My mom is one of KERF’s biggest fans and as a writer, she is always sending me quotes "…for the blog!”

    You should try the tomato open faced melt with mozzarella and some basil pesto. Heavenly! One of my favorite meals when tomatoes are in season.

    I caught a clip of “The Talk” today (PVR) and the opening segment discussed issues related to that quote. Kris Jenner’s daughter received hate emails, etc. for modeling and ill comments. Kris summed it up perfectly when she said that it takes an angry, jealous and sick person to have the time and need to say things like this. So obviously people deal with other people’s ridiculous pettiness daily. Wish they’d grow up.

    I love open-face melts just like that. Sometimes I start with the bread under the broiler with dice of garlic & onion, so the bread gets a little crisp before the tomato juices run into it. Mmmm!

    I can’t wait to get into our house and find a toaster oven here in Italy. The voltage is different, so we gave away our kitchen appliances before we left.

    It’s just above 50 here so I switched the shorts for jeans and a jacket to walk to pick up my daughter up. I really needed that quote to make me smile today since I had to keep my son home from preschool and screen his poop because he decided to use his stomach for a piggy bank for a quarter! We had a fun day playing games but digging through poop and not even finding the quarter was not fun! Hope your day was a fun and happy one!

            Exactly!! Haha it just makes me laugh cuz of how much you hear “does this make me look fat?” But we’re running fiends and get our rear in gear by running the road raw instead of obsessing over if it’s “fat”.

    So sorry to hear of your mental anguish, Kath. If there’s one thing I know, it’s that Mom’s know best in these cases…her advice sounds right-on to me!

    Maybe a great yoga session or two would provide a welcome respite from your worries so that you can come back with a clearer mind?

    In any event, I hope you get a peaceful night’s sleep tonight.

    Hey Kath–
    Off topic question. A lot of people swear off carbs or eat bread in moderation for weight loss or to maintain a healthy weight. I’m trying to work on my “gut” issues and looking for changes I can make. Giving up my bread a pasta would make me sad, but I’d try to try it if I thought it’d help. You’re looking pretty good and enjoying your bread, too. What are your thoughts on the subject?

      I think it’s just portion control. It’s really easy to eat too many carbs – not so much with other types of food. I don’t think you need to give either of those up – just make sure you’re eating an appropriate amount for your activity level. Remember carbs = energy and without them our bodies have a really hard time functioning

    Pumpkin spice vinegar? YUM! That would probably be so good with some apples in a salad. Unless I’m thinking of the wrong “spice”.

      Hey Nicole,
      I toasted the bread in our new toaster oven, then added the tomato and cheddar and toasted another 3-4 minutes until the cheese was melty.

    First and formost that George Carlin quote made me crack up and the food made my mouth water! I’m a coach and one of my favorite quotes is by Dale Carnegie. It is, “Remember happiness doesn’t depend upon who you are or what you have; it depends solely on what you think.”
