Twas A Dark And Stormy Lunch

Excellent Pump Challenge class today! It went by fast, and it was packed. All of my friends were there! I still haven’t been able to get Matt to shift his Monday errand-running schedule to come with me, but someday soon!

I was hungry for lunch earlier than normal today and raced through my shower so I could EAT!

I made a burrito out of leftover black beans, cheese and some sun-dried tomato pesto Karen brought over.

Plus a romaine salad. It started as a pile of romaine, which made me think of a creamy dressing. I brought out the first-trimester Caesar as well as some honey-roasted sunflower seeds Hillary made. The Caesar was good at first, but I’m so over it now.

A sweet pear for dessert, plus a bite of dark chocolate to get the Caesar out of my mouth!

Can you tell how cloudy/shadowy it is here today? I walked to the gym and back with my raincoat on and umbrella in my pocket, and I was really lucky there was no downpour either way.

    It’s such a gloomy day weather wise today. Such a change from the beautiful sunny weekend! I hope we see the sun again soon. Your lunch looks yummy. 🙂 I too thought your cheese was a sweet potato!

    I swear, we must have opposite weather forecasts on a regular basis because it’s gorgeous and sunny here today! Good call on the palate-cleansing pear. I always have to brush my teeth after a Caesar to get the garlic taste out!

    What kind of block cheese do you use? I notice your sandwiches have “real” cheese and not the sliced processed kind, even though they make good grilled cheese.

      From Karen: No recipe. Just a jar of sundried tomatoes in oil, walnuts, grated parmesan cheese, small handful of basil. All blended in food processor.

    we made homemade Caesar dressing last week and it came out SO good, but it sure is easy to overdose on. By the way, I went for a 6-mile walk with some girlfriends yesterday around the Charles River here in Boston/Cambridge. I thought of you a lot given how much you walk. I hadn’t walked that far/fast in such a long time. It felt great, but man, my hip flexors are talking to me today! It’s going to be gloomy up here allll week :-/

    I went to my first power hot yoga yesterday. I thought of you and your excellent body pump habit when I was thinking about giving up. I’m crazy sore today, but it feels so good! Thanks for being the voice in the back of my head during exercise!

    I go in and out of phases of liking Caesar salad too. You definitely need to be in the mood for it.

    Leftover black beans make the best quick meals. I make quesadillas with mine…just cheese and chunky salsa…so easy, so filling and so tasty!

    I am not a huge fan of salad dressings. I like bleu cheese salad dressing, but do not eat it now that I am pregnant. I have been eating vinegar and oil on my salads.
