Six Mile Salad + Sandwich

Hi friends!!

I had a great run this morning – about 6 miles!! It was hot and I was probably a little dehydrated, but I had energy, which is always good 🙂 Although at one point my breakfast decided to un-digest and I had to stop and walk up a hill to wait for the feeling to pass. I can’t handle high protein meals before a run, and I wonder if the addition of cottage cheese made it heavier. At the end of my run I met one of our neighbors, who is young and fun! Apparently we used to do athletic conditioning together at the Y! Hopefully we can get together with them soon and keep our circle of friends growing.

Breakfast held me over really well, and I didn’t sit down to lunch until 1:30. It was a great lunch too!!!

Leftover salad from last night. Arugula (LOVE arugula!) with craisins , pecans , and some cheese (Kate, great combo!), and I added some spinach , avocado and sun-dried tomato feta . No need for dressing because the arugula had so much flava –

I also made an Avocado-Cheddar grilled cheese – with a dab of whipped butter (got this instead of Smart Balance yesterday for a change). I used shredded cheese today and I think that helped make the cheese stand out more.

And lastly, a Gliding Calm carrot with AB ! It was quite good.

I’m off to work on laundry, Organic, Micro, Lifespan and more!

    when i saw your comment on the last post about a crisp day i was like ??? it is 95 here! it looks like some closer-to-fall-like weather should be coming to NC by the end of next week, though.

    Craisins are AWESOME on salad, especially paired with feta!

    I can’t wait to give that grilled avocado and cheese sandwich a try. What a killer sandwich idea 😀

    I’ll have to create that for my husband soon; he is an avocado fanatic! There is a deli in St. John that serves a turkey sandwich with sprouts, cream cheese, and avocado, and it’s kind of amazing.

    Haha WAHOO KATH!!! YAY YAY YAY for the shout out…and for carrots and nut butter! SOOO GOOD. It can’t be beat.

    And I love that avocado grilled sammy idea. I tried it once with a tortilla, but my avocado wasn’t very ripe so it turned out…not so yum yum. booo. Hard avocado slippin and sliding this way and that out of the sammy.

    ANYWAYS…good luck with your studying and laundry!!! Have a great rest of your day!!

    Love avocado. My favorite way to eat it is chopped avocado, purple onion, tomato, lime and sea salt – over a bed of greens.

    The advocado and cheese looks really good. I always want to add more advocado to my diet, but I never seem to be able to eat it up before it goes bad.

    I haven’t made the leap to kale yet, but it’s on the list. I am making grilled cheeses and potato soup for dinner – stopped raining but dark and dreary = soup!
