Plant Invasion

Morning! I set my alarm and got up at 6:30 with the cicadas screeching and sun rising. Love it!

Came down to a lovely bowl of overnight oats –

Stirred together last night:

  • 1/2 cup oats
  • 1/2 cup soy milk
  • 1/3 cup TJ’s Euro yogurt
  • Pinch kosher salt

Added this AM:

  • 1/2 pint raspberries
  • 1 tbsp flax
  • Spoonful Chocolate Vanilla Almond Butter 
  • Few crushed cranberry pecans

Our jasmine plant, which Matt grew from a seed, is finally reaching the top of the arbor!!

I’m working from home today (whoo hoo!). The plans for me to join Mary at the wellness center where she works feel through due to privacy (bummer!!), so I’ll probably be working from home most Wednesdays. Might add in some Mondays for trade offs.

    I am super excited about the summit and I want to go so badly because reading the blogs has really made me feel like there ARE people out there that i can relate to and do take health and fitness seriously and I would love to actually meet my “blog friends” in real life!

    I would loveee to attend the conference! I currently live in Boston, so I can definitely make it. Reading all of these blogs makes my mornings and evenings SO much better as I look for motivation to make healthier life decisions like sticking to fresh produce, adding variety to my diet, staying positive :), and getting excited about exercising, woo!     Hi, Kath!

    Your site has become a morning ritual for me…check e-mail, check facebook, check kerf.com, all while eating oats, of course!

    But I have been wondering a few things…

    1) This may sound silly, but when you make oats with cottage cheese, how exactly do you go about doing that? When do you add them in? I guess it would be redundant for cottage cheese to curdle when it hits the hot oats, but I’d really love to try it (I LOVE cottage cheese) and don’t know how!

    2) About your “green” oats…I don’t have a hand mixer, so would a regular blender work okay?

    You already know I’m crazy pumped for the summit!
    It suddenly occurred to me that I might not have computer access at 8 pm tomorrow… and now I’m getting stressed out… hmmm hmmmm. So hopefully one of my 6 entries is successful!

    I’m going to be stuck on a plane when registration opens tomorrow so I fear this may be my only chance to get a ticket. I’ve been reading all these wonderful food blogs for quite a while and can say that they have definitely helped me try new things and new combinations. And when I struggle with food issues (as I have been recently) they are an inspiration and remind what I “should” be doing. Hopefully with so many bloggers attending, even those that can’t get tickets will get some of the great information and discussions.

    That jasmine plant is pretty awesome! The only thing in my garden that has ever grown like that was a weed… 🙁 I swear it was trying to come after us (it used to reach across the top of the very steep front stairs and firmly grow around the hand rail; making it incredibly easy to trip over.)     I stir the cottage cheese in at the end of cooking and let it set for a minute.

    And a regular blender should work fine for green oats. Or a food processor.
