Sunny Side UP

I’m wrapping up the digital world here and then headed down to the bakery and to run some errands soon.

Went to Body Pump this morning. I was feeling a bit weak today and went lighter on the weights. I always feel stronger on Mondays than Fridays! I am LOVING my “commute” to the gym these days. 1 mile walk through downtown. I couldn’t ask for a better path to get from house to gym!

Lunch today was a big green salad with green pepper and carrot topped with leftover beans, 2 hidden plantains, an egg and some cheese

    I miss walking to the gym so much. Not only did it save on gas, but it was so fun walking through the ‘hood and people watching. That’s what I get for moving from city to suburbia!

    What a cute placemat – so picnicky! I love saving extra awesome bites for last. I can only imagine how great that plantain was. And every time I read your blog I get so envious of your walkable/bikeable life style. It is a major consideration for me as I consider where to job search!

    I went to Bodypump this morning too!! Mine was at 6:00 am. I felt a bit shaky too, actually, but I think it was a combination of being very early and my latest session was somewhat recent. Feels good though! 🙂

    I hate the taste of eggs. I know I’ve mentioned that in comments on here before. This morning I was browsing some old posts and kept coming across photos of different incarnations of French Toast. Now I want some French Toast. Interesting how that works. I think I can doctor the egg up enough so that it doesn’t taste too eggy and I’ll have to use a GF bread product. Multi-seed English muffins perhaps? We’ll see what happens over the weekend.

    I need to remember to try paprika next time I fry up an egg! I usually just season it with pepper, but it sounds like paprika is the way to go.

    I love cubed cheese on my salads! Nothing better than a big bite of cheese!!! I tried my first plantain last month and could not get past the fact that it looked and did not taste line a banana!

    My husband and I just enjoyed a beautiful downtown walk after lunch today. It was to walk off the margaritas and big plates of Mexican food. LOL. I do wish I had the downtown to walk everyday {like I used to}. I miss that.

    don’t you just love body pump? it’s my ultimate favorite gym class…I always feel so strong afterwards (and then really sore the next day lol)

    Is the smoked paprika a lot different from regular paprika?
