Quadruple Sun

I know it’s not sunny across the country (hope you are not in danger of a tornado where you live : ( ) but it is perfect here. Matt and I went on a walk/run to the greenway this morning. We walked there together and then he ran ~4 miles while I walked 1.5. The goal was to meet right at the 30 minute mark, but somehow he was way fast. I wonder if it was less than 4 miles. But we walked back in together and then home. ‘Twas the first time I brought my Camelbak on a walk and I’m sure glad I did!

Lunch followed at 1pm.

Isn’t there a saying “Thick as split pea soup?” Because ours was so thick it was like a hummus! I spread it on toast (heated) and topped with cheddar and put it all in the toaster oven for 5 minutes.

    And Sun Hat! That open faced sandwich looks lovely. I love melty cheese on bread in the toaster oven, mine usually includes grilled avocado slices as well. Yum.

    I’ve heard of toast dipped in soup, but this is the first soup I’ve seen spread on toast! Creative!

    After seeing all this “mashed” avocado sandwiches on ur blog, I started having them too, I like mine with hard boiled eggs on top and some black pepper – soooo good!!

    That weirdly reminds me of what I’ve been loving lately. Avocado mashed into thick chunks with cilantro over toasted rye bread!! Soooo yummy, you’ve gotta try it!

    Cville just seems like a perfect place to live. Your lunch looks so good. I got some sun this morning and ended up having fruit and yogurt with some Uncle Sams on top. Warm weather is great for eating light. I am off to get my dinner veggie grill packs ready!

      Do you know you can buy a stainless steel straw? Very handy if you’re a person who uses them all the time.

          I love my glass straws from strawesome.com! I bought a set a couple years back and use them daily. You can throw them in the dishwasher or just rinse right away with hot, soapy water. Easy to clean and beautiful. : )

    looks like a lovely day!! i actually enjoy split pea soup a little thicker. our’s always seems to thicken after sitting in the fridge for a day or two. great idea to spread it on toast! i’ll have to try that.

    I just barely discovered your blog and have had a lot of fun reading through it (I’m sure I haven’t even scratched the surface yet). The thing that stands out the most to me right now is how small your meals are. Do you only eat 3 times per day? How does one slide of toast with thick soup, cheese, and an orange fill you up? How does one pork salad fill up a man? Do you have a secret? Please share!!

      I think it’s heartier than you think! That was one dense hunk of whole wheat bread topped with a good half cup of soup and an ounce + of cheese. And we both had snacks a few hours later!

    thanks for sharing the great idea of boiling potatoes the other day! i only boil them when i make mashed potatoes, but it’s so obvious haha. i had some leftover steak to eat up tonight, so i ended up steaming a red potato, carrots, and broccoli, and it was a FANTASTIC meal. your blog continually gives me great ideas for incorporating real foods in quick ways 🙂
