Under The Weather

The weather has sure showed me who’s boss lately – I’m feeling a little under it!

Not sick, under the weather, just a bit blah and tired – from lack of sleep.

The interviews went great this morning, but boy was it fast-paced to do 6 in a row like that! Lots of great candidates!

When I was finished, the sun had come out, so I decided to go outdoors for a breather. I didn’t have the energy for a run, so I just walked. Took my audiobook (Water For Elephants) with me. It was a lovely walk!!

Home for a late lunch –

CHEESE ‘n’ JAM!!!!!!!!! My favorite sandwich ever. I don’t like it melted or grilled cheese style. Just nice and chewy! The sharper the cheddar, the better!

Salad with romaine and a big carrot, dressed in olive oil, balsamic and lavender salt and topped with brown rice crispies, walnuts and avocado. All amazing toppings!!

I’ve got a few more calls to make for the biz. I’m kind of scared we’re going to use up our cell phone minutes this month!!!

You know what I love: cleaning up the kitchen after lunch and knowing it’s the last time I’ll do it today. We’re going out to dinner!!

Two nights of great quick healthy homemade dinners = one night off.

    Wow, I didn’t realise you had so many people to interview!
    Walnuts + avocado = awesome. I hardly ever have avocados in stock, but last time I did, I had that same mix. To die for!

    ohh phone interviews, I hope you were able to get a good sense of the applicants over the phone I know that can be hard.

    Sorry you’re feeling blah I definitely had that for a few days last week. I think the jam and cheddar sandwich, walk, and dinner out should get you right as rain! 🙂

    Enjoy your night out to dinner and hope you’re feeling better by then. I agree, rushing around, lack of sleep, it all takes its toll.

    I used to love cheese and jam sammies when I was a kid. I also used to put syrup on my eggs growing up. lol

    You should Skype your interview candidates! No phone bills, plus you get to see what they look like

        You can also call them from your skype to their phone. Its just like a normal phone conversation. No video chatting! My parents do it occasionally to me and the only difference is that their phone number shows up as 0000123456!

          I just remembered why I don’t Skype: my desktop doesn’t have a mic! But my laptop does..

            You can get ear phone for Skype that have a mic in them. We are stationed on Okinawa and used them at the USO when we first got here and didn’t have a house yet! Skype is super easy…our whole family loves it…even both grandmas!!

    BOO for feeling under the weather, hope you feel better soon.

    I’m a huge fan of making a huge meal and splitting it up for lunch and dinner so I don’t have to worry about the kitchen later. Cleaning the kitchen is a major thumbs down.

    I think I’m taking a night off from cooking as well, T just doesn’t know he will be running out to Chipotle for take-out, yet. 😉
    I have some outside work that I need to tackle in and around my gardens when I get home from work (at 6:30pm). I won’t much feel like cooking after that, tonight!

    I love cheese ‘n jam sandwiches, too! Sharp is the ONLY way to go.

    I don’t eat cheese anymore, but that combo sounds mighty good. I used to like mozzarella cheese and cranberry dressing (the kind leftover from Thanksgiving or Xmas meals) sandwiches waaayyyy back when.

    Brown rice krispies on a salad–genius idea! Especially for those of us unable to eat wheat/croutons and desperately miss a little extra crunch. I’m going to try it for lunch today!

    Cheese + jam = awesome. And yes, the sharper the cheddar, the better!!! I was thinking that parmesan and fruit spread would taste amazing, too.

    I’ve never had a cheese and jam sandwich – I’ve never thought of it. And I am so excited to try it – I bet that it is better with sharper cheddar. And on a wonderful, nutty bread… Yum!

    Feel better Kath. I understand what you mean by feeling “under the weather.” We’ve had record rains here (in the Pacific Northwest) and everyone seems to be just a little (or a lot) blah lately.

    Hmmmm…I ‘m on a major sandwich kick right now and I happen to be out of PB but do have jelly and cheddar. I am going to try strange sandwich idea! Question: what kind of jam? It looks like raspberry?

    Random, unsolicited sandwich suggestion: Rosemary + cheddar is the best flavor combo ever and I’m obsessed with working it into sandwiches. My fav is smoked turkey breast, cheddar, apple slices and rosemary. Use toasted Ezekial Bread, of course, and drizzle it with olive oil. Amazing!

    I am SO jealous of your ability to just hop on your bike or walk to downtown for dinner with your hubby! I’m miles away from ANYTHING, it’d be a complete marathon for me if I wanted to do anything like that 🙁 Aka goal in life is to live somewhere like Charlottesville!

    How bad was your rain last night? It was so bad up here in Central NY that it clogged up the highways and literally FLOODED them OVER the cars!!

    Kath-

    I need to try that cheese and jam sandwich-it always looks intriguing! Have you ever tried an egg and peanut butter sandwich? Spread peanut butter on one or two sides, and then make an egg-like patty (whisk the eggs and then pour into a pan), almost like an omelet, but smaller to fit the bread. I’m not sure if it would work with a runny-style egg?! The peanut butter gets all warm and runny when you add the hot egg….Yum! I definitely encourage you to try it 🙂

    This is my kind of lunch! A sandwich and a salad – perfection. And what a salad, it is overflowing with deliciousness. But I’ve never tried a jam and cheese sandwich, looks good, though!

    mmmmm brown rice krispies on a salad, I must try this tonight. I read this as I was eating my salad with craisins and raisins….I love to say that!! But some would have been over the top if it was topped with the brown rice krispies-thanks for the idea
