Spring Is Sprouting

Some days I look forward to going to the gym: a cozy, dark flow yoga class or a bright, airy relaxing session on an elliptical or a motivating BodyPump class.

Other days I’d want to be anywhere BUT the gym. Today was one of those! Most likely due to the beautiful sunny weather!

I’ve learned to do what feels right on the days that the feelings come. It keeps me happy!

Luckily Faith and I had already scheduled to meet for a walk today! We strolled around my neighborhood for about an hour – time flew!

Then I came back for an early lunch because I am going to the DENTIST! BOOO!

I think my stomach knew lunch had to be early because it growled just as I walked back in the door 😉

I put together a KILLER salad!!

Spinach and veggies with sprouts (!!), drizzled in honey, olive oil and lavender salt, plus grapefruit sections, amazing bleu cheese, and chopped date-stuffed pork tenderloin.

    I’m with you on doing the activity that “feels” right. If I’m forced to go to the gym only, I end up despising it.

      It’s super easy to make, just (food) process dried lavender and a coarse salt, like Celtic Grey sea salt and store in a little glass jar. I made it for Christmas gifts this year!

    I’m sure you’ve posted this, and I’ve somehow missed it… but where do you find the lavendar salt? I had a sanwich today with lots of spinach and thought.. wow, I bet that lavendar salt would be awesome on this.

    I have been making my own grain and bean sprouts lately! It is so much fun, and they are so crispy and fresh-tasting:) I’m lovin the sunshine up in my neck of the woods, even though it’s freezing!

    Hope your dental appointment went well. I feel your pain – I’m going next Monday… yikes! It’s finally warming up here in the Midwest and I’m getting anxious to get outside too. The snow is still around, but I finally saw a large patch of grass today – dead grass, but grass all the same!

    Any chance you could share a little about how you stuffed the tenderloin. Sounds like a great combo! Unlike Matt, I am not good at “freelance” work and need some sort of directionsQ

      Luckily i have it typed up already!

      Ingredients
      1 pork tenderloin
      ½ cup crumbled bleu cheese
      12-15 medjool dates, pitted and chopped
      Kosher salt and pepper to taste

      Instructions
      1. Preheat the oven to 425 degrees.
      2. Combine dates and bleu cheese together in a bowl, mixing thoroughly.
      3. To prepare the pork for stuffing, use a sharp, thin knife and gently drag the blade lengthwise down the tenderloin to butterfly the meat open like a book.
      4. Next perform the exact same procedure on each half of the tenderloin, effectively cutting the tenderloin into four sections.
      5. Once you’ve opened up the tenderloin, evenly spread the dates and bleu cheese on the inside, and then fold the tenderloin back to its original shape, which should now have a thick core of stuffing.
      6. While not necessary, it’s helpful to use butcher’s twine to tie a few loops around the tenderloin to tighten it into a firm log.
      7. Pat the tenderloin dry with a paper towel and then liberally sprinkle with salt and pepper.
      8. Roast for 35-45 minutes, until the internal temperature reaches 155 degrees.
      9. Allow at least 20-30 minutes of cooling before slicing.

    Do you use the forzen kale for kale chips to?! Because at my local grocery store they only sell it in a HUGE bag and it goes bad before I can ever make enough kale chips or smoothies!

    I’m such a carboholic. I made a delectable salad with some sardines in olive oil! I love getting canned fish now after reading this blog. I use the extra olive oil as “dressing” from the can. My coworkers don’t love my fish-eating habits, but I guess you can’t win ’em all.
