Prep + Eat

Not sure if you guys have noticed, but I planned very quick and simple meals for this week knowing I’d be busy with school (just wait until you see tomorrow’s dinner!!!)

This one doesn’t look easy, but it was. Took maybe 10 minutes to put together?

  1. Cook 1 large diced sweet potato in the microwave for about 6 minutes
  2. Drain cans of black beans, corn + rotel
  3. Chop red pepper pepper + zucchini
  4. Put all of the above in a skillet and heat through sprinkling with cumin, garlic powder, chili powder, oregano, cilantro, red pepper flakes + cilantro.
  5. Serve over a bed of baby spinach (although chopped romaine would have been better) and garnish with peanuts, plain yogurt (or sour cream, obvi), and hot sauce. Plus chips for dipping!

I would also recommend: jalapenos, avocado, pepperjack cheese and fresh cilantro, but we didn’t have any of those.

The chips were these Food Should Taste Good Buffalo style mini chips. I thought they were going to be super-flavored with buffalo, but they were very mild, which I loved.

And the mini triangles were SO CUTE!

After dinner I talked Matt into watching a House Hunters with me if I tickled his back and head while we watched. This might be a new trend! I got a 5 minute shoulder massage in exchange for 15 minutes of tickles. Seems like a fair trade to me!

    Oh biochem…..I have nightmares just remembering taking that class 🙂 I swear I haven’t used it since I got out of school though. So much more applicable to dietetics than nursing I would imagine. Hang in there Kath!!

    That is an adorable idea! I make Bobby play with my hair every night while we watch tv and sometimes he gets a massage in return. LOL. I didn’t realize this was a common thing 🙂

    Love all the spicy flavors! Such a quick and easy meal, but a great one to remember for a party or when cooking for friends!

    I love how when I get a recipe idea in my head, I read a blog and someone has already beat me to it!

    I just picked up these chips and have not tried them yet, but I was thinking of the same kind of meal that you just made. Maybe buffalo chicken nachos??? Your post just confirmed my dinner one night next week. Thanks Kath!

    PS- Good luck on the rest of your finals. I definitely don’t miss those and remember how agonizing final time can be.
