Playtime

Lucky me, I got off work a little early today!!! I actually had a pretty emotional morning working in a clinic. It was sad to see some of the patients.

I got home about when Matt did and took a 15 minute floor nap! I actually didn’t fall asleep, but it was nice to rest on the floor. He slept for 45 minutes having been up since 4AM!

After some email catching up, I made us lunch.

Tempeh + Jam for me!

I sliced opened some 3-Grain Tempeh (Lightlife brand) and put it betwixed some GH bread. Matt’s was cheese, jalapenos, mustard and arugula and mine was Crofter’s and grilled.

On the side I had fruits + vegetables drizzled in an almond butter sauce!

I made the sauce with 1 heaping tbsp of Barney Butter and 1 scant tbsp of milk. I heated both in the microwave for 15 seconds and then stirred with a small spoon. Then I added a tiny bit more milk and it turned into a sauce. Crunchy sauce!

Thrilled to have a spring afternoon ready and waiting, we’re going on a biking adventure now!!

    I LOVE almond butter on veggies – it’s great on chicken too! Oh and turkey…okay, prettymuch everything 😉

    That tempeh sandwich with the almond butter sauce…wow, that’s two of my favourite things right there 😀
    I love that Matt slept on the floor – doesn’t he get neck ache or anything!? He must be SO tired!!

    I just got off of work early today too and I couldn’t be more excited to go out and enjoy the beautiful weather. I went a different way home today and passed by Atlanta’s only Great Harvest! I have never been but was thrilled to find it because I know you are a big fan (slight understatement). I had two tasty samples and bought two big loaves that smell delicious! Thought of Kath.

    Yay to getting off early and going bike riding. My boss is out of town today and that’s kind of freeing too. It’s funny – I actually get more work done when she’s not here.

    Ohh great idea on the almond butter sauce… i bet that would go really well with noodles and veggies instead of a peanut sauce.. and so simple!

    Haha, a floor nap is sometimes the best kind of nap. Love the grilled sandwich, I need to make one of those soon. They’d be perfect for a quick breakfast!

    I love a quick nut butter sauce. Sometimes… I add a dash (not too much!) of soy sauce to the mix to give it an extra kick!

    Oh, what a nice afternoon! Sorry about the morning. I know that line of work can be so hard. My sister is a Physicians Assistant for a surgeon and she has to deal with some pretty bad stuff sometimes. Nutbutter sauce is the best on just about anything! Love it on pancakes!!! Enjoy your afternoon.

    Yum. That is the same kind of tempeh I buy and I definitely am loving it more and more. Haven’t used it on a sandwich yet, though.

    I’m only writing this because i love your blog, which I read every day, and your recipes….and obviously, even though I don’t know you, you seem like an awesome, fun person.

    I’m sorry that you had a sad morning in clinic, but I would still be careful about writing posts like that on the blog. I work in healthcare, and I have seen people get punished for mentioning things (particularly on the internet) as seemingly innocuous and general as what you wrote. HIPAA is definitely alive and well.

    Again, I mention this only because I care, but not to be annoying….take it or leave it.

    I love the simplicity of your nut butter sauces… I have all these recipes for satay sauces with peanut butter, soy, ginger, chilli, lime, etc… and I know they’re good but I rarely get around to it. Your idea is much better 😀
