Too Much Of A Good Thing

I got a little spoon heavy with the pumpkin this morning in my Kodiak cakes – I think the amount of pumpkin exceeded the amount of pancake mix! They definitely did not turn out as good. Too mushy and not enough doughiness!

But of course there was absolutely nothing that wasn’t delicious about this breakfast! Topped with a tiny bit of pumpkin spread, sunflower butter, coconut, chia seeds and a pan-seared banana.

Mug shot!! We had some mugs custom made by local potter John of Acorn Pottery. They are so pretty with their two tones! I smuggled one home from the bakery 🙂

Also got 9 hours of sleep last night. Now I’m feeling weird! Too much, too little – just give me 8 and I’m happy.

    I think the Great Harvest mugs look great! I’m excited to get a full 8 hours of sleep each night this weekend. That’s the ideal amount for me too!

    I’m making pumpkin pancakes as we speak!! Only using GH Cville mix as a base 🙂 I CANNOT WAIT to eat them!

    Also? I adore that GH mug.

    That’s Sunday only length-sleep for me. I hover around 5/6 hrs Mon – Sat.

    Pumpkin pancakes look tasty. I have a half used can of pumpkin that I need to use up. Wow, 9 hours of sleep sounds great. Ideally, I would get 8.5 hours, but I rarely have enough time to do that.

    Question: when you pan sear your banana do you add anything? Cooking spray, butter, coconut oil, sugar, etc? I usually top my oatmeal with raw banana bits but now that its gettin cooler I’d love a little warm banana action 🙂

    Pancakes aren’t high on my list of breakfast foods (I prefer savory breakfast, yep…one of those people) but those do look good! I’ll definitely have to make some and have friends over for brunch 🙂

    I also was heavy handed with the pumpkin in my overnight oats last night…who knew it was even possible to have too much? Nut butters certainly help tho 🙂

    i’ve made this mistake with pumpkin before! it’s a delicate balance and a fine line between the perfect doughiness and a pile of mush. always tastes good, though!!

    I just ordered Kodiak cakes for the first time…and…..I’m SO impressed! I’m definitely a “everything-from-scratch” kind of girl…but after hearing you talk so much about these, I had to give them a whirl. Can’t beat the just-add-water when you’re pressed for time!
    So Kodiaks and homemade sausage were our supper last night..with plenty of local maple syrup 😉
    SO delicious.
    I am curious…how much pumpkin do you generally add to the mix? (per one cup Kodiak)

    I’m pretty sure even mushy pumpkin pancakes are still totally yummy. Am I weird that I actually like them when they mush more and aren’t cooked all the way through? Especially when they’re topped with crunchy stuff like nuts and chia seeds. The idea to eat them alongside caramelized bananas kinda blows my mind. I think I know what I’ll be making for breakfast this morning. Thanks for the idea Kath!

    LOVE the tablecloth. So pretty! Also love the presentation of your breakfast; you’re good at food styling.

    Do your breakfasts ever get cold when you take them out to photograph? I made pan seared bananas last weekend and I felt like they got cold by the time I got down to the table to eat them (and that was all indoors).

    I’m the same with sleep! Too much and im knackered – too little and i crash and burn…. its a very sensitive timetable! im super jealous of all your pumpkin goodiness!! Too much!? No way! Somebody needs to inform Uk supermarkets just how amazing pumpkin really is!!

    Ahah, at first I thought you were just eating straight pumpkin puree for breakfast from those pictures! It’s hard to imagine “too much” pumpkin, but I guess it’s like you said–you can definitely have too much of a good thing!
