How is it 5:00 and I’ve barely knocked a thing of my to-do list!?!? Shesh!
Lunch was amazing. I was planning on a mid-afternoon smoothie so I kept it to a one-dish salad.
Chopped Salmon + Wheatberry Salad:
- 1/2 cup cooked wheatberries
- 1/2 can salmon
- 1 carrot, chopped
- 2 stalks celery, chopped
- 2 handfuls baby spinach, chopped
- 2 tbsp capers
- 1 tbsp fresh dill
- 1 tbsp fresh basil
- Dressing: half a lemon, 1 tsp olive oil, 1 tsp dijon, 1/2 tsp brown sugar, S+P

Lunch Part II
I met my friend Mercedes for a smoothie around 2:30 – I got the Mangosteen from Smoothie King again. I don’t know if I can ever order anything else! It’s just got this strange tropical kick to it. I love the texture too.

HOW DARE THEY SAY THIS!!!!!!! My loyalty is being questioned!!

Tastings
On my way home I took a trip to the grocery store for some weekend items and saw ice cream was BOGO free . I can bypass that offer in the winter and spring, but in the summertime, isn’t it a requirement to have ice cream in your freezer!? I used to eat all the slow churned loaded kinds, but have recently switched my ice cream philosophy to all-natural. I got the Neopolitian because I couldn’t decide between vanilla and strawberry (I’m not usually a fruited ice cream person but have been craving strawberry ice cream for some reason). And Mint Chocolate Chip is just unbeatable.

Confession : I LOVE it when you bring ice cream home from the store and it’s all melted on the sides. I’m a big fan of slightly melted ice cream. I took a spoon swipe around the vanilla and strawberry before it went into the freezer

While at the grocery store I also participated in 2 wine tastings , 4 kinds each. Probably had about 4 oz of wine? Yum! It’s hard to pass down free wine samples.
I’m going to try to fit in a quick paper in the next hour before the hub comes home. Then I rented the movie Juno to watch tonight for a relaxing evening in <3

Yum – that soupy part of thawing ice cream is definitely my favorite too! I think that’s why I love soft serve so much – it’s all melty… and great on the free wine score!
I wish I had a Smoothie King out on the west coast – the angel food was my fave!
Juno was SUCH a good movie!! I hope you like it!
Oooo…that ice cream is giving me a craving…mint chocolate chip is my FAVORITE!
I agree with you…chewing is NOT overrated. I’d much rather eat my calories than drink them.
Wish my grocery store gave free wine tastings…maybe I just don’t go at the right times…hmmmm….
Juno was a great movie! My boyfriend went in thinking he was gonna hate it (because it involves a pregnant girl so it MUST be a chick flick, right?) and came out saying it was one of the funniest movies he’d seen in a while. Definitely our type of humor. Hope you guys enjoy it, too!
Haha… “Chewing is overrated”. Love it
Lunch looks amazing, as usual
. As an avid reader who is temporarily leaving the blogosphere to begin my study abroad journey I just wanted to say a “see you later” and wish you luck with your classes. I will definitely hurry back as soon as I can!
Just watched Juno last night for the third or fourth time…it’s a great movie! The smoothie looks great…mango…yum!
Man, I wish they had wine tasting at MY grocery store. I’m so envious! Enjoy Juno, such a sweet feel-good movie. Excellent choice for a Friday night in.
Allie ~ the west coast has JambaJuice! Omygoodness delish.
Juno is such a cute movie! You guys will love it!
LOVED Juno, enjoy! BOGO ice cream = summer, YAY!
Kath–I was looking at the recipe from the pasta salad you made last weekend…just wondering, why did you cook the vegetables before putting them in the salad? I know my Mom has a great recipe for pasta salad, but she uses raw vegetables in hers. Thanks!
PS- Juno = awesome.
Yes! Ice Cream is a summertime requirement to have in your freezer! Any flavor is good for me! Good for you for having an indulgent treat in the freezer to have on occasion!
FYI: “all natural” doesn’t mean anything. It doesn’t necessarily mean good ingredients, good-for-you, organic, no chemicals, whatever etc… It’s just a marketing phrase. When you say your ice philosophy has changed to all-natural, what exactly is it you’re looking for? And how did you read this label to determine this meets it? Because you can’t just count on the label’s saying “all natural.”
I love Juno. Hope you enjoy it!
Umm i’ve watched Juno 16 times in the past week. Unhealthy, i know, but I love it so much. I wish I had a cute/awkward boyfriend like Paulie Bleeker.
hey kath,
How come you bought ice cream over frozen yogurt? Just wondering b/c I always pic froyo b/c I think its much better calorie & fat wise.
P.S. I always get to inspired by your salad combos!
LOL, i just took the longest time trying to figure out what BOGO free meant. i finally just googled it, haha. i was like… wtf is she talking about? anyway! enjoy your ice cream
besides coffee ice cream, neopolitan and mint choc chip are my faves
Kath, you would love my freezer – it never keeps ice cream at the consistency that I want…it’s always just a little too much on the soft side. Hope you enjoy Juno – it’s a fantastic movie!
Danielle ,
Have a WONDERFUL time!!
Melissa ,
Just for flavor. We grilled some of them. I have always preferred lightly cooked veggies to raw ones. Hence all the grilled veggies salads I make.
Chris ,
Thanks for the warning, but my ingredient list is as follows:
Milk, Sugar, Cream, Cocoa, Strawberries, Natural Vanilla Flavoring.
The site http://www.eBrandAid.com did a good comparison:

Rachie ,
Frozen yogurt usually has just as much sugar, and you might be cutting out some fat, but the Breyers Naturals (and this HT brand I have) are lower in fat because they’re made from milk first, cream second. Plus, if you eat healthy most of the time a little saturated fat in the form of ice cream won’t hurt.
Check out the difference between this hard (as in from a carton not soft serve) fro-yo with 17 grams of sugar:

And the Breyers All Natural with only 14 grams of sugar:

And the soft serve fro-yo has 20 grams of sugar!

Haha that “chewing is overrated” is a crime, seriously!! I’m a chewy girl like you
I think you will like Juno — I laughed the whole way through and then cried a bit, too!
