Time For Lunch!

Hi 🙂

This cold is still looming over my shoulder, but I feel much better after this fantastic lunch!!

Lunch today totally rocked. This sandwich was amazing! The hint of Cinnamon Vanilla Sunflower Butter was just enough to taste over the jam and tempeh. Yum! And these tangelos are the best ever. Even my raw veggies tasted good – I think my body is craving them!

On the menu….

A slice of raw tempeh with Crofter’s Superfruit spread and a thin layer of Cinnamon Vanilla Sunflower Butter 🙂

I try to get veggies into my lunch box even if that means just throwing ’em in plain or putting a few leaves of spinach on a sandwich.

It doesn’t look like a huge lunch, but that is a pretty heavy + calorie dense sandwich over there coming close to 400 calories! Appropriately filling though 😉

    Oooh I so want to try tempeh! I googled it after your last post and it sounds so tasty 😀
    I love how ‘normal’ your carrot looks – ie, that it was picked from the ground and so is REGULAR size as opposed to all these crazy baby carrots I keep seeing! The latter look TOO perfect IMHO :p

    I just had a similar tempeh sandwich last night, except with hummus. It was also pretty calorie dense, yet extremely filling!!!

    Lately I’m completely obsessed with the cashew butter + mega fruit preserves (earthfare) sandwiches. I use homemade pita bread made with white whole wheat flour and they are divine! The adult PB&J!

    Tempeh’s high in protein, right? So that’s an amazingly well-rounded lunch! And your job is fantastic- it must be so rewarding to work in a setting that’s proactive about helping people!

    how is the vanilla-cinnamon flavoring? Does it give it a sweet, dessert like taste? Sounds very intruiging!

    I just bought some tempeh over the weekend and have never tried it before. Do you think I should try it raw first or ease myself in by cooking it the first few times I eat it? I don’t know what tempeh really tastes like but the other flavors in your sandwich sound wonderful.

      It really tastes the same raw vs. cooked to me. Perhaps because I don’t marinate it and everything to cook it. I just like the chewy texture and find the taste to be very neutral. Just take a bite and if you hate it raw put some kind of strong sauce on it!

    I LOVE tempeh! I use it for all kinds of things, salads, stir fries…I even put it in a bowl of savory oats with spinach, miso and an egg this morning!

    I LOVE tempeh!

    Everything I have read about tempeh suggest that it NEEDS to be steamed or cooked for 20 minutes before eating…

    Do you have a link to some information that explains otherwise? Thanks!

      I emailed the company last year to confirm and got an email saying yes, indeed, it can be eaten raw.

    Last night I got a tangelo and a blood orange from WF to compare…the tangelo DEF won, although I wish it were less seedy.

    GUYS: We have had a gross rainy day here in Charlotte and I ate at my desk!!!!! These photos were taken yesterday when I packed my lunch to get some good photography. I WISH I was eating in the sunshine!!

    TEMPEH: Tastes very neutral so don’t be scared. It’s kind of like old bread would taste – but in a good way. If you put peanut butter on it it will taste like peanut butter!! Give it a try. You have nothing to lose!

    The sammich looks pretty good. I was wondering though, is your Flax Oat Bran bread 100% whole grain? And if so, is it still soft or a bit dry? Just going from experience it’s kind of hard to find a completely whole grain bread that still has a nice sandwich texture. I find Ezekiel to make good toast but kind of on the dry side for sandwiches.

    Nature’s Pride does have a good and very soft 100% whole wheat bread but by the sounds of it, something like Great Harvest only has 5 ingredients or so and I’d prefer as few ingredients as possible!

      It is not dry AT ALL!! So so moist – the best part about it. Chewy and doughy and moist. You must find a GH! And yes, most of their breads are 100% whole grain.

I would have never thought of that combo. mmmm Speaking of strange combos I tried out the LIME chocolate chip cookies from mama pea’s blog! I think the altitude messed with the recipe a bit…but the taste was weird yet somehow satisfying haha

    I really have to give tempeh another try! I had it once over a salad and wasn’t a huge fan of it, but maybe I’ll try your way – with some nut butter and jam. 🙂

    I try to get my veggies at dinner most of the time, or I make a Green Monster for breakfast, OR I’ll bring chopped up veggies with hummus for lunch. It’s usually only a once-a-day thing, though.
