Raw Veg, Meet Hot Veg

G’afternoon KERFlings 😀

I believe I aced my test this morning – score! That’s assuming I didn’t make any careless assumptions or overlook an A,B,C, or D.

I came home to freshly baked rolls and a loaf, so obviously my lunch had to involve bread!

I decided soup would be the best accompaniment, and remembered the last bit of potato soup in the fridge. But unfortunately last “bit” was accurate because there was only about half a cup left. I decided to mix it with some Pacific brand Carrot, Cashew, Ginger soup for more body, which brought it up to about a cup. Perhaps I’ll have the rest of the soup tomorrow with the acorn squash I didn’t get to eat today

I chopped up some raw veggies to have with hummus on the side, but the hummus was cold and the soup was hot so I decided to dip the veggies in the soup. Awesome combo!

And at the last minute I decided to add a cranberry sauce yogurt with Kashi Vive on top. Mmmm! I was going to save this for a snack, but my mouth won.

Think I’m gonna go have another cup of tea. Then do a bunch of school work. Then have a fun dinner. P’raps take a walk too!

    I had Pacific soup for lunch as well, the Roasted Red Pepper and Tomato. I think it might be my new favorite pre-made soup. I’d highly recommend it if you haven’t tried that variety.

    That bread looks SO awesome. I really have to get Bobby to start baking bread for me 🙂

    Pacific brand soups are the best! I think there’s a butternut one that I really like… I forget, hehe. I should stock up.

    Kath – it’s so funny you posted that bread b/c I’m having a dinner party tonight and have been agonizing over a recipe for the rolls. That bread looks like JUST what I need! Is that a specific roll recipe you have?? Tia!

    Katie,

    It’s basically the honey wheat recipe with a couple modifications. Instead of using whole wheat, it’s whole spelt, and it’s 25% whole grain instead of 50% like the recipe. The honey amount was doubled too.

    After letting the bread rise as usual, divide into 3.5oz portions. Tighten each portion into little balls by rolling them around underneath your hand. You can bake them like this, or if you want them log-shaped like mine, roll them out like a snake. If at any point during the shaping they begin to feel too tight and don’t respond to your shaping, let them rest for 5 minutes and come back to finish ’em.

    Pretty tasty!

    Sorry for the double post… being a resource of all things nutritional, can you tell me what the difference between partially-hydrogenated and just plain hydrogenated oil? I avoid both, but I do so a little blindly… just assuming they’re both bad.

    Kath, your meals are becoming Japanese style of meals: a selection of foods, each of them keep it little. I think it’s a good way to satisfy our appetite and at the same time to be moderate.

    cat –

    partially hydro = trans fat
    fully hydro = saturated fat

    if the label says just says “hydrogenated” its safe to assume it’s partially and then it’s a trans fat.

    I don’t know if I can do one tomorrow because the husband will be at work. Basically just halve it, scoop out the seeds, and bake at 400* or so for 30 minutes, until a knife thru it goes in easy. Then serve with butter + brown sugar or stuff away!

    love all the little bowls there just too darn cute:) I have a question for you what exactly is high fructose cornsyrup? and why is it bad for you? My hubby and I are in a debate about it:)lol

    How do you fit all that food/tea in your stomach!!? I can only eat a little soup and crackers and then I am full. Also with tea..one cup alone and my stomach is full. I guess I eat a little every 3 hours or so. I am impressed by your stomach volume. I eat alot everyday too but I could never handle that much liquid in an hour’s time!

    Lee’s link (thanks Lee!) explains it. There’s nothing inherently bad about HFCS (like trans-fats, which not only raise LDL cholesterol but also lower HDL – a step worse than saturated fats), but there is also nothing good about HFCS, especially since most of the products it’s in are processed. I eat it in ketchup (I don’t think the organic ones taste nearly as good) knowingly and maybe a few more items, but I avoid the foods it’s in overall not because of the HFCS per se, but because they are not whole foods. Hope that helps you win the debate!

    Guess I’m just a big eater! I couldn’t imagine being full on just a cup of soup, but if you regularly eat 6 mini meals, I do believe there is such thing as stomach shrinkage.

    Kath (or anyone else who might have some input) I have a question about nuts. Last summer I was trying to gain weight and ate a lot of nuts and avocados as a way to ‘bulk up.’ Now that I’m at my ideal weight, I find that I’ve been eating the proper amount of calories to maintain but I’m still eating a large amount of healthy fats.

    I was curious if you know if this is okay or not? Like I said, I’ve been eating the right amount of calories. But a typical day will include a T. of almond butter at breakfast, a handful of almonds for snack, avocado slices at lunch, peanut butter for a snack, and some walnuts on yogurt at another point.

    Am I overdoing it? Should I try to cut back?

    Thank is an EXCELLENT name!!!!!!! We have toyed with the though of opening a B&B one day because we love to cook, entertain guests, and meet new people – plus we like visiting them ourselves! I just don’t know if I could give up my weekends.

    Since you’re eating mostly healthy fats, I wouldn’t worry at all. If you’re really concerned, you could log a typical day into an online journal like Spark People’s or Daily Plate and see what percentage of fat you’re eating. The recommendation is 20-35% and as long as you’re near 35 with healthy fats, you’re probably doing no harm.
