Walk + Talk

I got some good walking in this afternoon – and felt LOADS better afterwards. I walked to the grocery store to pick up some chicken for dinner (I was craving chicken for some reason and not much else sounded appealing!) It was about 40 minutes round trip. I took Rachel Ray Magazine with me to chat 🙂 I started to get hungry on my way home and decided on an early dinner rather than having a snack and a later dinner.

I made a chicken stir-fry with bell peppers and leftover cilantro pesto.

And made Mystery Recipe #2 for a side. So sorry I can’t tell you what it is!!

After dinner I went out for a walk with my mom – via cell phone! We chatted for about 30 minutes. Walks fly by when you have someone to talk to.

I made it home just in time for this to hit:

A little later I decided on a BlueBerry Cloud for a snack: some Breyers Natural Vanilla with a crumbled Trader Joe’s Meringue and some blueberries –

It tasted like……guess!?!? …………..Marshmallows!

Normally I wouldn’t share academic info because it’s kind of personal, but I have to share this news: I got A’s in all three of my summer school courses!!  I can’t believe I made it through those 5 weeks sane, much less with good grades. The 3-day study session weekends paid off

Tomorrow morning I am starting the first of a few shadowing sessions with a Registered Dietitian in the area who works in corporate wellness. I’m excited!!! It’s going to mean an early morning though so I better get to reading in bed soon.

Tomorrow afternoon I am heading to the husband’s dad’s lake house for the weekend. The bad news: there is no internet, but I may be able to upload on Friday or Saturday somewhere in Columbia (the closest city). I’m still trying to figure it out. I feel bad because I was just on vacation with a crazy posting schedule, but I can’t not go because there’s no internet. But I’ll be here for breakfast and lunch tomorrow.

    Is the Breyer’s Ice Cream the fat free kind or regular?
    Do you think it’s better to splurge on dessert with the “real thing” rather than buying the artificial low fat alternatives for something sweet like skinny cows or weight watcher ice cream bars?
    What does everyone else think?

    I am a weirdo… I don’t like ice cream!!! There are rare the cases I eat it, there must be a crumble involved. Take your time and enjoy your time off!

    I had stir-fry tonight, too (as you know)! The tofu turned out great (ended up baking it before mixing it with the veggies…thanks for the tips!) and the boyfriend liked it and said he wouldn’t mind having it again! That’s definitely a good thing coming from a pretty hard-core meat eater! Yay! 🙂
    We just got back from our walk…which turned into a run because we started getting torrential downpours about 1/3 of the way through (thanks to Dolly). Looked a lot like your picture above!
    Congrats on all the A’s with your classes…the hard work definitely paid off! And I can’t wait to see a recap of your day with the RD!
    Enjoy your mini-vacation at the lake house! And don’t worry about us…I think we’ll survive 😉

    congrats on the super grades. that must feel good. it’s very satisfying when you’ve worked really hard and it pays off.

    when you read and walk, are you walking on a trail or something where there aren’t other people/traffic?

    Hey Kath, way to go on your classes! You will no doubt be an awesome dietician someday… I kinda feel like you are one already!

    Thanks again for blogging! I told my hub about the coversation about oatmeal (people thinking 1/3 cup was good) and we laughed because he eats a CUP every morning with walnuts and flax and blueberries and wheat germ. He is like clockwork. I guess he is a big guy (6 foot 5 and really lean) Anyways, he contemplated what 1/3 of his breakfast would look like, and my man would be starved by 9am. ha.

    I much much much prefer to eat a little bit of the real thing (ice cream) rather than fake chemicals. Breyers vanilla has milk, cream eggs and vanilla in it. The fat free has all sorts of stuff I can’t pronounces, maybe fewer calories (but maybe not) and it just doesn’t seem like something I should ingest if I can help it.

    I also want to chime in and say congrats on the grades and thank you for sharing with us. You did an awesome job and you should be proud. And definitely don’t feel guilty about taking another vacation….enjoy yourself!
    All of this about talk about tofu from Justy and I’m off to make myself some tofu pasta for dinner. And Justy – consider yourself lucky – my man won’t go near tofu unless it’s the itty bitty bits in miso soup!

    I had one yesterday morning and within hours came down with a fever and aches, I’m wondering if anyone else has experienced anything like this

    i heard recently that women around that time of the month need an average 200 extra calories because of their periods. do yall believe in that or feel that yall eat extra calories or just extra cravings like chocolate or comfort foods?

    jwing out of curiosity…it would be nice if taht is true because i do eat alot more around that time so wondering if its just me!

    Kath-so many things I feel the need to comment on…sorry in advance!

    The idea of pesto in a stir fry is a great spin on stiry fry and detour from asian sauces! I think I will add some leftover basil pesto to my tempeh tomorrow, thanks!

