Time Vacuum

It’s one of those days where time gets sucked into a vacuum of space. Where did it go!?

I worked on my computer all morning until I left for the gym around 11. It was a typical day: bike there, 35 minutes Squirrelliptical, weights, bike home.

Just in time to fill my grumbling stomach with salad. What is that black shadow!!? Could it be the vacuum of time!?!

The mix:

  • Mixed greens tossed in lemon juice, olive oil, kosher salt and honey.
  • Red pepper, grilled corn off the cob, carrot
  • 2 slivers of leftover trout
  • 1/4 an avocado
  • Toss of salty peanuts

    What a great lunch!
    Today is going by pretty quickly but I wish it was going as fast as yours, although I only have 3 more hours of work left, that sounds pretty good right now.

    My new favorite salad is mixed greens & baby spinach with walnuts and strawberries (add in anything else you’d like) with a cole slaw dressing (Vegenaise, soy milk, white wine vinegar, tiny squirt of agave nectar (or a bit of sugar), celery seed or celery salt (or both) and pepper). Yum!!

    Great looking lunch! I like making salads because you can add all kinds of ingredients for a variety of tastes and flavors. Today I added roasted broc, hummus, and homemade pita chips to my usual veggies. Yum! I’m about to dig in…

    Kath, I meant to tell you earlier in your post that you mentioned your trip to C-ville, one of the yoga studios on the downtown historic mall has a laughing yoga class on Saturday afternoons. Might be a fun thing to pop into if you have time!

    Perrier is the greatest tasting sparkling water out there!! I LOVE it!! Definitely go out and buy some asap!! 🙂

    I totally agree that these summer days just seem to fly by!!! At least you’re being productive while getting in some good exercise!

    I would have never have thought to put the salted peanuts on a salad. It looks delicious. I love pecans on a salad so I don’t know why I’m so surprised.

    Stephanie — I think Kath’s site is based off a certain WordPress theme that people can customize to their needs. So I think that’s where the similarity comes in. 🙂

    The peanuts in the salad look SO delicious! Especially with the avocado… yum.

    Your salad looks yum– especially the peanut addition.

    Salads for lunch have made me sad lately. Since it’s all veggies, I throw them all in, but then im SO FULL. But mentally, i’ve only eaten veggies so I’m snacking at 3pm just cuz.

    I’ve had a sandwich yesterday and today and it feels better both in my belly and mentally!

    Am i crazy?

    My mom’s camera takes pictures like that sometimes when the slide covering the lens doesn’t open all the way. Don’t know if that’s the case with yours, but that’s what it reminded me of!

    Kath, this salad looks delicious. So simple, yet so fulfilling. I love making salads too – and for some reason, it’s nicer during the summertime – maybe it’s the abundance of vegetables we can choose from!
