Weekend Nourishment

Working hard [not for the money!] at the hospital today! I’m likely doing patient educations and helping out with assessments in the afternoon. What’s exciting: when the workday is over I have exactly 36 hours to relax!! Excitement awaits.

Packed in my lunchbox is a Matt salad and a few Kath side items:

He packed me a big ole salad filled with veggies and dressed in EVOO and honey, just like I like it.

Plus what appears to be an avocado kept intact so it does not brown (although I haven’t had trouble with browning when packing the night before in the past, FYI)

Looks like it’s gonna be a filling one!

Complete with yogurt + granola. Have you noticed that I seem to rotate between sandwiches with veggies on the side and salads with yogurt on the side? They are my favorite lunch combos of balances between veggie and protein sources.

    That looks like a lovely lunch! I keep trying to get into avocado, and it only hits the spot in a restaurant – very annoying. Have you ever had one in a smoothie? I hear that’s good!

    Greek yogurt and granola are two of my staples. great at anytime!

    my avocados ALWAYS seem to turn brown when i cut them the night before. what is the secret to keeping them green?

      I always sprinkle some lime juice on avocado to keep it from turning brown.

        Thanks ladies! I have never cut one and left the pit inside so I will try that next time. I have definitely eaten a brown avocado or two in my life! haha! I would love to have them stay green for once though so I am going to try leaving the pit in ASAP.

        Erin, thanks for the tip! I have used lemon juice on apples but never heard of lime juice on avocados. avocado and lime make a great combo anyway so if it keeps them green too its a win win! 🙂

    Yogurt is one of my protein staples too. It keeps me full for hours (especially when paired with a fiber-packed salad like that one…major yum!)

    Hi Kath!

    I love your blog and I’ve also been reading Jenna’s (Eat, Live Run). You guys always find such amazing products (cocoa nibs, coconut butter, stuff I can’t find at just a regular TJ’s). Jenna just did a fundraiser for a bike. I was wondering if you’ve ever done one with a gift basket. You know, everyone who wants to win donates $5-10 for a charity of your choice ( like Feeding America) and then whoever wins gets a great basket of your favorite stuff. Just a thought!

    Do you find that the sandwich combo or salad combo keeps you more full? I just started an 8-5 corporate job, and am trying to find a combo that keeps me full & energized but not stuffed 🙂

      Hard to put one on top of the other – that’s why I alternate each day. I think they’re pretty much equal, but when I have salad I have to have yogurt with it. Or a sandwich. Salad alone doesn’t work.

    Hi Kath,
    The bread in your posts always looks SO good! I am really trying to eat less processed food, and it really hard for me to get fresh bread in my small town (unfortunately we do not have a Great Harvest!). Do you or Matt have any advice for me–are there any bread makers that actually make good sandwich bread? are there any REALLY easy bread recipes (although I don’t have all that much time to bake), or is there a really good bread cookbook you recommend? Even the “fresh” bread at my local publix has a list of a million ingredients in it (they actually get it frozen and then “bake it fresh” at the store). I just want fresh bread that has a few quality ingredients in it!

      OH gosh, tough question at 11:22PM!! Matt has some good bread tutorials on my Recipe page (at the bottom). Does your town have a farmer’s market? That’s the first place I’d look for homemade bread… and a bread machine isn’t totally out of the question..

    Have you tried “Old Speckled Hen” beer…or has Matt?

    I always thought avocado got brown almost straightaway! But I guess becuase I never eat the stuff, I don’t know 😛 I’d definitely eat your yogurt and granola though!

    To stop your avocado not going brown – don’t remove the stone (but that will only keep one half green!!) – otherwise, bit of lemon/lime helps.
