Nuts 4 Coconut

I was up at 6 this morning to hit the gym before I go to “work” where I am shadowing a dietitian for the morning. I am helping her 3 days next week as well – a health fair and a seminar for nurses and eating healthy. I’m excited to see the corporate wellness aspect of the field 🙂

At the gym I did 35 minutes on the ET at a lower resistance than normal. My cold is much better today, but I didn’t want to push it. I followed cardio with a set of upper body weights – biceps, shoulders, triceps, delts, pushups and some squats.

My beauty routine took me longer than normal this morning because I have the new Bare Minerals to try! I went back yesterday to try it on myself and was again very impressed with the results. I absolultely LOVE the warmth stuff. It gives such a natural glow.

I’ve been wanting to try this for a while:

Coconutty Oats

  • 1/3 cup dry oats
  • 1/3 cup light coconut milk
  • 1/3 cup water
  • 1/2 medium banana
  • 1 tbsp flax
  • 1/2 cup blueberries
  • About 4 crumbled walnut halves
  • Spoonful almond butter
  • Sprinkle coconut

It’s good, but I can’t really taste the coconut milk 🙁

    I love bare minerals! I am so glad you bought it. totally worth the extra expense. did you watch the instructional video? haha. I might have watched it a few times…

    But whenever i think about bare minerals. I think of TAP TAP TAP. brush against the side

    Hey, Kath! I’m not sure which brand of light coconut milk you use, but some of them come out of the can already pretty thinned-out and watery… maybe mixing it with an equal part water just diluted the taste too much? Maybe next time you could use all light coconut milk (no water), and see if that improves the flavor?

    Sorry you couldn’t taste the coconut- that’s weird, usually it adds such a strong flavor.

    I love Bare Minerals makeup! My makeup artist for my wedding used it on me and I’ve been using it ever since. I recently bought the Get Started Eye Kit and I love it just as much as the foundation and blush!

    Maybe you should try adding the coconut on top at the end. I’ve always cooked my oatmeal with water and then put milk on top!

    I was having the same problem with my version of “coconoats”! Solution? I cooked them with half skim milk, half water, a banana, a heaping helpin’ of cinnamon, a dash of salt, a dash of allspice, a little vanilla extract and, the star ingredient…….coconut extract! Topped off with a sprinkle of shredded coconut, my coconoats taste delicious!

    Does anyone here like the Alexia products (frozen fries, etc)? I just tried their onion rings last night and wow, were they fantastic! Much healthier than fried ones and they actually came out crispy. Highly recommended!

    I am a registered dietitian in the Columbia, SC area and love reading your blog. I noticed you said yesterday that you were going to the lake, and the closest city was Columbia. Just curious which lake it was (I was assuming Lake Murray). I’m sure I could help you some places around the area that have Wi-Fi! Have fun!

    When I used coconut milk I mixed milk and coconut milk but again I get more calories because of the bun in the oven! I did:

    1/3 cup oats
    1/3 cup milk
    1/3 cup coconut milk
    1 Mashed Banana
    a little maple syrup

    YOM.

    I’m having a peanut butter, honey, and banana sandwich with hemp milk right now and it rocks! My afternoon snack has been a bowl of Kashi Heart to Heart with Hemp Milk and I’m loving it!

    I loved bare minerals too until I went out in the heat. Made my face itch like crazy so please be careful and test it in the heat really well. Take care!

    haya, do you have an ice cream maker? how much was it?
    model behavior- I got the hpv vaccine last year and didn’t have any side effects except it hurt (im a baby! haha) I also watched the news segment about the shot and very few people had side effects and they werent directly correlated with the vaccine. do vaccines normally give you side effects? some people are just more sensitive to them than others. I wouldn’t worry about it!

    Yummy coconut. The three things that help bring out the coconut flavor for me are cooking the oats partially with just water before adding the coconut milk, adding a little coconut extract, and adding a tiny bit of sweetener.

    hey kath – I am totally mimicking all your eating habits now! After reading about your balsamic brocolli I had to have it for supper last night – very good. Then after seeing your post about coconut oatmeal (not this one but yesterdays) I went and brought some this morning before breakfast on the way back from the gym and made your oat pancakes with mashed banana and dessicated coconut in them, topped with strawberries, raspberries, blueberries and fromage frais and some more coconut sprinkled on top – delish! Thanks so much for all the ideas- I was always eating the same thing and you inspire me now to try new ideas to vary my diet a bit.

    Also – congratulations on your exam results – come on you deserve a little boast with results like that!!!!

    Hi Kath,

    I know this question is going to be very repetitive for a lot of you, possibly.
    However, Kath, why do you choose coconut milk, or hemp milk, over ‘regular’ milk? Is it because of taste? Does it cook/mix differently in foods? Nutritional reason? Or, do you simply enjoy the taste better?
    I’ve never had it before and I am just curious so if anyone else has an opinion as to why you choose coconut/hemp milk let me know!!

    Mmmm extract. I bet that’s good! I’ll have to look for some.

    A “spoonful” for me is a regular eating spoon about 2/3 full and level. This is about 2 teaspoons. It’s SOOO easy to underestimate PB (wait, is it overestimate?) – what I mean is you think a tablespoon is a lot but it’s really not. I could easily eat a tablespoon and half and think it’s not even a full one. Sure, every now and then won’t matter, but if you eat PB everyday like I do, those calories would start to add up. So I level the spoon with the jar lip and don’t fill it up completely (which is a full tbsp).

    mh: yes i do! i don’t know how much it was because my boyfriend got it for me for christmas, but amazon usually has good deals on the cuisinart models.

    i have used it almost once a week (though sometimes more) since last december and love it more than anything.

    Have fun in Boston. I will not be in Boston as I am heading to my hometown for my cousin’s wedding but there are SO many fantastic restaurants. I’m a huge fan of Sibling Rivalry, Olives, Figs, Om, Betty’s Wok & Noodle, and so many more. 🙂 I always complain that Boston is not a restaurant town, but then when I really think about it, there are quite a few restaurants I enjoy. 🙂 If you spend anytime outside of the city, Farnham’s in Essex, MA is my favorite “authentic” clam shack. It is awesome and was featured on Diners, Drive-Ins, and Dives. The Barking Crab in the city is also fun for seafood and Finale is delicious for dessert.
