Rewind

Off to a good start! I’m finally sleeping better, and this bowl of breakfast was simply beautiful.

The Mix

  • 1/4 cup Great Harvest Oatmeal Raisin mix
  • 1/8 cup Bob’s Red Mill 10 Grain Hot Cereal 
  • 1/2 cup water, 1/2 cup milk
  • Half banana
  • Half tbsp chia seeds
  • Pinch salt, vanilla, cinnamon
  • Toppings: Coconut butter melt, Naturally Nutty melt, coconut sprinkles

    I’m so happy the shapes have returned. I know that you prefer tea for the summer generally, but I love it when you drink the coffee because we readers get the treat of seeing what crazy shape shows up in your mug. That never fails to put a smile on my face. If only my drip coffee got so frothy in the AM!

      I haven’t had TIME to make any desserts in ages!!

      I generally dont’ do a lot of baking because then I’ll just eat it all. And I’m horrible at licking the dishes!

    quick question… not sure if you’ve ever talked about this before. i know coconut has a lot of saturated fat, and i’ve heard somewhere that not all saturated fats are created equal… but that whole notion confuses me. so do you just assume all is good in moderation (coconut butter)? or is there some truth behind the good/bad saturated fats. i’m not really concerned personally – just ordered a jar =p as my numbers are good, but i’m curious what you have to say! thanks!

      I just wrote a comment response about this a few days ago. Coconut butter is high in medium chain triglycerides which can be used for energy. You’re right that all sat. fat is not equal 🙂 Plus, I eat coconut butter by the tbsp, not the cup full, so it’s a portion thing as well.

    The more I read about those Kodiak cakes, the more I’d like to give ’em a shot – they sound yummy! And that Envirotote seems like a perfect item to tote in the back seat of a car to ensure something that doesn’t need to tip over, won’t!

    OMG…there is a BEAR in your coffee!!! So the foam is the snout and the black hole is the tip of the nose…and then there are TWO tiny specks that look like eyes in the upper right part of the glass. See it?? Definitely a bear 🙂 And how fitting for the kodiak cakes and the bears in your post, hehe. SO glad to hear you’re sleeping better!

    Hey Kath, I was wondering if you actually measure out your oatmeal in the morning or just eye ball it. I have been measuring my oatmeal for a while now, but I think I just want to eye ball it from now on because I get so fixated on making sure everything is measured out perfectly and it takes the joy out of eating my oatmeal. Well good luck with the moving. 🙂

      I measure the oats, milk, water to ensure proper absorption but I eyeball the rest.
