Thumbs Up

All orange but no pumpkin to be found!

I ran around all morning working on some personal things and arrived back home just in time for lunch.

My coffee at the bakery and a piping hot slice of Cville Crunch bread were both delicious mid-morning snacks!!

Lunch featured leftover squash (I nibbled around the skins) and leftover tomatoey chickpeas on top of a salad with carrots and parmesan cheese.

That lunch was way too savory, so I ended up munching on something sweet – a pile of Cville Cluster topped with the last bit of Pumpkin Cream Cheese Spread and Biscoff! Heaven in a bowl, let me tell you.

Since I also have this bowl in the 3-cup size as well, a thumbs up to document that it was my mini version and also unbelievably delicious! Must find more purposes for that pumpkin spread!

Feeling so tired today…contemplating a mini nap before I head back to work. It will make me more productive, right!?

    Looks like you’ll be turning orange in no time! My teammates last night were making fun of my orange tinted hands.. its never happened to me before but I’m not ashamed ahha!

    You are SOOOO creative kath ! Matt must never be bored of supper like most husbands ! Your always trying new things nothing is ever the same even the oats are always switched up , i love it ! You motivate me to keep trying new things and I usually love it 😀

    Pumpkin Cream Cheese spread? Yes, please! And my vote is a yes on the nap – if mini-naps work for you, that is. I love naps but only if I get at LEAST two solid hours. If not, I spend the whole nap hour wondering when my alarm will go off and getting grumpier and grumpier about the fact that I’m not asleep.

    By the way, I LOVE that you take photos of your food on the floor of your porch. I do the same exact thing. That’s normal, right?

    I actually found that Biscoff spread in a vegan supermarket in Berlin, though it has a different name. I was eager to try it, but I had bought way too much stuff. Next time 😉

    Granola is so good. I don’t think I could handle having it on hand all the time. Love the combo of the peanut butter with it. Yummy dessert.

    My yoga instructor commented that I look more tan today than usual, and I told her I think it’s because of all the SQUASH I’ve been eating!!! Lol…you might turn orange soon too 🙂

    Looks good! Sometimes I have the same thing, a super savory meal is good but I crave the sweet after. Just ate two small dark chocolate squares for the same reason! 🙂 I have a question for you – I’ve had ‘coconut oil’ on my shopping list for a while after I saw it mentioned here and I’ve never had it before. Do you buy refined or unrefined? Headed to Trader Joe’s tomorrow. Thanks!

      I honestly don’t know the difference…I’d maybe go with unrefined because it might be closer to coconut butter in thickness?

      Unrefined and virgin, most definitely. Many of the nutrients are lost in the refining process and, depending on the brand, sometimes crazy chemicals are used. Unrefined also tastes stronger and richer and I don’t know about you but I like my fats to taste. 🙂 The only drawback is that refined has a lower smoking point but it’s still higher than olive oil. I’ve never had a problem with it smoking and I use it for everything from frying eggs to roasting sweet potatoes.

    oh my goodness, all I can think when i see your lunch and all those colors is how full of antioxidants it must be. Looks so delish and best of all, nutritious. I’m a savory girl so that is right up my alley!

    Well doesn’t this look good?? Yum!! Do you ever think of eating the skin of your squash? I always do but know some people don’t. I’ve never had any negative side effects and think it’s probably extra fiber or something? Just wondering your thoughts on this 🙂

    you could spread it on anything! toast, pancakes, rice cakes, english muffins… oh my, the possibilities are endless! what about as an oatmeal topper, mixed in with cereal + milk. yum!

    Affirmative on the nap. I had one yesterday afternoon and it powered me through an 8 mile run and grad work, I don’t think I would have been as productive without it!

    Hi Kath! I have an R.D. question for you…I am battling the newlywed weight gain, so I started reading some weight loss/nutritional articles. I know you are a caffeine craver and cycle in and out of decaf, so I was wondering why caffeine is not recommended when you are watching your waistline BUT caffeine is found in all the diet aids/pills? hmmmmm…..

      Hey Heather,
      I’m not sure why you think caffeine isn’t recommend for weight loss times? I’ve never heard that before. Caffeine around or under 200 mg per day is not only not bad for it, but it’s shown to be beneficial. I wouldn’t discourage it. The only reason I cut out coffee was because I get so addicted that I get bad headaches if I just have a little less one morning. This doesn’t happen to me with tea.

      You didn’t ask me..but here’s my 2 cents. Caffeine is in diet pills to speed up the heart (sounds healthy, right?) which burns calories. I’ve never heard of eliminating caffeiene to lose weight. You maybe heard something about it because sometimes people who take in a lot of coffee eat little food which translates to not enough calories which hinders wt loss.

      I think it has to do more with encouraging people to live a healthier lifestyle. A cup or two of coffee a day is fine for most people but more than than can have negative effects short or long-term. In general, drinking more herbal teas and water is healthier.

      Caffeine can also also the tummy and possibly cause constipation in some people. It ranges widely.

    I’m hoping you will soon have your Cville Cluster granola for sale through the internet. In the meantime, do you have a really good granola recipe that will hopefully tide me over? I’m aware that you can’t share your bakery’s recipe…darn it! LOL
