Pumpkin On Pumpkin

I’m just going to apologize now for the abundance of pumpkin in the next few weeks.

Know that:

  1. It’s one of my top 10 favorite foods and flavors
  2. It’s a superfood!!

So behold: pumpkin on pumpkin action:

Coach’s Oats { <– on sale right now!} made with milk, water, banana and chia seeds. I added 1/2 a cup of pumpkin when the oats were 80% thickened over medium heat. Then I stirred in a pinch each of ground cloves, cinnamon, all spice and nutmeg.

Topped with some crumbled Great Harvest Pumpkin Chocolate Chip and a smidge of Barney Butter!

I woke up really sore + stiff this morning. I swear leftover from Monday’s Body Pump! Chris has magical powers so that one new muscle becomes sore each day after his class throughout the week just as one is getting better. Yesterdays killer cycle class didn’t help.

So this morning’s run was postponed. Walking sounds like a good afternoon plan.

This morning I’m speaking on Real Food at a wellness fair as part RD, part pro-food-blogger, part bakery owner.

    One should NEVER apologize for too much pumpkin! I don’t actually think it is possible to have too much of it! I think pumpkin is my favorite superfood! 🙂

    i feel so boring posting about pumpkin, pumpkin, pumpkin!! my goal for this week is to incorporate it into meals other than breakfast, though.

    just returned from a long morning walk to stretch out the muscles. it was glorious!

    Too much pumpkin? Nah. I’m currently perfecting my recipe for a spicy pumpkin soup… it’s so good. I should have the recipe down by this weekend. You should try using your pumpkin in savory meals, to help you use it up.

    There is no such thing as too much pumpkin! I found a jar hiding out (next to my wheatberries!) in the pantry last night. Seriously – cleaning out the pantry made for more excitement than pretty much anything has in the past several weeks! Haha.

    I bought the coach’s oats! I’m super excited to try them and nearly freaked out when I saw they were there – a good pick by you for sure (in my food-obsessed opinion!) 🙂

    I did not know that pumpkin is a superfood. I am going to eat more pumpkin then. You should make a shirt for the fall season that says, “Eat More Pumpkin” 🙂 — even though pumpkin can be eaten any time of the year.

    I think I have pumpkin envy after seeing that HUGE can Matt procured for you! Also, have you tried Pumpkin Spiced Tea yet? It’s even decaf! I know you love tea and pumpkin, but not sure what you would think of this combination:

      I generally find pumpkin spice teas to be too spiced for me – I don’t really like ginger that much. How is this one?

    This post reminded me that I need to check for the pumpkin spice Keurig coffee this weekend! I’m still finishing up my coconut coffee from the summer, but don’t want to miss the limited window that the pumpkin is in stores! I also have a FedEx package on the way with three new types of tea from Republic of Tea – coconut cocoa, red velvet cake and caramel apple! Can’t wait to try them!

    Pumpkin is soo so so so good and you can literally do anything with it! I have yet to figure out how to combine it with chicken…. pumpkin ale chicken perhaps with pumpkin infused brown rice and grilled pumpkin….

    haha sorry I am clearly obsessed. and very excited for more pumpkin posts.

    Can you buy those Coach’s Oats locally? I almost bought some on OpenSky but then thought it’s silly to ship them across the country if I can grab them at my local Kroger/Whole Foods. Thanks 🙂

    PS, for Cvillers, you can get Biscoff at the Barracks Kroger! I didn’t realize this until I saw it there a few weeks ago!

    love pumpkin year round! Great with yogurt, spices, and applesauce, low cal pumpkin pie taste! Learned it from Weight Watchers, where it is a zero point food! Good news.

    I’ve been making “overnight oats” with Pumpkin instead of yogurt or milk and throwing in an extra scoop of protein powder. It’s awesome and not using dairy makes it pre-workout friendly 🙂

    HI Kath! I am just trying to find the recipe you use for plain ol coach’s oats pumpkin! i am making it tomorrow on the stove top but do not know how much milk and water to add (cup wise)?! Could you provide just the full out recipe of how much oats, water, milk, and pumpkin you add!?

      Hey Miley,
      I use 1/3 cup coach’s oats, 2/3 cup water, 1/3 cup milk, half a banana, pinch of salt all in a pot. Heat to a bubbling simmer and stir until thickened. Then stir in about 1/3 cup pumpkin and spices at the end.
