Abundance Of Beans

I apologize in advance for all the beans we’ll be eating in the coming days. I cooked some navy beans from scratch while I studied this afternoon and it made waaaaay more than we need. I’d say dried beans at least quadruple in volume when cooked!

After much studying, we went out for a walk and ended up drinking alcohol again! What’s with us and walking straight to the booze!? Today it was to Harris Teeter for the double wine tasting that’s usually happening on Thursday nights. We tried 9 different wines, which was probably between 3 and 4 oz.

Once home, the hub cracked open another Trader Joe’s beer. I had my usual gulps :mrgreen: Probably about a third of it? This is his glass after we both drank some.

Once nicely buzzed, I had to restrict myself from overeating. The chomping jaws were hungry tonight for bread and all things carbohydrate!

On the menu were Happy Herbivore’s Boston Baked Beans (hence the beans from earlier). These were delicious! I’m not sure what made them “Boston” but they weren’t the typical Southern baked beans I am used to. They were very tomato-y and BBQ-y, but tasted great. We added some brown sugar instead of molasses and omitted the onions as usual, but otherwise we pretty much followed the recipe. Oh, but I doubled the recipe since we had so many beans. I considered it to make about 4 portions, each about 175 calorie’s worth.

On the side we had CSA green beans (wish we’d had more!) with some whipped butter –

And breeeeeaaaaaaaaaadddddddddd!!! A hunk from the loaf. Mmmmmmm! It was so sweet and brown, esp. with the butter melted inside 🙂

I went back for seconds –

The husband thawed out some banana bread for dessert and asked if I wanted a bite. I said yes and instead of taking a bite, I was presented with a slice on a silver platter. Er, red plate. It went down so fast I don’t even remember it! Musta been the drinks.

We’re done with another early dinner and it’s only 7:30! I should probably do some Organic homework, but I definitely see a bubble bath + reading in my evening too. I’ve really been loving the calming way of ending my day. I just hope the water bill isn’t too high 🙁

We’re putting the space heater in our room tonight to keep us warm. It’s supposed to rain tomorrow too 🙁 I asked the husband if he would rather start his Friday off feeling fresh and fit or watch The Office, have a lazy breakfast and workout mid-day (well I would workout then and he’d be at work). He chose fresh and fit, so we’re planning a morning workout and will watch The Office as soon as he gets home tomorrow night.

    Hey, you probably already know this but beans freeze great. Just put them in a tupperware, cover with water, and freeze. I always make tons of beans when cooking them from scratch because it takes the same amount of energy and they keep so well!

    Bath sounds lovely right now…might be one in my future tonight, too!

    I’ve been taking a lot of baths recently too! I never used to be a “bath person”, but when I was in France it was a lot easier due to the lack of shower head/ curtain (long story…). Anyway, I hear you about the bills… I’m worried about the gas it takes to heat UP the water!

    I am super excited for The Office tonight! Also, I love that the husband works out with you. I wish the BF and I did…I am getting him to walk more though, so it’s a start.

    That happened to me with the lentils last week! I measured out a cup, thinking that it wouldn’t be that many beans and then they got HUMONGOUS. I like lentils though 🙂

    Hmmm…the tomatoes and bbq sauce aren’t Boston.

    The Brits cook beans with tomatoes, but the classic Boston recipe is brown sugar, molasses (look up the great molasses flood of 1919), mustard, worcestershire sauce, and optionally bay leaf, onion, and/or a very small amount of bacon or salt pork. I always use a bay leaf when I cook beans. I find it enhances just about any type of bean!

    question – when you cook beans from scratch is it better to store them in the liquid/broth you cook them in or to drain them? my husband leaves them in the liquid but i would prefer to drain them. what does anyone think?

    Your bread with butter made my mouth water… and I already ate dinner and dessert. Let’s just say it looks delicious! I think if you’re not going to turn on your heater yet, you should at least get to have an extra bath here and there. I always love taking warm baths/showers in the colder weather 🙂

    I didn’t know that they freeze well. How come you put them in water first?

    I love to share with my fiance too…his food taste better than mine and I let him eat my left overs. I love your positive attitude Kath!

    I freeze mine in freezer bags with some of the water that I boiled them in, then rinse only if necessary. I use the liquid when making soups, stews, chili, etc.

    winter time is so good to have a lot of beans, substitution salad. I’ve having tons of them too! so, recipes are needed!
