Speedy Gonzales

Ahhh packing has not yet begun!! I’ve had a really productive day though 🙂

After a conference call, laundry folding and some blog work I set out for the gym at 11:30. I biked there as fast as I could – what a better workout I got! I’ll have to put in a little more effort in the future! I did a fast 30 minutes on the Stairmaster (I say fast because again, I was energized and out of breath) and then 5 minutes of abs before racing home. Not sure why I felt like pushing myself so hard today. Perhaps the time crunch of my travels tomorrow.

My oatmeal in a jar did NOT hold me over nearly as long as yesterday’s smoothie in a bowl. Very interesting! I started to feel a little hungry just before my workout and was ready to eat as soon as I got home.

Luckily lunch was already prepared. I just had to heat it up!

Leftover quinoa, organic chicken tenders and grilled veggies, topped with sriratcha, squeezed lemon, capers and melted jalapeno cheese.

I do still feel a little bit on the empty side. You know, of all the meals I find dinner foods to be the least filling. Compared to oatmeal, yogurt, cereals + sandwiches, salads and tasting plates of breakfast and lunch.

We have a dinner meeting tonight, so my time to finish my list is shrinking until 5:45…

    pre-lunch workouts always leave me feeling a little rushed! especially when i try to go to the gym during my lunch hour. your lunch looks yummy 🙂

    for some reason i think breakfast foods are the least filling. but maybe i just don’t eat enough of them at a time.

    Lookin good Kath! My lunch ALWAYS fills me up the most. I’m often a smidge hungry late after dinner. It’s annoying. 😉

    What a delicious lunch! I think we tend to just go with tastes as opposed to filling foods when it comes to supper, so that might be why it never quite holds us over! Good luck on the to-list this afternoon.

    Yum – I’m a big fan of quinoa. Although, you’re right… sometimes, nothing hits the spot at lunch like a PB sandwich or something more simple…

    With dinner foods, because they’re denser, I don’t feel fullness as quickly as I do with yogurt/fruit/salad, etc. due to it’s high water content. Maybe that’s why we all crave a “dessert” after dinner!

    I love bowls with a lil’ of everything — yum! I find that a boiled red potato at the bottom of a bowl topped with beans, chicken and veggies and Greek yogurt is VERY filling.

    I’ve discovered the same thing with dinner food!! I can’t figure out why, other then that they don’t seem to be normally as “bulky” as lunch and breakfasts.

    Your lunch looks fantastic though! Jalapeno cheese sounds so interesting and tasty! 😀

    I just bought a small jar of capers – I have no idea what to do with them! They look quite good with that combo though.

    Suppers never fill me up either. I think it’s because I eat the bulk of my veggies at dinner. While temporarily filling, they’re not very long-lasting for me. That’s why I always have a substantial evening snack 🙂

    I kind of feel the same way about dinner foods!
    I always feel like a dinner plate is just as filling-but WAY less satisfying!

    Yum, while you said that’s just leftovers it looks fantastic! I agree about how sometimes dinner foods don’t fill you up, I think for me it’s because dinner is usually when I tend to get most of my veggies in! I always have to add some sort of bread or crackers with my meals just to tide me over!

    yeah its weird – i’m always hungry about an hour after dinner. probably b/c what i really want is dessert….

    I love making bowls of random leftovers as meals. SO good. I totally get the empty feeling thing though… I always have to follow bowls like that with something else to be completely satisfied.
