Overflow

I slept in until 8 this morning – it was wonderful to wake up to the sun shining with fall shadows. From inside, it looks like the perfect crisp day, but I stepped outside and knew instantly that the humidity is still hanging around. I was kind of groggy (hate that word!) so I decided to have breakfast first and run later.

My bowl of oats was literally overflowing today thanks to the addition of lots of fruit!

Today combo included:

  • 1/3 cup oats, milk, water
  • 1 whole banana
  • 5 strawberries (I think adding them at the beginning of cooking changed the way the oats cooked as well as their texture – perhaps from their acidity?)
  • 1 tbsp craisins
  • 2 tbsp cottage cheese
  • A few walnuts
  • Spoonful AB

With English breakfast tea. I have officially completely gotten over sweetening tea. I’ve been just putting a splash of milk in them, and I think I even prefer it unsweet now. Sweeeeet!

Instead of studying Micro + Organic, I spent a while this morning exploring the new Google Chrome browser. Overall I really like it a lot, but a huge problem is there isn’t a plug-in for ToDoist Sidebar, which is my best friend at the moment. I found a way to add Gmail links to ToDoist without the sidebar, but it’s not nearly as efficient. We’ll have to see if someone can improve it NOW!!

Geez, KERF is becoming quite the tech blog these days!!

Off to study all day!

Ha Ha! I’m sitting down to the exact same combo of oats today minus the craisins! Wish I would have thought to add them though–sounds great! I also used 1/4 cup cottage cheese for extra protein. Mine turned that pretty pink color, too!

    Have a great day, Kath!

Your bowl of oats is overflowing with nothing but GOODNESS, if you ask me 🙂

Have you ever seen the show “Mork & Mindy” (with Robin Williams, from the 1970s)?? Your bowl reminds me of the eggshell that Mork traveled in, when coming to Earth 🙂

I have a quick question for Kath or anyone else who has made the oatmeal pancakes:

Tomorrow I start a new job where I will likely be eating breakfast every morning at work (only way to get to work on time and squeeze in a morning workout). I remember someone recommended freezing the oatmeal pancakes once, and I was wondering how that worked out. I’m thinking about making a batch on the weekends and then individually freezing them and reheating them in the microwave once I get to the office. Do you think this will work? Thanks!

    Madiella –

I’ve frozen my oatmeal pancakes before – I’ve reheated them in the microwave and even put them in the toaster before – both work great for me!

Your oats look better than mine today Kath! I love the color!

madiella, i have a question about oatmeal pancakes– when you make yours how many egg whites do you use?? i don’t use the egg white substitute so i was wondering how much 1/3 cup equals in actual egg whites??

    Kath,

With strawberries, I add them after cooking the oatmeal, or else I find that do indeed give the oatmeal a strange taste!

Re: the Mork & Mindy comment. Actually, you could buy this and literally eat oatmeal out of it.

    😀

kath i think you may be making oats more popular – i saw them popping up on menus like at starbucks and corner bakery! or maybe they’ve always been there and i never noticed..

Kath, LOVE the pink color of your oats- FUN! Did they taste “weird”?? Rasha mentioned that they get a strange taste when added at the start.

Sooo envious of your unsweetened tea. I’ve only JUST weened myself off the milk and was so proud- now if I could only get off the stevia. I CAN do unsweetened iced tea though, so perhaps I’m not too far off?!

Kath, I have some more fun oatmeal ideas that I’m going to keep top secret- are you having another contest soon 😀 ???

    VeggieGirl ,
Haha – I know just what you’re talking about 🙂

    madiella ,
I froze some one, but I didn’t think they were that good. My frozen items ALWAYS get freezer burn. Or maybe I just have that extra sensitive sense of taste/smell…. I put them between wax paper and then in a freezer-proof ziplock.

    Maryam ,
Use 1 whole egg. I did that recently since we don’t have egg whites in our fridge. It’s a heavier pancake with the yolk, and I actually prefer the texture with just white, but the yolk is nutritious so it’s better not to waste it!

    madison (follow my weigh),
COOL!! I think it’s awesome they are offering oats now.

    Deb ,
    Yeah, a little weird. Weird!

I do have few more contests planned, but I’m not sure if they’ll be oatmeal contests. I’ll try to make them more open-ended so oatmeal can be a kind of entry. Any ideas for contests??

    Hi Kath!

Did the strawberries change consistency in the oatmeal – in a good way? Or in a bad way? Did you like the flavor they added? The oats sure looked yummy but I wasn’t sure what your final verdict on them was. Let me know if you get a chance!

    Thanks!

    AlliJag ,
The verdict was bad! I think the strawberries made them waterier and the taste wasn’t bad, but wasn’t that good either. I think I’d wait and stir them in in the end.
