Nice chilly morning for a skillet of hot cakes, dontchathink?

I hate relying on sleep aids, but Advil PM helped me sleep solidly last night. I’ve got so much on my mind – this too shall pass.

Kodiak cakes made with banana, flax, coconut and a sprinkle of sea salt <— such a great discovery!! I’ve also noticed that to make perfect Kodiak cakes, I let the batter sit for 5 minutes and let the leveners do their bubble thing. It gets almost spongy and when you put it in the skillet, the ‘cakes are much easier to spread and flip.

One pancake was smothered in a little Biscoff, the other in a little sunflower butter. It was really a tie to figure out which was more delicious.

Birthday Tea that I made with my new kettle!! Loved it! Although, I over steeped this cup and it was way too tannic – felt like I was drinking a nice Cabernet!

My body feels much recovered from the move – might get some exercise in today!

      yeah pancakes are everywhere but no one makes them look prettier than kath. my breakfasts look like a tornado went through my kitchen and threw everything on a plate.

    Yum! I made ‘stuffed’ french toast with the GH Cinnamon chip for breakfast this morning! Cut out a ‘pocket’ in a thick slice and slid in bananas. YUMMMO!

    It IS chilly in Cville this morning! My fingers were numb when I got back from my run.
    Do you sprinkle the sea salt on top of the cakes? Or in the batter? On top sounds fabulous – I’m going to make pancakes tomorrow and try it!

    I’ll have to try nut butter on a pancake. I’ve eaten nut butter and banana on a waffle like that & put another waffle on top eating it like a sandwich. Have a great day.

    I love the toppings on your pancakes. I would never have thought to top mine with coconut and bananas. I typically use almond butter. I’ll have to get some sunbutter at Trader Joes on my next shopping trip.

    The pancakes look delicious — I went with a cold smoothie this morning which made me extra cold, but the hot coffee warmed me back up.

    I take Advil PM or Melatonin to help me sleep once in a while — if I take it too often I start to have really bizarre dreams.

    Your pancakes always look amazing. Glad you got some good sleep in, I start getting anxious (which only adds fuel to the fire) if I can’t sleep for extended periods of time.

    Pancakes sound soooo good right now! I love adding a bit of salt to sweeter dishes – it really brings out the flavor. I also sprinkle a bit in my coffee with some cinnamon pre-brew.

    Don’t sweat the sleep aids – there was a period where I was occasionally taking Nyquil to sleep, and when I discussed the problem with my doctor he told me that 2-3 nights of inducing it with a nighttime medicine isn’t really a problem but that I shouldn’t stretch it longer than that.

    A down comforter ensures amazing sleep. I love them! My fiance gets too hot underneath it and so we can’t put it on our bed. 🙁 I just need to get a lighter one. Nothing spells comfort like a down comforter!

    Love hotcakes–they make me smile 🙂 I need to make them more often. I just make your typical eggs about once or twice a week, and eat oatmeal or cereal on the other days.

    Kath – I know how it gets sometimes with your mind racing and you just want to sleep. When that happens to me, I take Nature’s Bounty “Valerian Root 450 mg”. It might smell like stinky feet but it really works and I feel 100% rested in the morning. Just plug your nose when you swallow the pill.

    I just had Kodiak hotcakes for breakfast too! I put in mashed banana, some muesli, coconut extract, a dash of cinnamon and TJs Peanut butter on the batter as it was cooking on my skillet. I made a peanut butter swirl before turning it on the other side! Its sooo good! You get a surprise of PB as you are eating the hotcakes!

    my dad has been making pancakes every Sunday morning since I can remember (although my little brother is the only one left there to eat them…) and he always lets the batter sit for a bit before he starts making the pancakes!

    I had trouble sleeping last night too! Woke up at 3am and could not get back to sleep for the life of me. Must be something in the water (or in the Chai I drank at 7pm…maybe not the greatest life choice…)

      They are made with the Kodiak cakes mix – just add water. You can find it online (at their website, OpenSky) and in some stores sometimes

            The online reseller Redwood Bay used to distribute that brand in the UK, but they just recently closed 🙁

    Pancakes are one of my favorite breakfasts, especially smothered in almond or peanut butter and drizzled with syrup. I add the banana slices to my pancakes so they get all marshmallowy!

