looks so refreshing! I can’t wait to try their salsa; it sounds fantastic. Have you seen this recipe: I feel like watermelon butter might appeal to you and the syrup would probably make a great mocktail.

54 Samantha Angela @ Bikini Birthday July 8, 2010 at 7:28 am

You guys look GREAT in bikinis. I wish I could look that good 😛

55 Joanne July 8, 2010 at 7:38 am

It looks like you’re having great weather. What good times, great food, and yummy drinks.

56 Kelly July 8, 2010 at 7:40 am

59 Kath July 8, 2010 at 8:12 am

60 Brittany @ A Healthy Slice of Life July 8, 2010 at 7:51 am

Oh YUMMMmm! I have been craving fish tacos!! What did they saute the fish in?

61 Robyn @ Frugal 'n' Fit! July 8, 2010 at 8:05 am

I wish I lived with someone who had the spontaneous desire to make delicious cookies! :)

62 Kath July 8, 2010 at 8:07 am

Suit is from Target! Just got it so it’s still available.

Dress was from Macy’s last year.

63 Kath July 8, 2010 at 8:08 am

Suit is from Target! Just got it so it’s still available.

Dress was from Macy’s last year.

Crema contained cilantro, 1 container greek yogurt, 1 tbsp mayo, lime zest, lime juice, garlic salt.

64 Chelsea @ One Healthy Munchkin July 8, 2010 at 8:10 am

Those cookies look so good. I love it when they’re big and chewy like that!

65 Brynne July 8, 2010 at 8:30 am

Ahhh, my friend Jose :) Margs and fish tacos? That’s like the definition of a beach vacation – glad you’re enjoying it!

66 Allison K July 8, 2010 at 9:15 am

I think this might be my favorite post of yours, of all time. I love your dress and those margs and tacos looks AMAZING!

67 Bree July 8, 2010 at 9:55 am

What a fun day – or should I say days! Your vacation looks amazing. I love that swim suit, too. I am stopping at Target today so I might have to check it out. Thanks!

68 Marissa July 8, 2010 at 10:10 am

I love your bathing suit! I’m so psyched to go to the beach this weekend with my friends. Its going to be amazing. I just wish I had tougher skin so I could stay for longer than 3 days! I turn into a lobster so easily. :[

69 Cynthia (It All Changes) July 8, 2010 at 10:21 am

Strawberries in salsa I never would have thought of. And I’m sure there were no onions :-)

70 Sarah (Enjoying One Meal at a Time) July 8, 2010 at 11:47 am

I love peach salsa! Was it homemade? I love the stuff from Cosco but don’t have one near me now.

71 Erin @ A Girl and Her Mutt July 8, 2010 at 12:10 pm

Fizzy pinot grigio! Do share!

72 Jenn (Jenn's Menu and Lifestyle Blog) July 8, 2010 at 12:44 pm

73 Jil @ Peace, Love & Munchies July 8, 2010 at 2:12 pm

Those tacos look absolutely incredibe…

74 Leanne July 8, 2010 at 7:31 pm

That salsa looks so interesting and tasty. I’ve never heard of strawberries in a salsa before, I think I need to try this.

75 Aneesha July 9, 2010 at 3:42 pm

Just saw this post! monson picked up about 4 lbs of tilapia, so we might make this with tilapia pretty soon! yum yum

a great margarita recipe i swear by is just triple sec, frozen minute maid limeade and tequila, always works out great and doesn’t call for any of those store bought mixes
