Pumped For The Gym

A few weeks away from my twice-a-week weight lifting classes and I was missing them! Especially when combined with 3 vacations in a row of delicious food. Getting back to my routine and seeing my friends was just what I needed this morning.

Back on the homefront, I nibbled on some pretzels while I decided what to make for lunch. I didn’t really want a salad. I didn’t really want anything but I decided a salad was the best choice, so I wobbled out to the garden to pick some lettuce.

Fresh, soft lettuce was delicious! Served with avocado and cheddar cheese, a fried egg and a drizzle of olive oil and honey.

On the side – protein-packed greek yogurt with granola on top.

And hot tea – because it feels more like April than June out there!

This cloudy weather is making me sleepy, but I have lots to do/write this afternoon!

    Had a few yogurt parfaits today too! Something about the creaminess of yogurt with some cirspy crunchy toppings is just delicious!

    Haha I’m feeling very sleepy, but I think that’s a combo of waking up at 2:30am and never falling back asleep and getting blood drawn this morning. Oh, and sitting at a desk all day…

    Going to have a salad for dinner now that your salad reminded me that we have lettuce in the refrigerator. Sometimes I forget what veggies and other foods we have in the refrigerator.

    Hello Kath,

    I am new to your blog. So far, I think it’s lovely and has much warmth and happy content to it. I decided I wanted to start reading from the beginning so I could “get to know you” better, as opposed to jumping right in. I always find it interesting to get a flavor for bloggers as they first begin their journey.

    One thing I did wonder about as I was making my way through your second year of writing was when you mentioned that you were the first food diary blogger…(?) That struck me a bit odd. I have been online for several years now, and have seen quite a bit of food blogging, before you started in 2007. Sorry if that comment seems off-topic right now. I just wondered how you came up with that? Perhaps my stats of your blog are off, or something?

    Anyways, your work is commendable & I thank you for your efforts. 🙂

      I started reading SELF’s Eat Like Me blogger and really enjoyed it – so I searched and searched for any other blogs that documented breakfast lunch and dinner. I couldn’t find anything. I found a few dairies, but no one had kept up with it. If you know of someone who was doing it long before I was, I’d love to read about it! I’m not claiming to have invented anything, but I definitely think I was one of the first to do this and keep it going.

    It’s funny because I wasn’t sure what I wanted for lunch either but I definitely felt hungry. A big bowl of greek yogurt, fruit and granola and I’m FULL. I may need a walk to start digestion. haha!

    Sometimes I worry that if I ever get pregnant that I’ll stop working out and and just eat all the time lol. I know I have a lot of control of this but it is still so nice to have inspirations like you and Caitlyn to show me that staying healthy and active during pregnancy is possible!

    I love to start my day with greek yogurt and granola and sometimes some blueberries. I find it is a great pre-workout meal before my weight lifting or cardio. You are very inspirational.

    Hey Kath! It’s Jordan (formerly of Salt Sweat Sugar). I just started blogging (and reading blogs!) again, so I wanted to stop in and say hi. I saw all the Marie Claire posts (I know, I’m late!) but I just wanted to tell you guys all how proud of you all I am – You all handled yourselves beautifully.     Very muggy here…we had a big rain storm through the night…great for the garden…except my Shasta Daisies have fallen over! Love a fresh salad for lunch…especially when it is right from the garden! All the additions make it a super salad! Enjoy!

    Love your blog and your always smiling face! You have inspired me to pay more attention to what I put in my mouth! I was NEVER a three times a day eater, I usually am happy if I eat two times in one day! Your consistency is my inspiration. And of course my question is completely unrelated….
    How did Matt get his nickname Kanz and how did your sister get her nickname Larbs? Just curious! All the best to you and your lovely family!

      Kanz is named after the bonobo Kanzi, who is famous for learning sign language.

      Larbs is just a version of Laura

    Kath, you have me buying so many different varieties of lettuce. I think I need to slow down. I think my spring mix is going to go bad. When you come down to Va beach, try to stop at Grand Mart on Baker Road. It’s the closest thing we have to a good farmer’s market. Fresh produce and meat. It’s an international grocery store. Picked up spinach and portobello caps today. Still don’t know what to make with them, but new foods to replace old ones is a must now.

    Hey Kath,

    I’ve never tried honey on lettuce before…I’ll have to try that sounds delicious.

    Can you recommend a peanut butter that you like?

    (I’ve bought the creamy and salted Trader joe’s one but it tastes extremely over roasted. I also bought TJ’s Valencia with sea salt and its pretty good but still a bit over roasted)

      I don’t usually buy plain peanut butter – it’s too plain! But when I do, it’s usually the freshly ground kind from the bulk area of Whole Foods. Or something like Whole Foods brand plain – or I make my own (recipe on my Recipage)

          I don’t really buy too many peanut butters – my current favorites are Trader Joe’s sunflower butter, Maranatha almond butter, all of the Wild Squirrels, Barney Butter, and Naturally Nutty. Some of those are peanuts, but most are other nuts.

    The vocado looks so good. Hw much would you use and what do you do with the ret? How do you store it? I’m the only one who will eat it, either I eat a whole one or toss half. I hope you have a good solution! 🙂

    I know exactly whatcha mean about nothing sounding good. There’s some days where I’m totally indecisive about lunch! Salad is usually a good fall back though 🙂