    Glad you’re feeling more recovered! I love when you feel ready to get back to exercise after feeling off – it’s the best feeling.

    And you just convinced me that I definitely need pancakes in my life ASAP. We just bought something called Speculoos which I’m hoping is very similar to your Biscoff spread!

    Yum! I’ve been making a lot of protein pancakes lately:)

    I have to rely on sleep aids every now and then too. My (holistic) doc actually gave me magnesium lactate (milk free..) for it.
    Any reason why you choose advil pm over, say, Simply Sleep or Ty. PM? or just what ya had on hand?

      If you’re not in pain, the cheaper, less toxic option is to just take diphenhydramine. That’s the active ingredient in benadryl and its cheap generics and it’s what puts the “PM” in all the (your pain reliever here) PM formulations. You can take as many as two or just take a nibble off the end if you want to avoid the dreaded hangover some people get from diphenhydramine. Why take medicine you don’t need?

        It’s what I had on hand. I only need to use it a few times a year, but if I were to do anything more regular, I would look for something without the added painkiller.

    Letting the batter sit and not over-mixing = fluffy-ness! I just baked some cookies with fleur de sel – adds so much more flavor than regular salt. -Greta

    I like the idea of sea salt on pancakes. I normally go for only sweet toppings so this would be a nice contrast. Glad to see your kettle is already getting use! I am so jealous of the color. It’s the same shade of green as my kitchen aid.

    I’ve taken Advil PM nights I couldn’t sleep too- it does wonders! I tried taking Nyquil but hateddd how I felt the next morning, gah! Benadryl also instantly knocks me out 😛

    I am so jealous of all the banana in your food lately!! I was diagnosed with a severe banana allergy last year and now have to avoid them… yet I miss their texture, and flavour! Sigh!

    Just had sardines for lunch—you inspired me! Pretty good! =)
    And we just had our house painted by Jeff Robinson here in Charlotte. Great Harvest came up and he said he had done some painting for you when you still lived here. Small world!

    Warm pancakes from heaven on a chilly morning = perfection. I am LOVING this cool weather up here in Boston… and NO humidity too!!!

    Do you find that you’re extra groggy in the AM after taking sleep aids??? I never wake up feeling refreshed after taking sleep aids like the ads always claim haha

    I always forget what a difference letting pancake batter sit makes… I am usually too hungry to remember!

    Enjoy the Fall air and I hope you can sneak in some exercise if you’re up for it! 😀

    you ever try melatonin? it works really well for me. those PM over the counter meds actually do the opposite to me after a few days and act like speed. it’s not fun.

    I have recently become infatuated with a particular lunch that was actually inspired by you. 1/2 cup grain (brown rice is my fave) + 1 tin sardines + 1 tbsp course brown mustard, all stirred up (sardines get mashed into pieces a la sardine salad) +/- bulking veggies (steamed). First time I have eaten warm sardines. I must say it looks worse than dog food, but it tastes awesome. Warm sardines taste less fishy to me. Thanks for making sardines more “mainstream!” Ha!

    Amen, this is only for a while and it will pass! 🙂 I hope your mind feels at peace now~hang in there Kath. And guess what! I loooooove the kodiak cakes!! I’ve commented before saying I’ve been wanting to try it for over a year, and I love how it’s great for a quick breakfast for when I’m in a hurry. The only thing is that I noticed it’s better if I shake the box before making ’em because it lets all the leaven mix thoroughly, which produces fluffier pancakes. Thanks for the rec!

    my sister wasnt sleeping well for a while and the doctor told her to drink powdered magnesium i think. we found it at whole foods in a container called “calm,” and apparently it really worked. hoping you are feeling better today!

    Tannic tea…I do that when I make tea..forget about it and then whoa…but I like it strong so I can deal.
