Howdy from the porch!! I can’t help but be a little weather obsessed. I mean, I used to have a weather radio in my bedroom in high school, and I gave some serious thought to becoming an meteorologist. It’s in my bones. Today and tomorrow look fabulous, but there is sub-60* weather and rain in the 10-day forecast. Soak it up while you can folks!

I went to Pump this morning and was excited to see lots of my friends – all moms or moms-to-be! Lynsie was there with her little guy and did her first post-baby Pump class! It’s funny how our roles have reversed. Soon I’ll be the one pulling that bar up over my bump and she’ll be lying on her stomach!

For some sunny reason, I couldn’t WAIT to have a scrambled egg sandwich when I got home!

Topped with smashed avocado, sharp cheddar and jalapenos plus 2 scrambled eggs on Cville Crunch bread.

I thought I was being smart putting this on bread instead of in a wrap since the contents of wraps often fall out the bottom, but the bread fell apart on me in seconds! A fork had to be retrieved. Still super delicious! I love this method of scrambled eggs where I just drop the eggs into the skillet and stir so the yolks and whiles are marbled throughout instead of all yellow and emulsified.

On the side – a juicy pink grapefruit!! I actually decided to eat it with a spoon today, which I rarely do. Cutting the segments out takes just seconds longer than peeling or slicing but I still rarely do this method. It was nice not to get any of the bitter pith and 100% sweet grapefruit segments and juice!

About once a quarter I get this tendonitis-like pain in my thumb, which I think comes from too much typing. I’m going to spend the next hour doing anything BUT typing, but am actually doing a blog consulting project with a new acquaintance this afternoon, so the computer cannot be avoided!

PS: baby is kicking this laptop off my lap!!

    It is sunny and almost 90 in NY today, to bad I can’t go out and enjoy the weather!!! Thats funny how the baby is kicking you 🙂 he probably enjoys the cheese as well 🙂

    Just wondering- have you had to modify the ab track(s) at all lately? I’ve heard various opinions about that.

      Yeah, I barely do any abs. I usually try to hold a plank for a minute (or less 😉 ) and a few side planks and occasionally do some light crunches, but I don’t do nearly as much as everyone else is doing. I did some leg raises and stretches today.

    That sandwich looks divine! I have a similar method too for scrambled eggs so there’s one less bowl to clean up. My boyfriend actually prefers it!

    I love grapefruit! They are so refreshing but such a pain to eat. That is why I rarely eat them and when I do, it’s a treat! 🙂

    The sandwich looks FABULOUS!! I am going to have to try that….you do your eggs the same way I do mine. I like to taste the yolk…not have it all mushed in with the rest of it.

    Ever since you put the egg and jalapeno combo up a few weeks ago, I have been obsessed with it. Eggs, cheddar, jalapenos, and hot sauce is my new favorite quick meal!

    I went to Pump today too for the first time! I loved it, and it was definitely more of a cardio workout than I was expecting w/ all of the reps. You mentioned to me that your pregnancy workouts are the same as before baby but walking instead of running, but I actually don’t know what your weekly workout schedule was before. What did you do before baby? (I’m trying to make one for myself, which is why I’m wondering.) Thanks!!

      I generally do Pump 2x a week, cycle class 1x a week, and 4 days of outdoor walking/running and/or yoga. Rest days occur when I’m really busy or too sore.

    Oh my that eggwich looks goooood! I grew up eating half a gratefruit every morning. When we were younger my mom would let us sprinkle a little sugar on top to mask the tartness…now the tartness is my favourite part! When I married and moved into our new home, I managed to convince my mom to let me have two of the gratefruit spoons at my house for when she comes to visit so we can continue the trend! I end up eating the entire contents of the gratefruit…pith and all! Yummy!

    I was glued to our local weather guys this weekend. Over 100 tornado sightings in Kansas. A couple were headed right for Topeka but changed course or dissipated before they got to us. I was quite thankful for that. We ended up with heavy rain and straight line winds. Even the softball sized hail missed us. I like watching weather too but not so much when it’s out to kill me.

    I love your egg sammie; it looks so good. I love spice and I have never thought of adding jalapenos to that dish. Will have to try! I’m so jealous of your porch, btw.

    Are those just sliced raw fresh jalapenos? I must be a sissy, because I was thinking they look kind of overwhelming. Or, actually, I think I just like mine more integrated into a dish. I usually saute some onions and bell peppers before breaking the eggs into the pan and mixing it all together, so maybe I’ll try adding some jalapenos that way. I love scramfried eggs!

    Love, love, love egg sandwiches…for me, it’s fried egg sandwich and then get the soft yolk involved. Messy, but fantastic. BTW, I’m coming to the Durham, NC area next week and was wondering if you have any “must sees” for that neck of the woods? Would love any suggestions you have.     I never eat a grapefruit with a spoon, because I like cutting it into fours and peeling off the skin, or eating it off the skin. Plus, I do not have a spoon with teeth like you do.

    I like that idea of making scrambled eggs- I rather have a few bites of plenty yolk than a whole batch of barely yolk-tasting eggs if that makes sense!

    Well I couldn’t figure out what I wanted for lunch. Low carb turkery burger or ramen noodles. Turkey burger with a fried egg does sound delicous.

    I’m going to try to get my friend to stop in C’ville Friday on the way to Blacksburg for the Spring Game. Yeah who am I fooling. She won’t stop at exit 118B except for football against UVA or 118B is on 81. Oh well mommy and me ROAD TRIP!