    The Blueberry Cloud looks divine. I’ve tried those sweet mini meringues from TJ’s and it makes so much sense to use them as a topping, and to lessen the sweetness that was a little bit overwhelming.

    Don’t worry about the busy weekend (and lack of internet)…I am in midterms for summer classes and have been posting so infrequently compared to you.

    And the rain hit me on my last two miles of my 5 mile run up here in Boston…now its a heavy downpour!

    I hope the walking in fresh air helped make you feel better.

    Hmm… The Mystery Recipe… It looks to me like a type of cornmeal/parmesan polenta or parmesan cornbread flavored polenta? Hahaha Anyways, that stir fry looks extra yum too! yum yum yum 😉

    As far as I’m concerned, if I’m going to have dessert, I’m going to HAVE DESSERT. A few bites of the real thing is enough to satisfy me, and I personally would much rather eat a high-fat treat made of real, found-in-nature ingredients, than a scary artificial alternative (like the adage goes, if I can’t pronounce it, I don’t wanna eat it.) At least your body knows how to digest eggs and sugar… but polydextrose, sorbitol, and artificial flavor? Not so much.

    this probably sounds unbeleively cheesy and youve probably hear it all the time, but i wanted to tell you! you are an AMAZING insoeration and an AWSOME healthy role model, you have gotton SO much better through your journey when you stopped weighing your food and counting calories, or like i remember you sharing you USED TO think about food alot, but now you dont! you are a great intuitive eater by eating when your hungry stopping when your satisfied, not being guilty, listening to your body, eating healthy, and occasionally induldging. you are so AMAZING! i apoligise (?) for the long comment, but i think its worth telling you! have a great day!

    in response to your question about when this first started — hmmm…
    i noticed it several weeks ago regarding the comments section — for example, by the time the post showed up, there were already a bunch of comments, so i knew that i wasn’t seeing the actual post when it was loaded…
    also, in a related problem, the tag will often say “add comment” as if no one has commented yet (instead of the usual x comments), but when you click on it, there are already several comments there…

    as for the actual delay in the posts themselves, that is more recent, probably only in the last week or so. (before you went to CA, i think.)

    one of the other posters seems to think it might be my computer though, so i’m not sure whether this is helpful or not.

    i have been eating a ton of blueberries lately, i tend to be sick of them by the end of the summer to make up for not having them around in the wintertime (although frozen aren’t bad either!) 🙂

    i think the mystery recipie is some kind of grits! yumm!! kath you work out more when your sick then I do when I’m well- haha! I hope you feel better and enjoy your weekend blog free! You deserve a break!
    *about dessert- I tend to have something for dessert so I don’t always choose the full fat version. I do buy breyer all natural ice cream, but i also buy slim a bear 100 cal ice cream sandwiches and pudding cups for portion control. I rarely eat artifical ingredients so i don’t think a little hurt me but I do try to eat the most natural desserts. Does anyone know of a low fat but natural ice cream or frozen yogurt?

    when you calculate calories for a recipe do you just put in one ingredient at a time into calorie king and then add them all up at the end? Also, when you were losing weight did you count anything else besides calories? (protien,fiber?)

    mh – i know from making ice cream myself (completely naturally!), it’s hard to get the good creamy ice cream texture without fat and sugar. if you don’t have enough fat or sugar (or alcohol) in a frozen dessert, it will end up being icy and hard. commercial “fat free” frozen yogurts/ice creams invariably have chemical additives to combat this. i don’t know if a good all natural but low fat ice cream/frozen yogurt exists. you may have to sacrifice texture. sorbets are probably a good option for low fat, as they are often just fruit/water/sugar.

    Model Behavior- about the gaurdisol shot- I actually watched a segment about it on the news while i was at the gym a few weeks ago. There are instances of girls/women getting sick from the shot, though they are rare. I think a few girls died from the shot also (not to scare you!) but they couldnt prove it was directly from the shot. Anytime you take a shot you can get achey, feverish etc because the shot is ment to introduce a small number of the germ into your body so you can fight it off and become immune. Anyways, I hope you feel better and call your doctor if you don’t soon!

    I used to eat more of the low-fat candy-bar filled ice creams and was sort of on the fence about them. Then I read this great article by eBrandAid and decided to buy all natural ice creams from then on out. I don’t think I would buy the kind that are 250+ calories per half cup, but the all natural ones are 120-150-ish calories, which is basically comparable to the loaded kinds.

    Very public neighborhoods during the daytime. I wouldn’t go at night or in isolated places. And the traffic is minimal.

    I have heard that, but I haven’t seen any research or read from something credible that it’s true. Definitely something to ask profs this fall.

    Yes, just added up ingredients and divide by servings. I didn’t count fiber or protein, but I did take note of them.

    I’d recommend just kneading the dough with your hands. I actually knead my bagels by hand anyways, since the dough is very stiff (low water content). Just make sure you have thorough gluten development! Maybe 10 to 12 minutes of kneading should do it.
