Pull It Together

Can already tell I’m going to LOVE it here!! It’s all fun and exciting wellness work. And a great office of enthusiastic people located at my favorite intersection in Charlotte 🙂 Also, a 15 minute commute!

Didn’t have time for a grocery store shop last night, so I pulled this lunch together from our fridge. Not bad, if I do say so myself! It has all the important pieces 🙂

The hardest to find: the veg. Leftover lemony mustard greens and a carrot. (Carrots are so easy to pack and last a while in the fridge, so they’re perfect for lunchboxes.)

The protein + dairy source: Pineapple Chobani!! A gift from Emily. I can’t find the pineapple here in Charlotte (but I did see it at multiple grocery stores on our trip to Charlottesville this weekend!!). Galaxy Granola for crunch.

    I totally did a grazing lunch today too. Mine included carrots, celery, nan, hummus, dried cranberries and some marinated feta. I just love carrots lately, don’t you?

    Tasty loooking lunch! Do you grow your own carrots? They look all natural and good (not like some of the supermarket ones that are so radioactive and ‘perfect’ looking!)

    How great your commute is only 15 minutes. Here in LA that will get me about 1 mile, maybe 2 if I’m lucky!

    Lots of produce, there! I’m excited for summer stone fruits… I actually managed to find organic (though imported) plums and peaches recently, so I’ll take that as a sign that the warmer months are coming. 🙂

    Yum! That lunch looks so light and fresh. I’ve never seen the pineapple Chobani!

    I have a rather odd question about kabocha squash. It’s my new favorite thing. I cut it (well my husband does!) into cubes and roast them. Perfect for my lunch and so delicious!
    I know the skin is edible and I do eat it (and I know that you usually eat the skin on most veggies.)….but there are these weird ‘barnacle’ type of bumps/growths on the skin. Do you know what I’m talking about? They don’t come off after when I wash the squash. Is it safe to eat these?
    I hope so, because I’m sure I’ve ingested some already!

    I”ve only had pineapple Chobani once, but it’s awesome! I actually used it for overnight oats. Wonderful. 😀

    Pineapple Chobani is excellent! My favorite flavors are the pineapple and the blueberry and they are great combined! I wish I liked raw carrots because they are so easy, but I just don’t like them.

    I LOVE that you eat whole carrots (not baby). Baby carrots bother my stomach (my Dad says they are covered in mold BLECK). Also very interesting you are enjoying your office rotation. As a future RD I’m actually dreading the office rotation. I’ll have to look at it in a new light

    I agree – carrots are the best for on-the-go lunches. I often pack them in my school lunches. I’m actually munching on carrot & cuc sticks right now.

    Did you like the pineapple Chobani? I just had it today. Snagged 4 diff. kinds at the Fitness expo last weekend. I didn’t like it. It was too sweet and the texture was kind of “jelly-ish”. Most likely due to all the jelly kind of pineapple on the bottom. I hope I like the other flavors better but so far, my all time favorite yogurt is Chobani Plain. Then I like to add 1 TBS of raisins and nuts.

      I always prefer plain, but I do like the flavor. I think I like that it’s so thick too. But you’re right, it is a bit gelled.

    I have taken to carrying a fork and spoon in my purse. The fork is getting a little bent up, but it has come in useful so many times. The only problem is I borrowed it from my mother in-law. I should probably give it back and use my own silverware.

    Looks like you definitely covered all the nutritional bases with your lunch. I love a good snack based meal every once in a while. I absolutely love pineapple Chobani (so creamy and sweet), sorry to hear it’s unavailable where you live!

    Thought I would share. I made natural peanut butter with my Vita-Mix with no other ingredients. Then I added some agave and cocoa by hand. It’s absolutely amazing!

    I love Dr. Kracker crackers. Is it weird to say that I love them because they taste so healthy?? The hearty crunch and the seeds on top.. it’s the best cracker around.

    I love your lunch! I’m the same way, always packing little bits of things … sometimes I can’t make up my mind! Of course, it looks like I’m packing for an army sometimes, with all my tupperware …

    I should get some of the Dr. Kraeker crackers next time I see them. I tried the flatbread, thinking it would taste awesome, but I found it to be so hard that it wasn’t enjoyable to eat. Are the crackers really hard?
